1 small onion, chopped
1/2 green pepper, diced
1 Tbsp butter or margarine
2 potatoes, peeled and diced
1/2 lb linguica, cut into bite-sized pieces
1 lb string beans, cut into bite-sized pieces
1/2 tsp ground allspice
salt and pepper to taste
1 can(s) 8 oz. tomato sauce

Steps:

  • 1. Saute onion and green pepper in butter until onions are tender. Place onion and pepper in pot with potatoes, linguica and beans. Add enough water to cover. Add allspice,salt and pepper. Stir in tomato sauce. Cover and simmer until beans are tender, about 1 hour.

One day I was looking at Portuguese recipes and decided to put together a bean soup that embraced the bright and spicy flavors of Portugal. My family liked it so much, it became a classic in our household. 4 cans (15-1/2 ounces each) navy beans, rinsed and drained
5 cups chicken stock
1 pound linguica sausage or smoked sausage, thinly sliced
2 cans (14-1/2 ounces each) petite diced tomatoes, undrained
1 large onion, halved and thinly sliced
1 large sweet red pepper, thinly sliced
2 celery ribs, thinly sliced
2 medium carrots, thinly sliced
1 cup dry white wine or additional chicken stock
4 garlic cloves, minced
2 bay leaves
1 orange zest strip (3 inches)
1 lemon zest strip (3 inches)
1 tablespoon sweet paprika
1 tablespoon hot pepper sauce
1 teaspoon dried savory
1 teaspoon dried thyme
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup chopped green onions
1/2 cup minced fresh cilantro
1/2 cup minced fresh parsley

Steps:

  • Place the first 20 ingredients in a 7-qt. slow cooker. Cook, covered, on low 7-9 hours or until vegetables are tender. Remove bay leaves and orange and lemon zest strips., Transfer 4 cups soup to a blender; cool slightly. Cover; process until smooth. Return to slow cooker; add green onions, cilantro and parsley. Heat through., Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little broth if necessary.

This is a variation of the Portuguese Linguica and grean bean soup that my mother in law passed on to me. This was her mother's recipe. I hope you enjoy it.

Number Of Ingredients 10

1 medium onion, diced
1 medium green bell pepper, diced
3 clove garlic, crushed and diced
1 Tbsp crushed red pepper [liquid]
1 pkg linguica cut in 1/2" rounds
1 pkg green beans, fresh, cleaned and sliced in half
6 medium potatoes, peeled, cut in bite size cubes
1 can(s) tomato sauce
1 can(s) golden mushroom soup
2 c beef stock

Steps:

  • 1. Dice onion, green bell pepper, and garlic. Add a few tbls olive oil to stock pan over med heat. Add onion and green bell pepper to pan and cook until onion is soft. Add garlic, careful not to burn. Add tbls of crushed red pepper, more or less if desired. Stir
  • 2. cut linguica into 1/2 rounds{I remove skin from linguica 1st} Add to pan and stir, let cook for a few minutues to marry the flavors and soften a bit.Do not brown.
  • 3. Add beef stock and let simmer for 5 minutes. Add golden mushroom soup and let simmer for 5 minutes. Add tomato sauce let simmer for 5 minutes. Reduce heat to low.
  • 4. Add diced potatoes and prepped grean beans, simmer and cook until tender. Frozen greans beans work fine in this recipe, just add at the very end after the potatoes have cooked. Add a little water if needed. This is more of a stew consitency.
  • 5. serve with portugese rolls or any crusty bread.

CREAMY STRING BEAN SOUP

This is an old German recipe that can be enhanced by adding Mettwurst or your favorite cooked and diced German sausage to the soup just before serving, that way the soup won't get greasy tasting.

1 (15 ounce) can cut green beans
4 potatoes, diced
2 tablespoons distilled white vinegar
1 clove garlic
1 cup sour cream
salt and pepper to taste
2 tablespoons all-purpose flour
¼ cup water
1 yellow onion, chopped

Steps:

  • Cook potatoes in salted water. When half done, add beans, vinegar, pepper and garlic (spear on toothpick for easy finding). Add onion. Simmer until potatoes are done. Remove garlic glove.
  • Combine the flour and 1/4 cup water and make a smooth paste. Thicken soup with the flour paste.
  • Remove from heat. Slowly stir in sour cream. Do not cook any further. Stir in cooked and diced Mettwurst or other German sausage just before serving.
