SWEET POTATO CASSEROLE WITH MARSHMALLOWS AND STREUSEL



Sweet Potato Casserole with Marshmallows and Streusel image

Mashed sweet potato casserole topped with toasted marshmallows and a brown sugar-cinnamon-pecan streusel. The perfect side dish for Thanksgiving or any other holiday celebration.

3 to 3- 1/4 pounds sweet potatoes* (peeled and chopped into large chunks, see note)
2 tablespoons unsalted butter
1/4 cup milk or half and half
1/2 teaspoon ground cinnamon or pumpkin pie spice
2 tablespoons brown sugar
salt (to taste)
4 tablespoons unsalted butter (softened)
1/4 cup brown sugar
1/4 cup all purpose flour (for a sturdier streusel add and additional heaping tablespoon of flour)
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
1/2 cup chopped pecans
2 -3 cups mini marshmallows (or more, if you'd like)

Steps:

  • Preheat oven to 375°F. Grease a 2 or 2 1/2 quart casserole dish (preferably a rectangle or oval so there's a decent surface area for the topping; I use an 8x11) and set aside.
  • Place the sweet potatoes in a large pot, cover with water, and boil until tender (about 7 minutes, depending on the size). Drain really well and return to the pot. Add butter, milk, cinnamon, brown sugar and salt to the potatoes and mash until smooth. Use a hand mixer, if desired, to make them extra smooth. Taste the potatoes and add additional seasonings, if desired.
  • Transfer the mashed potatoes to the prepared casserole dish. Place in the oven until heated through (if they're already warm it will only take a few minutes). While the sweet potatoes are heating, prepare the topping.
  • In a medium bowl, combine butter, brown sugar, flour, cinnamon and salt (I use a fork or rubber spatula to stir and mash the mixture), then mix in pecans.
  • Remove the sweet potatoes from the oven. Top with half the marshmallows, then sprinkle half the streusel over the marshmallows (pinching pieces together with your fingers). Top with the other half of the marshmallows and sprinkle the remaining streusel over the top. Place back into the oven for 8-15 minutes, until the topping is bubbly and golden brown (keep an eye on it so the marshmallows don't burn). You can also place it under the broiler very briefly to add a little more color to the marshmallows. Note: the longer it is in the oven the more likely that the marshmallows will begin to melt. Allow to sit at room temperature for several minutes before serving.

2 large sweet potatoes, peeled and chopped
¾ cup white sugar
½ cup milk
2 eggs
⅓ cup butter, cubed
1 teaspoon vanilla extract
1 cup chopped pecans
1 cup sweetened flaked coconut
¾ cup lightly packed brown sugar
½ cup all-purpose flour
⅓ cup butter, melted

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9x11-inch casserole dish with cooking spray.
  • Place sweet potatoes into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain and measure 3 cups sweet potatoes; transfer back into the pot. Reserve remaining sweet potatoes for another use.
  • Mix white sugar, milk, eggs, cubed butter, and vanilla extract into sweet potatoes using an electric mixer until completely smooth. Pour mixture into the prepared dish.
  • Combine pecans, coconut, brown sugar, flour, and melted butter in a bowl until evenly mixed and crumbly; sprinkle evenly over sweet potato mixture.
  • Bake in the preheated oven until topping is browned, 20 to 30 minutes.

The original of this recipe came from a friend of mine sometime within the past several years, & I've tinkered with it a bit! Since canned yams COULD be used, the preparation time does not include time needed to prepare the yams!

3 cups yams, unpeeled, chopped, cooked & mashed
1 (15 1/4 ounce) can peach slices, drained
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/3 cup whole milk (or heavy cream)
1/4 cup unsalted butter, softened
1/3 cup all-purpose flour
1/3 cup dark brown sugar, packed
3/4 cup pecans, toasted, chopped
1 cup dried cranberries (optional)

Steps:

  • Preheat oven to 350 degrees F.
  • FOR THE YAM FILLING ~ In a large bowl, mix yams, peaches, sugar, eggs, vanilla extract & milk (or cream), blending well.
  • Pour filling into casserole dish.
  • FOR THE STREUSEL TOPPING ~ In a bowl, mix softened butter, flour, brown sugar & nuts, stirring until crumbly.
  • Sprinkle topping evenly over yams & bake 30 minutes, or until slightly bubbly.

6 tablespoons butter, melted
2 pouches (5.6 oz) Betty Crocker™ sweet potato mashed potatoes
1/2 teaspoon grated orange peel
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup packed brown sugar
3 tablespoons Gold Medal™ all-purpose flour
2 tablespoons butter, softened
1/2 cup pecan halves or chopped pecans

Steps:

  • Heat oven to 350°F. In 2-quart casserole, mix half-and-half, boiling water and melted butter. Add 2 pouches potatoes and remaining potatoes ingredients; stir well.

CASSEROLE:
2 can(s) large, sweet potatoes in syrup (yams), drained
2 large eggs
1 c sugar
1 tsp vanilla extract
1/2 c butter, softened (not room temp)
1/2 c milk, 2%
STREUSEL TOPPING:
1 c brown sugar, golden brown
1/2 c all-purpose flour
1/3 c butter, softened (not room temp)

Steps:

  • 1. Preheat oven if cooking right away 350 F. Prep 9x13 or 9x9 (for thicker casserole) by spraying with non-stick cooking spray.
  • 2. Casserole: With a mixer, mix drained yams, eggs, sugar, vanilla, milk, and butter until combined. Pour into the casserole dish.
  • 3. Topping: Combine brown sugar, flour, and softened butter. Blend until crumbly.
  • 4. Sprinkle on top.
  • 5. Bake 25-30 minutes or until golden brown.
  • 6. Notes: For a caramelized topping, once golden brown, turn oven to Broil and watch closely. Broil roughly 3 minutes. The top with caramelize in minutes. Once out of the oven it will set creating a sweet crunchy topping while cooling. If making ahead, refrigerate, bring to room temperature before baking as stated above.
