What's called "jelly" in America is called "jam" in England, and the English call the American's "gelatin", "jelly"! But, any way you slice it -- spread some fruit preserves over cake, top with a gelled fruity confection, sweetened, stovetop-thickened milk, and whipped cream -- and you've got trifle!

- Slice cake and spread pieces with jelly or jam. Sandwich pieces of cake together and arrange pieces in bottom of glass trifle bowl or other glass serving bowl. Prepare the gelatin according to package directions and pour over cake. Refrigerate until set, 2 hours.
- Pour prepared pudding or custard over the set gelatin. In a medium bowl, whip cream until stiff peaks form. Spread over pudding. Sprinkle with chocolate and chill in refrigerator until serving.

I have been reviving the Jello desserts lately. I had forgotten how delicious these really are, so light, cool, and refreshing. I'll be posting more of these soon. I hope you enjoy this one!

- 1. Bring 1/2 cup water to a boil, remove from heat. Add Jello and stir for about two minutes until dissolved. Pour into a blender or a food processor. Add cream cheese and mix on high until well blended.
- 2. Add ice water to Jello mixture and mix on high until well blended. Add tropical fruit and pulse a few times until fruit is in smaller pieces.
- 3. Pour into a Jello mold pan or and 8 X 8 casserole dish and refrigerate until firm. Cut into squares or spoon into a dessert dish and serve. You may add a dollop of whipped topping, if desired.
STRAWBERRY GELATIN DESSERT
I love strawberry desserts that are easy to make! This is a lighter version. Cooking time is chilling time.

- In a bowl, combine cracker crumbs, sugar and butter. Press into a greased 9 inch square baking dish. Bake at 350 degrees for 10 minutes or until golden brown. Cool on a wire rack.
- Combine strawberries and sugar in a small bowl; let stand for 20 minutes. In another bowl, dissolve gelatin in water. Drain berries, reserving the juice; add enough water to juice to measure 1 cup. Stir berries and juice mixture into gelatin. Refrigerate until partially set.
- Meanwhile, combine marshmallows and milk in a saucepan. Cook and stir over low heat until blended and smooth. Cool to room temperature, about 15 minutes. Fold in whipped topping, then gelatin mixture. Pour mixture into prepared crust. Refrigerate dessert for 4 hours or until firm.

- Measure 1-1/8 teaspoons gelatin; set aside for topping. In a small saucepan, sprinkle remaining gelatin over cold water; let stand for 1 minute. Cook over low heat, stirring until gelatin is completely dissolved. Remove from the heat; stir in 2 cups cranberry juice and orange juice. , Place the pineapple and bananas in an 8-in. square dish coated with cooking spray. Pour juice mixture over fruit. STRAWBERRY GELATINS

- Hull and quarter 1 pound of the strawberries; combine in a medium bowl with sugar and lemon juice. Set aside, stirring occasionally, about 10 minutes. Place 1 cup cold water in a small saucepan; sprinkle gelatin over water. Let stand at least 5 minutes to soften.
- Working in batches, puree strawberry mixture in a blender. Strain through a fine-mesh sieve into a large measuring cup after each batch (discard solids). Add enough water to strained juice to measure a total of 3 cups liquid. Set aside.
- Heat softened gelatin over medium-high, just until it begins to bubble around the edges and gelatin has dissolved (do not boil), 2 to 3 minutes; stir into strawberry juice. Divide mixture among four serving glasses. Chill until firm, 3 to 4 hours.
- To serve, hull and dice remaining 1/2 pound strawberries; spoon on top of chilled gelatins.
