This Strawberry Mojito is the perfect summer spin on a classic! When strawberries are at their peak, their sweetness (and pretty color!) offer a delightful twist on the traditional mojito.

2 to 4 strawberries, hulled and sliced (4 if small berries, 3 if medium, 2 if truly massive)
8 mint leaves
1/2 ounce simple syrup (1:1 sugar and water; I prefer turbinado sugar)
3/4 ounce fresh squeezed lime juice
2 ounces white rum
1 ounce sparkling water
Crushed ice

Steps:

  • Muddle the strawberries: Place the strawberries, mint, and simple syrup in the bottom of a glass, and muddle until the strawberries are smushed and juicy. If you don't have a muddler, crumple the mint with your hands just a bit before dropping it into the glass, then smush with the back of a spoon to release the flavor.
  • Add the remaining ingredients: Add crushed ice on top of the strawberries and mint, then pour in the lime juice and rum.
  • Stir: Use a bar spoon or teaspoon to stir the drink. Don't stir too vigorously, otherwise you'll bring the mint to the surface!
  • Top with sparkling water: Fill the remainder of the glass with more crushed ice, then top with sparkling water.

I had this drink at a popular chain restaurant and decided to try it at home. I have served it at a couple different gatherings now and it has always been given rave reviews. It's the perfect drink for a hot summer day!

white sugar, for rimming
2 large limes, quartered
½ bunch mint leaves
7 strawberries, quartered
1 cup white sugar
1 cup white rum
2 cups club soda
8 cups ice cubes

Steps:

  • Pour 1/4 to 1/2 inch of sugar onto a small, shallow plate. Run one of the lime quarters around the rim of each cocktail glass, then dip the glasses into the sugar to rim; set aside.
  • Squeeze all of the lime quarters into a sturdy glass pitcher. Toss the juiced limes into the pitcher along with the mint, strawberries, and 1 cup of sugar. Crush the fruits together with a muddler to release the juices from the strawberries and the oil from the mint leaves. Stir in the rum and club soda until the sugar has dissolved. Pour into the sugared glasses over ice cubes to serve.

2 lime slices, cut into wheel shape
1 sprig fresh mint
1/2 ounce or 1 tablespoon Raspberry-Infused Simple Syrup, recipe follows
2 ounces or 1/4 cup white rum
Ice cubes, as needed
Raspberry, for garnish
1 cup sugar
1 cup water
2 cups raspberries

Steps:

  • In a cocktail shaker, muddle or crush the lime and mint leaves. Add in the raspberry simple syrup and white rum. Add ice, cover, shake, and then serve in a rocks glass. Garnish with a raspberry.
  • To make the simple syrup: In a saucepan combine the sugar and water. Cook the mixture over medium heat until the sugar dissolves. Remove from the saucepan from the heat and add in the raspberries. Allow the mixture to steep for at least one day. The simple syrup will keep up to 2 weeks in the refrigerator. Add the syrup to the drink when called for above.

8-10 raspberries
1 lime, chopped into large chunks
2 tsp granulated sugar
2 mint sprigs, leaves picked
ice
100ml white rum
sparkling water, to serve

Steps:

  • Divide the raspberries, lime and sugar between two tall glasses and muddle by gently crushing with a muddler or the end of a bar spoon. The fruits should start to release their juices, which will mix with the sugar.
  • Put half the mint leaves in the palm of one of your hands, then clap the other hand on top of the leaves - this bruises them just enough to release their flavour. Drop the bruised mint leaves into one of the glasses, then repeat with the remaining mint, dropping it into the second glass.
  • Add a handful of ice to each glass, followed by the rum. Stir, then top up with sparkling water. Stir briefly until just combined, then serve.

5 raspberries, a nice handful
1 teaspoon sugar
10 fresh mints, a good bunch
¼ cup white rum
club soda

Steps:

  • Throw the lime wedges, raspberries, mint, and sugar into a glass and then, using a muddler or wooden spoon, press down on the ingredients to mush them all together and get all of the juice out of the lime wedges.
  • Add ice and pour in rum (you can just eyeball the amount, if you don't have something handy to measure) and then top the glass off with club soda.
  • If you want it a little more or less sweet, you can always add slightly more or slightly less sugar. It's also delicious with less rum, or no rum at all.
  • Stir well and top with fresh mint.
