STRAWBERRY QUINOA SALAD
This strawberry, lemon, spinach, feta, and quinoa salad is fresh, sweet, and filling. (Can be adapted to your favorites) You can adjust quantities to how much it looks like you need, or how much you would like, also add nuts if you want to.

Steps:
- Place quinoa in a saucepan. Pour 2 cups water over quinoa; bring to a boil. Reduce heat; cover. Simmer until quinoa is tender, 12 to 15 minutes. Drain; cool.
- Combine lemon juice and olive oil in a small bowl; stir until dressing is combined.
- Pour half of the quinoa into a large salad bowl. Add 1 handful of baby spinach; stir together. Add 1 handful of walnuts, feta cheese, and strawberries; stir until mixed. Repeat layering and stirring quinoa, spinach, feta cheese, and strawberries until all ingredients are mixed together. Top with dressing.

- In a small saucepan, bring water to a boil. Add quinoa. Reduce heat; simmer, covered, 12-15 minutes or until water is absorbed. Remove from heat; fluff with a fork. Cool slightly., In a large bowl, combine spinach, strawberries, walnuts and quinoa. Drizzle with vinaigrette; toss to coat. Sprinkle with cheese and pepper.

- Prep the balsamic vinaigrette. Whisk together olive oil, balsamic vinegar, garlic and sugar in a small bowl; set aside.

STRAWBERRY-MINT QUINOA SALAD WITH LEMON VINAIGRETTE
Steps:
- In a small pot, combine the quinoa and BOU with 1 1/4 cups water. Bring to a boil, then reduce heat to a simmer. Stir gently. Cover and cook for 15 minutes. Remove from heat and steam for 10 minutes. Transfer to a large bowl and fluff with a fork, then let cool completely.
- In a small container with a lid, combine all dressing ingredients. Close the container and shake well.
- Pour dressing into quinoa bowl while fluffing the quinoa with a fork until dressing is evenly distributed.
- Gently fold in the strawberries, radishes, mint, almonds and feta into the quinoa.
- Serve.
STRAWBERRY, QUINOA AND FETA SALAD

- 1. Make salad: Heat oil with salt in a small saucepan over medium heat until fragrant, 2 minutes. Add quinoa and toast, stirring often, until it starts to turn golden in spots -- 4-6 minutes. Stir in 2/3 c water, cover and simmer 15 minutes. Turn off heat and let sit 5 minutes. Pour onto a plate to cool. Can be refrigerated until the next day. 2. Meanwhile, put remaining salad ingredients except cheese and almonds in a wide bowl and set aside. 3. Gently toss quinoa with 2 T dressing. Place on salad plates in a mound. Mix dressing with strawberry/salad ingredients. Surround or cover (your choice) quinoa with salad and sprinkle feta and almonds on the top.

No doubt you're familiar with white quinoa, which has become a healthy pantry staple in recent years. But you might be pleasantly surprised by the fun, pop-y texture and striking color of the black variety. Black quinoa also has an earthier taste, and works well in cold salads, since rather than clumping together, each seed of black quinoa can boldly hold its own.

- Put the quinoa in a medium pot and cover with cold water; let soak 5 minutes. Drain thoroughly in a fine-mesh strainer and return to the pot. Pour in 1 1/4 cups water and bring to a boil over high heat. Cover and reduce the heat to low, then simmer 15 minutes. Remove from the heat without disturbing the lid and allow it to rest for 5 minutes. Fluff with a wooden spoon or fork.
- Arrange the quinoa, salad mix, strawberries and chicken in lines in a large, wide shallow dish or in 4 small shallow dishes. Serve oil, vinegar and salt and pepper on the side.
