Steps:

  • Place coconut milk, 1-1/2 cups strawberries, banana and syrup in a blender; cover and process until smooth. Divide remaining strawberries among 12 molds or paper cups. Pour pureed mixture into molds or cups, filling 3/4 full. Top molds with holders. If using cups, top with foil and insert sticks through foil. Freeze until firm, at least 4 hours.

1/2 cup boiling water
1 package (10 ounces) frozen sweetened sliced strawberries, thawed
1 can (8 ounces) crushed pineapple, undrained
1/2 cup mashed ripe banana
1/4 to 1/2 cup chopped walnuts
1 cup sour cream
1 teaspoon sugar
1/4 teaspoon vanilla extract
12 Popsicle molds or plastic cups (3 ounces) and Popsicle sticks

Steps:

  • In a large bowl, dissolve gelatin in boiling water. Stir in the strawberries, pineapple, banana and nuts. Pour 2 cups into a 13-in. x 9-in. dish coated with cooking spray. Refrigerate until set, about 1 hour. Set remaining gelatin mixture aside., In a small bowl, combine the sour cream, sugar and vanilla. Spread over gelatin. Top with reserved gelatin mixture. 1 (18.25 ounce) package moist white cake mix (such as Betty Crocker® SuperMoist®)
1 ¼ cups water
3 eggs
⅓ cup vegetable oil
2 (16 ounce) containers strawberry frosting, or as needed
40 lollipop sticks, or as needed
½ cup sprinkles, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease the bottom of a 9x13-inch baking pan.
  • Combine cake mix, water, eggs, and oil in a bowl; mix well. Pour into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 23 to 28 minutes. Remove from oven and allow to cool until safe to handle, about 1 hour. Score cooled cake into quarters using a knife.
  • Line a baking sheet with parchment paper.
  • Remove 1/4 of the cake from the pan; cut off and discard any hard outer edges. Crumble cake into a bowl and add 1 tablespoon icing; use the back of a spoon to mash until mixture binds together. Use a cake-pop baller or small ice cream scoop to shape mixture into balls. Roll balls between cupped hands until firm and smooth. Place on the prepared baking sheet. Repeat with remaining cake quarters and icing.
  • Cover cake balls with plastic wrap and foil and refrigerate for at least 4 hours. Cover a styrofoam block with foil to use as a stand for the cake pops; use a knitting needle to punch approximately 40 holes in the block.
  • Remove cake balls from the refrigerator. Use a cake-pop baller or thin knitting needle to make a guide hole halfway through each ball. Return cake balls to the refrigerator while preparing icing.
  • Place icing in a microwave-safe bowl and heat in the microwave until softened, 30 seconds to 1 minute.
  • Remove cake balls from refrigerator. Push the end of a lollipop stick into a ball; dip ball straight down into icing until submerged and melted icing touches the stick. Tap softly to remove excess icing, and immediately cover with sprinkles. Push cake pop stick into the styrofoam block. Repeat with remaining cake balls. Allow to dry, about 1 hour.

1 cup freshly squeezed lime juice (6 to 8 limes)
1/2 cup water
1/2 cup triple sec*
1/4 cup tequila*
1/2 cup superfine sugar
1 pint strawberries, quartered
*If not using alcohol, add another 1/2 cup water and 1/4 cup fresh lime juice

Steps:

  • In a blender add the lime juice, water, triple sec, tequila, and sugar; blend until the sugar has dissolved. Set aside 8 strawberry quarters and put the remainder into the blender; blend until the strawberries are pureed. Skewer a piece of the reserved strawberries onto the end of each ice pop stick. Pour the margarita into the ice pop molds, insert the skewered sticks, and freeze at least 4 hours or overnight.
  • Unmold the ice pops and serve.

¼ cup water
¼ cup sugar
20 oz strawberry, fresh or frozen
1 tablespoon fresh lime juice
2 teaspoons lime zest
4 tablespoons rum, gold or dark
1 can full fat coconut milk, 3 tablespoons reserved for the piña colada layer
4 tablespoons coconut rum
1 can pineapple, crushed with juices
4 tablespoons coconut rum

Steps:

  • Make the simple syrup: in a small pot, combine the water and sugar. Cook over medium heat until the sugar dissolves, about 5 minutes. Transfer the syrup to a heatproof container and let cool completely before using. Any leftover syrup will keep in the refrigerator for up to 1 month.
  • Make the strawberry daiquiri layer: In a 2-quart blender or food processor, combine the strawberries, simple syrup, lime juice and zest, and rum and blend until mostly smooth, 1-2 minutes. Divide the contents evenly between 6-8 ice pop molds, filling each ⅓ of the way. Cover with the lid (or place sticks in the middle) and freeze for at least 30 minutes before adding the next layer.
  • Make the coconut cream layer: Clean the blender. Reserve 3 tablespoons of coconut milk for the piña colada layer, then add the remaining coconut milk, coconut rum, and 3 tablespoons simple syrup to the blender and blend until well combined, 1-2 minutes. Carefully pour into the pop molds over the strawberry daiquiri layer, filling another ⅓ of the way. Place the tops back on (or sticks back in) and freeze for at least another 30 minutes before adding the final layer.
  • Make the piña colada layer: In a medium bowl, mix together the crushed pineapple and their juices and coconut rum. Let infuse for 5-10 minutes.
  • Clean out the blender. Add the crushed pineapple and rum mixture, reserved 3 tablespoons coconut milk, and 1 tablespoon simple syrup and blend until smooth and well combined, 1-2 minutes. Pour into the pop molds over the coconut cream layer, filling the rest of the way. Place the lid on (or sticks back in)-it may require a bit of force to get through the bottom 2 layers. Freeze for at least 4 hours, or up to overnight.
  • Remove the pop molds from the freezer and dip in room temperature water for no more than 60 seconds, being careful to avoid getting any water in the pops. Wiggle the sticks around every 20 seconds to loosen the pops from the molds. Remove the pops and wrap Individually in plastic wrap. The pops will keep in the freezer for up to 2 weeks.

2 cups strawberries
1 cup sugar
1 cup fruit punch
1/2 cup fresh lime juice
1/3 cup silver tequila
2 tablespoons Grand Marnier
10 lime slices
Sea salt for sprinkling

Steps:

  • To make the fresh strawberry puree, puree the strawberries in a blender or food processor with a few tablespoons of water. Pour through a fine-mesh sieve and press with a spoon to release all the juice.
  • Combine the sugar and 1 cup of the strawberry puree in a saucepan over medium heat. Bring to a simmer, whisking so the sugar dissolves. Simmer for 1 to 2 minutes, then turn off the heat. Stir in the fruit punch, lime juice, tequila and Grand Marnier.
  • Fill each ice-pop mold with a lime slice. Pour the strawberry mixture over top. Freeze according to your ice-pop maker's directions, for at least 4 to 6 hours. Serve with a sprinkle of sea salt.

1 cup lime juice (6 to 8 limes)
1/2 cup water
1/2 cup triple sec
1/4 cup tequila (if not using alcohol, add another 1/2 cup water and 1/4 cup fresh lime juice)
1/2 cup superfine sugar
1 pint strawberry, quartered
8 popsicle molds (or dixie cups and wooden popsicle sticks)

Steps:

  • Combine lime juice, water, triple sec, tequila and sugar in a blender and blend until sugar is disolved.
  • Set aside two strawberries and cut into quaters.
  • Place the rest of the strawberries into the blender and combine until pureed ( or less if you prefer straberry pieces ).
  • Place one quater of a strawberry ( set aside in step 2 ) and place it on the end of the popsicle stick.
  • Pour the blended mix into each of the popsicle molds.
  • Finally add the popsicle sticks to the molds.
  • Freeze overnight.
  • Unmold the popsicles and serve.
