STRAWBERRY-ORANGE SOUP
Steps:
- In a bowl, whisk together 2 cups yogurt, 1/4 cup orange juice, 1 tablespoon sugar and 1 cup chopped mint leaves until mint is fragrant; strain and discard solids.
- In another bowl, combine two cups sliced strawberries, 2 tablespoons lime juice, add 2 tablespoons sugar and 1 teaspoon chili powder; refrigerate bowls for 2 hours, stirring once
- To serve, spoon yogurt onto strawberries and stir.
- Garnish with whipped cream and mint.

- In a blender, combine orange juice and strawberries; cover and process until blended. Press mixture through a fine meshed sieve; discard seeds. , In a large saucepan; combine cornstarch and grape juice until smooth. Stir in strawberry puree and jam. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Reduce heat; add honey. Simmer, uncovered, for 10 minutes. , Transfer to a bowl; cover and refrigerate until chilled. Garnish with whipped topping and orange peel if desired.
