FROZEN LEMON MOUSSES WITH STRAWBERRY MINT SAUCE



Frozen Lemon Mousses with Strawberry Mint Sauce image

4 foil molds (procedure follows) or 3/4-cup ramekins
1 1/8 teaspoons unflavored gelatin
3 tablespoons cold water
3 large egg yolks
1 teaspoon finely grated fresh lemon zest
1/2 cup fresh lemon juice
2/3 cup sugar
1 teaspoon vanilla
3 large egg whites (if egg safety is a problem in your area, substitute 2 tablespoons dried egg whites reconstituted by stirring together with 6 tablespoons water)
1/8 teaspoon cream of tartar
1/2 cup well-chilled heavy cream
Accompaniment:Strawberry Mint Sauce
Garnish: fresh mint leaves

Steps:

  • If using ramekins, line each with plastic wrap, allowing a 2-inch overhang.
  • In a very small bowl sprinkle gelatin over cold water to soften. In a bowl with a fork beat yolks until smooth. In a saucepan simmer zest, lemon juice, and 1/3 cup sugar over moderate heat, stirring, until sugar is dissolved and whisk half of lemon mixture in a slow stream into yolks. Transfer yolk mixture to remaining lemon mixture and cook over moderate heat, stirring constantly, until it is thickened and just begins to simmer. Pour mixture through a fine sieve into a large bowl and add gelatin mixture and vanilla, stirring until gelatin is dissolved. Cool lemon mixture to room temperature.
  • In a bowl with an electric mixer beat together whites (or reconstituted dried egg whites) and cream of tartar until meringue just holds soft peaks. Gradually beat in remaining 1/3 cup sugar until meringue just holds stiff peaks.
  • In a bowl with electric mixer beat cream until it just holds stiff peaks. Stir one third meringue into lemon mixture to lighten and fold in remaining meringue and whipped cream gently but thoroughly. Spoon mousse into foil molds or lined ramekins. Chill mousses until set, about 4 hours, and freeze set mousses, covered with plastic wrap, until frozen, about 4 hours, and up to 2 days.
  • Assemble desserts:
  • Spoon some sauce onto 4 dessert plates, tilting plates to coat. If using foil molds, cut tape on cylinders and gently unwrap mousses, arranging 1 on each plate. If using ramekins, remove mousses, using plastic wrap overhang to lift them out, and invert onto plates. Gently remove plastic wrap. Garnish desserts with mint.
  • To Make Foil Molds for Mousses:
  • Tear off 4 12- by 8-inch sheets of foil. Fold each sheet lengthwise into a 12- by 2 1/4-inch strip (about 3 layers thick) and trim each strip to 10 inches in length. Wrap 1 strip, smooth side in, around base of a bottle or glass that is 2 1/4 to 2 1/2 inches in diameter and tape overlapping end of strip at top and bottom of cylinder. Gently slide cylinder off bottle or glass. Create 3 more cylinders with remaining foil strips in same manner. On a small baking sheet stand cylinders on 1 end and tape each to baking sheet in 2 places to prevent them from moving while being filled.

As far as mint sauces go, I love experimenting with new ideas, especially around Easter time, and I really liked how this came out. The combination of the sweet-savory sauce and the Dijon crumb crust complemented the lamb perfectly.

2 cups fresh strawberries, hulled and halved
1 lemon, zested and juiced
1 lemon, juiced
¼ cup water
2 tablespoons honey
salt and cayenne pepper to taste
¼ cup freshly sliced mint leaves
1 (8 bone) rack of lamb, fully trimmed
kosher salt to taste
freshly ground black pepper to taste
cayenne pepper to taste
2 tablespoons Dijon mustard
1 tablespoon finely minced green onions
¼ cup fine plain bread crumbs
2 tablespoons melted butter
¼ teaspoon salt

Steps:

  • Place halved strawberries, zest from one lemon, juice from 2 lemons, water, honey, salt, and cayenne pepper in a pot over medium-high heat and bring to a simmer. As strawberries begin to release their liquid, soften, and start to break down, reduce heat to medium-low and continue stirring and cooking occasionally until fruit is very soft, about 10 minutes. Remove from heat. Pass mixture through a fine mesh strainer.
  • Preheat oven to 475 degrees F (245 degrees C). Line a shallow baking pan with foil, bringing ends up and over sides of the pan.
  • Generously season rack of lamb on both sides with kosher salt, freshly ground black pepper, and cayenne pepper. Place lamb on prepared pan. Roast rack of lamb in hot oven to sear, about 10 minutes. Remove pan from oven. Reduce oven temperature to 375 degrees F (190 degrees C).
  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine mustard and onions in a small bowl. Pour melted butter into bread crumbs in a separate bowl; stir until mixture resembles wet sand. Season with salt.
  • Coat top of lamb generously with the mustard mixture. Sprinkle crumb mixture onto the mustard mixture and press down to create a crumb crust.
  • Roast rack until it reaches an internal temperature of 125 degrees F (50 degrees C), about 15 minutes. Let rack rest 10 minute before slicing between ribs into four 2-rib servings or two 4-rib servings.
  • Mix thinly sliced mint into strawberry sauce just before serving. Spoon a small pool of the sauce onto serving plates. Place ribs on sauce to serve.

24 ripe medium strawberries, hulled (about 1 1/2 pounds)
1 tablespoon vegetable oil
4 tablespoons pure maple syrup
1/4 cup loosely packed mint leaves, torn
1 teaspoon finely grated lemon zest plus 3 tablespoons lemon juice

Steps:

  • Preheat a grill or grill pan to medium-high and scrape it clean with a grill brush.
  • While the grill preheats, thread the strawberries onto the skewers, piercing each strawberry with 2 skewers and making a total of 4 kebabs with 6 strawberries on each (double-skewering the strawberries will make them easier to turn). In a cup, combine the oil and 2 tablespoons of the maple syrup. Brush the syrup mixture over the strawberries.
  • In a small bowl, combine the mint, lemon zest and juice and remaining 2 tablespoons of maple syrup.
  • Grill the strawberries until they are softened and have grill marks, 3 to 4 minutes per side. Serve the strawberries drizzled with the lemon-mint sauce.

This is a delicious dessert sauce which can be drizzled over ice cream, biscuits -- or my favorite -- pound cake! I recommend using good quality honey, as it can make all the difference!

2 cups chopped fresh strawberries
½ cup honey
¼ cup fresh mint leaves
2 tablespoons freshly squeezed lemon juice

Steps:

  • Combine strawberries, honey, and mint leaves in a small saucepan; bring to a simmer over medium-high heat. Cook and stir until honey dissolves, 1 to 2 minutes.
  • Pour mixture into blender. Pour the sauce into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the sauce moving before leaving it on to puree. Puree in batches, if necessary, until smooth. Alternately, you can use a stick blender and puree the sauce right in the cooking pot.
  • Strain sauce through a fine mesh sieve. Stir in lemon juice. Serve warm or room temperature.

  • Wash, dry, and chop mint leaves. In a blender purée strawberries, sugar, and water until sugar is dissolved. Transfer purée to a bowl and stir in mint. Chill mixture, covered, at least 1 hour and up to 24.
  • Just before serving, pour sauce through a sieve into a bowl.
