Yield 13 servings (about 2 quarts slush mix).

Number Of Ingredients 12

1 package (3 ounces) lime gelatin
2 tablespoons sugar
1 cup boiling water
1 cup fresh mint leaves
2 cans (12 ounces each) frozen limeade concentrate, thawed
2 cups cold water
1 cup grapefruit soda
1 cup rum or additional grapefruit soda
EACH SERVING:
2/3 cup grapefruit soda
GARNISH:
Lime wedge and/or fresh mint leaves

Steps:

  • In a small bowl, dissolve gelatin and sugar in boiling water; add mint leaves. Cover and steep for 20 minutes. Press through a sieve; discard mint. Stir in the limeade concentrate, cold water, soda and rum. Pour into a 2-1/2-qt. freezer container. Freeze overnight or until set., For each serving, scoop 2/3 cup slush into a glass. Pour soda into the glass; garnish as desired.

5 limes
1 bunch mint sprigs, plus more for garnish
1 cup white rum
½ cup strawberry syrup (such as Torani®)
2 cups chilled club soda
6 cups ice cubes
2 tablespoons Sugar for rimming glasses
6 strawberries, for garnish

Steps:

  • Juice 4 limes, yielding about 1/2 cup juice, and cut remaining lime into 6 wedges.
  • Grasp mint sprig stems and slap leaves against a work surface to help release their oil; transfer to a sturdy glass pitcher. Stir in lime juice, rum, and strawberry syrup. Add club soda.
  • Spread 1/4 to 1/2 inch sugar on a small, shallow plate. Run a lime wedge around the rim of each glass, then dip glass into sugar. Fill with ice. Pour in mojito mixture. Garnish with mint sprigs and strawberries.

I had this drink at a popular chain restaurant and decided to try it at home. I have served it at a couple different gatherings now and it has always been given rave reviews. It's the perfect drink for a hot summer day!

white sugar, for rimming
2 large limes, quartered
½ bunch mint leaves
7 strawberries, quartered
1 cup white sugar
1 cup white rum
2 cups club soda
8 cups ice cubes

Steps:

  • Pour 1/4 to 1/2 inch of sugar onto a small, shallow plate. Run one of the lime quarters around the rim of each cocktail glass, then dip the glasses into the sugar to rim; set aside.
  • Squeeze all of the lime quarters into a sturdy glass pitcher. Toss the juiced limes into the pitcher along with the mint, strawberries, and 1 cup of sugar. Crush the fruits together with a muddler to release the juices from the strawberries and the oil from the mint leaves. Stir in the rum and club soda until the sugar has dissolved. Pour into the sugared glasses over ice cubes to serve.

6 mint leaves
2 Tbsp sugar
1 lime, juice of
lime wedges, for garnish
4 c ice
1 c fresh strawberries
4 oz rum, of choice (1/2 cup)

Steps:

  • 1. Muddle the mint leaves, sugar, and juiced lime with a handful of ice
  • 2. Add this mixture with the 7UP, (optional) rum, strawberries, and the rest of the ice to blender
  • 3. Blend until smooth.
