GRILLED STRAWBERRY KEBABS WITH LEMON-MINT SAUCE



Grilled Strawberry Kebabs with Lemon-Mint Sauce image

Serve these plump, smoky berries on a rimmed platter or bowl to capture all their delicious juices. Mixed with the lemon-mint sauce, they are worthy enough to drizzle over yogurt or maybe even a grilled piece of pound cake.

24 ripe medium strawberries, hulled (about 1 1/2 pounds)
1 tablespoon vegetable oil
4 tablespoons pure maple syrup
1/4 cup loosely packed mint leaves, torn
1 teaspoon finely grated lemon zest plus 3 tablespoons lemon juice

Steps:

  • Preheat a grill or grill pan to medium-high and scrape it clean with a grill brush.
  • While the grill preheats, thread the strawberries onto the skewers, piercing each strawberry with 2 skewers and making a total of 4 kebabs with 6 strawberries on each (double-skewering the strawberries will make them easier to turn). In a cup, combine the oil and 2 tablespoons of the maple syrup. Brush the syrup mixture over the strawberries.
  • In a small bowl, combine the mint, lemon zest and juice and remaining 2 tablespoons of maple syrup.
  • Grill the strawberries until they are softened and have grill marks, 3 to 4 minutes per side. Serve the strawberries drizzled with the lemon-mint sauce.

20 marshmallows
16 strawberries , hulled
½ x 397g can Nestlé Carnation Caramel (use the rest in hot caramel malter milk, see 'Goes well with...' below)
toasted hazelnuts or crumbled biscuits, for sprinkling (optional)

Steps:

  • Thread 4 long metal skewers with 5 marshmallows and 4 hulled strawberries each. Carefully hold over a campfire or gas stove, turning slowly, until the marshmallows are toasted. Stir a pinch of salt into caramel and drizzle over the top. Sprinkle with hazelnuts or biscuits, if you like. The marshmallows will be very hot, so allow to cool for a min or so before eating.

2 cups Original Bisquick® mix
1 cup milk
2 eggs, lightly beaten
24 strawberries
2 bananas
24 wooden skewers
1/2 cup strawberry jam

Steps:

  • Heat large skillet or griddle over medium-high heat. In large bowl, beat Bisquick mix, milk and eggs with whisk. For each pancake, pour quarter-size amount of batter onto hot griddle. Cook until bubbly on top and set on edges. Turn, and cook on other side until golden. Cut tops and bottoms off strawberries, and cut each strawberry into 2 pieces. Cut each banana into 12 slices. To assemble pancakes, thread 1 pancake on each skewer. Add strawberry slice, banana slice, another strawberry slice and then another pancake. When ready to serve, heat jam in microwave just until thin enough to drizzle. Drizzle small amount of jam over top of each of the pancake stacks.

2 tablespoons butter, melted
2 tablespoons sugar
1/2 teaspoon cinnamon

Steps:

  • Soak 4 bamboo skewers in water for 30 minutes.
  • Preheat grill on medium high.
  • Mix sugar and cinnamon well.

Strawberry Kebabs image

This is a twist on ordinary strawberries and cream. You can also try any other fruit, but the limoncello, mascarpone and strawberries are a great combo.

4 sticks fresh rosemary
6 strawberries, per person
8 tablespoons water
1 cup caster sugar, plus 2 tablespoons
9 ounces (250 grams) mascarpone cheese
A couple of glugs limoncello liqueur, chilled
1 lemon, zested

Steps:

  • Remove nearly all the leaves from the rosemary sticks, leaving a few on the end. Reserve the leaves. Cut the tops off the strawberries, then thread 6 onto each rosemary stick. Place the sticks on a wire rack over a tray.
  • Put the water in a heavy-based pan with 1 cup of the sugar and bring to the boil. Give the pan a jiggle, but don't touch it too much. The mixture will clear, then bubble and then slowly get darker and darker. It's ready when it's a golden brown. Pour caramel over strawberies.
  • Whisk the mascarpone with enough caster sugar to make it sweet (probably about 2 tablespoons, but you may need a little more or less). Drizzle in a little limoncello, then stir in the rosemary leaves and a little lemon zest.
  • To serve, spoon some mascarpone in the center of each plate, lay a kebab on top, and sprinkle with the remaining lemon zest.
