⅓ cup avocado oil
¼ cup cider vinegar
3 tablespoons mayonnaise
2 tablespoons honey
1 ½ teaspoons poppy seeds
¼ teaspoon dry mustard
salt to taste
2 cups fresh spinach
8 fresh strawberries, sliced
4 slices bacon, cooked and crumbled
2 tablespoons chopped pecans

Steps:

  • Combine avocado oil, vinegar, mayonnaise, honey, poppy seeds, mustard, and salt in a pint-sized jar with a tight-fitting lid. Shake vigorously, about 1 minute. Refrigerate until salad is ready.
  • Divide spinach leaves among 4 salad plates. Distribute strawberries on each plate. Top with crumbled bacon and chopped pecans. Drizzle salad dressing over each plate and serve.

6 tablespoons olive oil
1 tablespoon salt
2 tablespoons lemon juice
1/4 cup honey
1/4 teaspoon paprika

Steps:

  • Cut the strawberries in half, lengthwise, and set aside.
  • Use half the amount of celery as strawberries, and measure by slicing the celery thing, short strips.
  • Honey Dressing: Combine the olive oil, salt, lemon juice, honey, and paprika and beat until frothy.
  • Drain the strawberries and add them along with the celery in a salad bowl.
  • Serve with the Honey Dressing.

300g strawberries
250g mixed tomatoes
100g watercress , woody stalks discarded
1 tbsp pink peppercorns
2 strawberries (about 40g), chopped
½ tbsp honey
½ lemon , juiced
3 tbsp extra virgin olive oil

Steps:

  • For the dressing, toast the peppercorns in a dry frying pan for 1-2 mins until fragrant, then bash briefly using a pestle and mortar with a pinch of salt to break up the skins. Add the 2 strawberries and smash them to a paste.
  • Stir in the honey and lemon juice. Tip the dressing into a large bowl, and whisk in the olive oil. Check for seasoning, then add a little more salt or lemon juice, if you like. To assemble the salad, cut the strawberries into quarters or slim wedges, and roughly chop the tomatoes, slicing some and halving others so you get lots of different shapes. Mix with the watercress in the bowl.
  • Divide the salad between four plates or pile onto a platter. Spoon over any dressing left in the bowl.
