1 (12-oz.) French baguette
2 cups strawberries, chopped
1 tablespoon jalapeño chile, minced
2 tablespoons honey
1 tablespoon fresh lime juice
.25 teaspoon kosher salt
1 teaspoon softened goat cheese (from 2 [4-oz.] logs)
Fresh mint, chopped

Steps:

  • Cut French baguette into ¼-inch-thick diagonal slices; place on a large baking sheet. Bake at 350°F until lightly toasted, about 10 minutes. Cool completely, about 20 minutes.
  • Stir together chopped strawberries, minced jalapeño chile, honey, fresh lime juice, and kosher salt in a small bowl.
  • Spread about 1 rounded tsp. softened goat cheese on each baguette slice. Top goat cheese with 1 slightly rounded tsp. strawberry mixture. Sprinkle with chopped fresh mint.

2 cups soft white wheat berries, rinsed and drained
4 cups low-sodium chicken broth
4 cups water
1 teaspoon kosher salt
1/2 cup fresh orange juice (from 2 oranges)
1/3 cup extra-virgin olive oil
2 tablespoons orange zest (from 1 large orange)
2 tablespoons agave nectar or honey
1/4 cup fresh mint leaves, packed, finely chopped
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
10 medium strawberries, hulled and quartered
1/3 cup (4 ounces) crumbled goat cheese
1/2 cup chopped walnuts, toasted (see Cook's Note)

Steps:

  • For the wheat berries: In a large saucepan, combine the wheat berries, chicken broth, water, and salt. Bring to a boil over high heat. Reduce the heat to a simmer, cover the pot and cook until the wheat berries are tender, 60 to 70 minutes. Drain the wheat berries in a colander and set aside to cool, about 15 minutes. Transfer to a salad bowl.
  • For the dressing: In a medium bowl, whisk together the orange juice, olive oil, orange zest, agave nectar, mint leaves, salt, and pepper until smooth. Pour the dressing over the wheat berries and add the strawberries, goat cheese, and walnuts. Toss until all the ingredients are coated.
  • Cook's Note: To toast the walnuts, arrange in a single layer on a baking sheet. Bake in a preheated 350 degrees F oven for 6 to 8 minutes until lightly toasted. Cool completely before using.

½ cup balsamic vinegar
12 slices Italian bread
1 tablespoon olive oil
1 pound strawberries, washed and diced
2 teaspoons fresh thyme leaves, plus more for serving
1 cup goat cheese, room temperature
salt and freshly ground pepper to taste

Steps:

  • Heat vinegar in a small skillet over medium-low heat. Simmer until reduced by about half, 8 to 10 minutes. Remove from heat and allow to cool to room temperature.
  • Prepare a grill for high heat. Place bread slices on a foil-lined baking sheet and drizzle with olive oil.
  • Combine strawberries and thyme in a small bowl and set aside.
  • Grill bread on the preheated grill until browned, about 3 minutes per side.
  • Spread goat cheese on toasted bread. Add black pepper, salt, and reduced vinegar to the strawberry mixture. Spoon over the goat cheese topped bruschetta. Garnish with additional thyme.

1/4 cup pure maple syrup
2 tablespoons extra-virgin olive oil, plus more for brushing
