I put this together using a favorite ham glaze and slicing kielbasa or polish sausage in a pan. Great with pancakes for breakfast!!! Mix it up by trying other preserves like blackberry!!

1 lb smoked sausage (or any sausage, I like kielbasa)
1/2 cup strawberry preserves (or any fruit preserves)
1 tablespoon lemon juice
1/8 teaspoon cinnamon
1/8 teaspoon clove

Steps:

  • Cut sausage into about 6 pieces (about 3-4 inches long). Then make cuts into each section, not going all the way through, to make meat fan out when cooking. (See photo.).
  • Cook in nonstick skillet until browned and starting to separate into fans.
  • Meanwhile, mix remaining ingredients in a small bowl.
  • When meat is browned, pour glaze ingredients over meat and cook, stirring often, until sausage is completely coated. This only takes a couple of minutes. It will thicken as it cools.
  • DON'T OVERCOOK, or the glaze will become hard like candy!
  • Serve and enjoy!

3 lb. Boneless Pork Tenderloin
1 tsp. salt
1 tsp. black pepper
1 tsp. red pepper flakes
1 tsp. garlic powder
2 tsp. sesame oil
1 bunch of scallions - chopped
2 tbs. honey
2 tbs. cider vinegar
¼ tsp. salt
3 - 4-inch piece of fresh ginger - chopped finely
2 tbs. apple cider vinegar
¾ cup strawberry preserves
4 cloves of garlic - chopped finely
¼ tsp. salt

Steps:

  • Combine the scallions with the salt, vinegar and honey and toss.
  • Combine the ingredients for the rub and massage it into all the crevices of the pork and all around the pork.
  • Heat a large cast iron frying pan and place the pork in the pan. Allow the pork to get a nice char on all sides.
  • Combine all of the ingredients for the sauce and stir.
  • Spoon this over the pork after the pork has charred on all sides.
  • Keep basting the pork with the glaze as the pork is cooking in the pan..
  • Cook 18-20 minutes or until a thermometer reads an internal temperature of 145° F. for medium doneness or for a more well-done tenderloin up to 160 ° F.
  • Loosely cover the pan the last 3 - 4 minutes of cooking, then take the cover off.
  • Let the pork rest for a 4 - 5 minutes before slicing.
  • Slice the pork on a diagonal.
  • Drizzle strawberry glaze over the pork and a bit of the scallion mixture over the pork.
  • Any remaining scallion mixture may be tossed with either wild or white rice.

2 cups fresh strawberries, hulled
2 ¼ teaspoons cornstarch
2 tablespoons cold water
¼ cup white sugar
½ tablespoon unsalted butter
1 teaspoon lemon juice

Steps:

  • Blend or puree the strawberries into a liquid.
  • Dissolve cornstarch in the cold water in a medium saucepan. Add strawberry puree and sugar and heat over medium heat, stirring constantly, until just beginning to boil. Remove from heat.
  • Immediately add butter and lemon juice; stir until butter has melted. Allow to cool before serving.
