Number Of Ingredients 7

1 cup butter, softened
3 ounces cream cheese, softened
1 cup sugar
1 large egg yolk, room temperature
3 teaspoons vanilla extract
2-1/2 cups all-purpose flour
Seedless strawberry jam

Steps:

  • In a large bowl, cream the butter, cream cheese and sugar until light and fluffy. Beat in egg yolk and vanilla. Add flour and mix well. Cover and refrigerate for 1 hour or until easy to handle. , Shape dough into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Using the end of a wooden spoon handle, make a 1/2-in.-deep indentation in the center of each ball; fill with about 1/4 teaspoon jam. Bake at 350° for 10-12 minutes or until set. Remove to wire racks to cool.

1 (8 ounce) package of softened cream cheese (reduced fat o.k.)
1/4 cup strawberry preserves
1/4 cup powdered sugar
1/2 teaspoon vanilla extract
40 vanilla wafers

Steps:

  • In a medium bowl, smash cream cheese with a fork.
  • Combine the rest of the ingredients (except the vanilla wafers) together with the cream cheese.
  • Mix well.
  • Let chill in the refridgerator for at least 30 minutes.
  • On the flat side of the wafer, spread 2 tsp of mixture.
  • Then top with another wafer to make a sandwich.
  • Sprinkle with powdered sugar.
  • Serve immediately.

Strawberry Cake Mix Cookies with Vanilla Cream Cheese Frosting Recipe - (4.5/5) image

COOKIES:
1/4 cup unsalted butter, softened
1 large egg
1 teaspoon vanilla extract
1 cup + 1/8 cup strawberry cake mix (about half of an 18.25-ounce box)
FROSTING:
1/4 cup unsalted butter, softened
1/4 cup cream cheese, softened
1 teaspoon vanilla extract
2 to 4 cups confectioners' sugar

Steps:

  • COOKIES: Preheat oven to 350°F. In a mixing bowl combine the softened butter, egg, vanilla and stir by hand or with a mixer until combined. Add the cake mix and stir until smooth. If the dough seems too wet to be cookie dough, add a bit more cake mix, one tablespoon at a time, until it's less wet. Conversely, if the dough seems dry and it's not combining, add a tablespoon or two of water. If time permits, I recommend chilling the dough by placing the mixing bowl in the freezer for 15 to 20 minutes. Chilled dough spreads less during the baking process. Form 1 inch balls on a Silpat-lined, parchment paper-lined, or cookie sheet that has been sprayed with cooking spray. Allow for adequate spacing because they do spread; which is why I recommend chilling the dough and do not exceed 1 rounded tablespoon-sized or 1 inch sized balls (I only placed 9 cookies on one cookie sheet and do not recommend trying to fit the batch on one cookie sheet). Bake at 350°F for 8 to 10 minutes or until cookies are barely browned. They make look a bit loose and jiggly after only 8 to 10 minutes but they will continue to cook on the sheets after you remove the from the oven and will firm up as they cool. Do not overbake. Allow the cookies to cool well (on the cookie sheets is fine) before attempting to move them. While the cookies are baking, make the frosting. FROSTING: In a large mixing bowl, beat together the butter and cream cheese with an electric mixer or whisk by hand. Add the vanilla extract and add two cups of powdered sugar and mix until smooth. If you like thick(er) frosting, add more powdered sugar until desired consistency is reached. I used nearly 4 cups of powdered sugar in mine because I like very thick frosting (shown in the photos). After the cookies have cooled, frost them (I applied a thick layer). Finish with sprinkles, sanding sugar, or other garnishes such as coconut flakes or chocolate shavings, as desired. Optionally, make sandwich cookies. Because these cookies are frosted with cream cheese frosting, you may want store them in the refrigerator if they're going to be out more than a day or so.

1 pouch Betty Crocker™ sugar cookie mix
1/4 cup Gold Medal™ all-purpose flour
4 oz strawberry cream cheese, softened
2 teaspoons grated lemon peel
1 egg
Neon pink food color, if desired
Assorted candy sprinkles

Steps:

  • Heat oven to 375°F. Line cookie sheet with cooking parchment paper.
  • In medium bowl, stir cookie mix, flour, softened cream cheese, lemon peel and egg until soft dough forms. Stir in food color to get desired neon pink color. Roll dough 1/4 inch thick on lightly floured surface. Cut with 2 1/2- to 3-inch heart-shaped cookie cutter. Place 1 inch apart on cookie sheet. Decorate cookies as desired by pressing assorted sprinkles into dough.
  • Bake 7 to 9 minutes or until light golden brown around edges. Remove from cookie sheet to cooling rack. Cool completely, about 15 minutes.

1 pkg. (2-layer size) yellow cake mix with pudding in the mix
1-1/4 cups water
1/4 cup oil
3 eggs
16 vanilla creme-filled chocolate sandwich cookies, coarsely chopped (about 2 cups), divided
2 cups sliced fresh strawberries plus 8 whole strawberries
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed

Steps:

  • Preheat oven to 350°F. Beat cake mix, water, oil and eggs in large bowl with electric mixer on low speed until moistened. Beat 2 min. on medium speed. Stir in 1/2 cup of the chopped cookies. Pour evenly into 2 greased and floured 9-inch round cake pans.
  • Bake 25 to 30 min. or until toothpick inserted in centers comes out clean. Cool in pans on wire racks 10 min.; remove from pans. Cool completely.
  • Add 1 cup of the chopped cookies and the sliced strawberries to whipped topping in large bowl; stir gently. Place 1 of the cake layers on serving plate; spread with half of the whipped topping mixture. Cover with second cake layer; spread top with remaining whipped topping mixture. Sprinkle with remaining chopped cookies just before serving. Garnish with whole strawberries. Store in refrigerator.
