CHOCOLATE STRAWBERRY TRUFFLE BROWNIES
Some of the strawberry jam I put up every year makes its way into these brownies. I like to bake up a batch as a special treat for the learning-disabled students I teach. My husband and three sons enjoy them, too. -Teresa Jansen, Advance, Missouri

- In a microwave, melt chocolate and butter; stir until smooth. Cool slightly. In a large bowl, beat brown sugar and eggs. Stir in chocolate mixture. Dissolve coffee in water; add to chocolate mixture. Combine flour and baking powder; gradually add to batter. , Spread evenly in a greased and floured 9-in. square baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool. , Meanwhile, for filling, melt chocolate chips and coffee granules; stir until smooth. Set aside. , In a small bowl, beat cream cheese until smooth. Add jam and confectioners' sugar; mix well. Beat in melted chocolate until well blended. Spread over brownies. , For glaze, in a microwave, melt chocolate and shortening; stir until smooth. Drizzle over filling. Chill at least 1 hour.

- Preheat oven to 350 degrees F (175 degrees C). Grease 2 6x8-inch baking pans.
- Beat the eggs in a bowl with a fork; beat in the sugar, orange juice, cocoa, and cake meal until thoroughly blended. Gently stir in the strawberries and chocolate chips; divide the batter between the 2 prepared baking pans.
- Bake in the preheated oven until a toothpick inserted near the center of a pan comes out clean, about 45 minutes.

DREAMY STRAWBERRY CHOCOLATE FUDGE BROWNIES
This is a marvelous recipe and great for any occasion such as holidays,events or serving to your family and friends.

Steps:
- Preheat oven to 325'.
- Grease a 11x7x1 1/2 inch pan with pam spray or whatever you may have.
- Mix together brownie mix,water,oil and eggs with a electric hand mixer or whatever you may have.
- Add strawberries and blend all well together.
- Stir in pecans,almonds(if using)and coconut.
- Pour into prepared pan.
- Bake for 40 to 45 minutes.
- While baking brownies mix together caramel and fudge toppings and set aside til brownies are done. (if toppings are chilled warm in a small saucepan til creamy).
- Pour over warm brownies and cool for 1 1/2hours on counter.
- Serve with whipped cream and sliced strawberries.

STRAWBERRY & CHOCOLATE BROWNIES
If you love chocolate and strawberries, then you will LOVE these brownies. They taste like a chocolate covered strawberry. These are really moist and delicious!

- 1. In a small saucepan, boil down strawberries and 2 tablespoons of sugar for homemade jam. This will take about 8-10 minutes. Once the fruit has boiled down and thickened remove at once and transfer to a glass bowl. Stir in one more tablespoon of sugar and set aside to cool down completely.
- 2. Preheat oven to 350 degrees F. Line an 8-inch glass dish with parchment paper coming up the sides. Butter the parchment paper and set aside.
- 3. In a small bowl, melt down chocolate and butter. Once melted stir in canola oil and sugars. If the mixture is still hot, let it sit for a few minutes to cool a bit before adding the eggs.
- 4. Add eggs, stirring after each. Add homemade jam and flour. Fold in chocolate chips and cranberries.
- 5. Pour batter into lined baking dish and bake for about 25 minutes.
- 6. Lift brownies out of baking dish immediately and transfer to a wire rack to let cool completely before slicing. If desired, serve with a dollop of whipped cream and a cup of coffee.
