STRAWBERRY CHEESECAKE BROWNIES

- For the brownies: Preheat the oven to 350 degrees F. Grease an 8-inch square metal baking pan with nonstick cooking spray. Line the pan with parchment, leaving 2 inches overhanging on 2 sides. Grease the parchment with cooking spray.
- In a medium saucepan over low heat, melt the butter with the chocolate, whisking until smooth and fully melted. Whisk in the cocoa powder until combined. Remove from the heat and stir in the granulated and brown sugar until combined. Whisking constantly, add the eggs and mix until fully incorporated. Add the flour and whisk until completely smooth; the mixture will be very thick. Set aside.
- For the cheesecake layer: Beat the cream cheese in a bowl with an electric mixer or in the bowl of stand mixer until smooth. Add the granulated sugar and vanilla and continue to mix until fully incorporated and fluffy. Add the egg and mix until fully combined.
- Spoon the brownie mixture into the bottom of the prepared baking pan, using a spatula to spread it into an even layer. Carefully pour the cheesecake mixture over the brownie layer; distribute evenly and smooth.
- Stir the strawberry jam with a spoon to loosen it. Drop spoonfuls of the jam over the cheesecake mixture. Using a toothpick or skewer, swirl the jam into the cheesecake, being careful not to press too deep and disturb the brownie layer.
- Fill a separate baking dish with hot water and place on the bottom rack of the oven. This will add moisture to the oven during baking so the cheesecake layer does not crack. Place the cheesecake brownie pan on the center rack above and bake for 40 minutes. Turn the oven off and leave in the oven for an additional 10 minutes.
- Remove the brownies from the oven and allow to cool completely in the pan. Refrigerate the pan until the brownies are chilled, 2 to 4 hours. Using the parchment edges, transfer the brownies to a board, then remove the parchment from under. Trim off the edges and cut into 8 bars.

- Preheat oven to 350 degrees; Spray 9x13 baking pan with non-stick baking spray and set aside.
- In a large bowl, whisk together sugar, butter and half and half.
- Add eggs and vanilla to sugar mixture and whisk throughly.
- In a medium bowl, combine flour, strawberry powder, baking powder and salt throughly; Stir into sugar mixture throughly.
- Fold in white chocolate chips into batter.

- Preheat oven to 350°F. Line an 8-inch square baking pan with parchment, and spray with Pam. Mix strawberry cake mix, eggs, and oil with a hand mixer until well combined. Spread batter evenly into pan. Bake for 15 minutes or until just set; be careful not to overcook. Allow brownies to cool for 10 minutes; lift carefully from pan using ends of parchment to lift. Mix powdered sugar and water until smooth. Pour glaze over brownies, spreading to edges so that glaze will drip down sides. Allow brownies to cool and glaze to set before cutting into squares.
STRAWBERRY BROWNIES
These brownies are light and crumbly, with a punch of strawberry flavor. I made them one night with my boyfriend's daughter trying to teach her that there are no limits on what can be used when baking and cooking. I decided to use the fresh strawberries I had just purchased. I wouldn't suggest using frozen strawberries but if you do, defrost and drain well.

- Whisk together egg, melted butter, and vanilla in a large bowl. Puree about 1/4 cup of the sliced strawberries and whisk into the butter. Sift together the sugar, cocoa powder, and cake flour. - Spray a 9x13 baking pan with cooking spray.

- Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x13-inch baking pan with cooking spray.
- Combine brownie mix, eggs, oil, and water in a bowl. Add 1/2 cup semisweet chocolate chips. Pour mixture into the prepared pan.

STRAWBERRY CHEESECAKE BROWNIES

BALSAMIC VINEGAR STRAWBERRY FUDGE BROWNIES

- For the Strawberry Balsamic Jam: 1. Put the chopped strawberries, sugar, tapioca flour and 2 teaspoons of balsamic vinegar into a heavy saucepan on stove. 2. Cook over medium heat until the berries disintegrate and the jam thickens. About 5 minutes. 3. Remove from the heat and stir in the reserved 1 teaspoon of balsamic vinegar. Put aside while you make the brownie mix. Brownie Batter: 1. Preheat the oven to 350˚F. Take a piece of foil (or parchment paper) and line the inside of a 9" x 9″ square pan, leaving a couple of inches overhang. Repeat going the opposite way, if the foil/paper doesn't reach properly. This will allow you pull the brownies up from the pan, without having to dig around in it, ruining your pan and your brownies. 2. Put the butter and chocolate in a heavy saucepan. Over low heat, melt the butter and chocolate together. 3. Remove from the stove and beat in the sugar and vanilla. 4. Add the first egg and salt and beat. Then add the other egg, repeat. Add the flour. 5. This is important. Stir the batter for a full minute or so until the mixture looks smooth and glossy and loses it's graininess. You want to get the flour completely hydrated and absorbed into the batter. 6. Pour the batter into the pan. Spoon the jam onto and swirl a knife around, making sure to pull some of the jam to the edges of the pan. Don't swirl too much though, or the jam will just get incorporated into the brownie batter and it won't looks as pretty. Also you'll get air pockets. Again not pretty. 7. Bake in the center of the oven for 30 minutes or until the center looks set. Don't overbake, these brownies are suppose to be fudgy. 8. Let the brownies cool completely in the pan before you pull them out. To get perfectly cut brownies, you can freeze the brownies beforehand. But I'm not that fus

- 1. Preheat oven to 350F. Line an 8x8 pan with foil and spray with nonstick spray. Set aside.
- 2. In a large bowl, stir together cake mix, butter and eggs until a thick batter forms. Spread HALF of the batter in prepared pan.
- 3. In the bowl of your mixer, beat cream cheese and sugar until smooth. Scrape the sides of the bowl, then beat in egg yolk and vanilla until combined. Pour cream cheese mixture of the batter in the pan.
- 4. Crumble remaining batter over cheesecake mixture, covering he surface of the bars as evenly as possible. Gently press with your hands to flatten, then place the pan in the oven.
