The intro says: "The term "fool" (also Egyptian for lentils) comes from the English & means essentially a fruit puree folded into a soft custard or whipped cream. You may begin w/any good custard recipe, vanilla pudding or whipped cream." Later he said there were 3 African Fools: Strawberry Fool (Ghana), Peach Fool (Liberia) & Peanut Fool (Nigeria).

1 cup strawberry (fresh, quartered)
1/4 cup confectioners' sugar
1 cup heavy cream
4 tablespoons port wine (or Madeira wine)

Steps:

  • Sprinkle 1/4 cup confectioner's sugar over 1 cup quartered strawberries.
  • Beat 1 cup heavy cream w/the wine till the mixture is stiff. Fold whipped cream/wine mixture into strawberries.
  • Pile high in footed sherbet glasses. Garnish ea w/1 whole strawberry.

My mother and I came up with this--it's a bastardized version of several smoothie recipes we tried. This one worked best and tastes best!

1 cup white grape juice (or other mild juice)
1 scoop powdered soy protein concentrate (optional)
1 ripe banana
1/4 cup silken tofu
6 -9 large frozen strawberries (unsweetened!)

Steps:

  • Blender with"ice breaker" power level is needed.
  • Pour juice into blender.
  • If adding protein powder, add now, and blend before continuing.
  • Add strawberries, banana, tofu, blend using"ice breaker" speed, until smooth.
  • If too thick, add more juice and blend more.

Another of my sister's favorite recipes from her "Wei-Chuan Cookbook" by Huang Su Huei she originally found this when she lived in Taiwan. Like the last, this is so easy to fix.

1 lb bean sprouts (rinsed & drained)
1 ounce dried shrimp (authentic, but optional)
2 green onions (chopped)
1 teaspoon salt
1 teaspoon sesame oil
1 teaspoon vinegar
1 teaspoon soy sauce
1/2 teaspoon sugar

Steps:

  • Put sprouts on serving dish. Top w/shrimp & green onions.
  • Mix remaining ingredients in sml bowl & drizzle over top or toss like a salad.

1 cup fresh tofu, mashed (a small block of either silken or firm tofu, or a mixture)
3 tablespoons sugar or 3 tablespoons maple syrup
1/4 teaspoon vanilla extract (optional)

Steps:

  • If the tofu seems a bit watery, squeeze it lightly in a non-terry cloth towel or several layers of paper towel.
  • Place the tofu, sweetener and flavoring in a blender and blend until totally smooth. If you don't have a blender, push it through a fine meshed sieve or mash it up as fine as possible with a fork.
  • Serve cooled with optional extra syrup, honey etc. on top if you so desire.

1 cup sugar
1 cup water
12 egg yolks
1 (14 ounce) can condensed milk
1 pint milk
1 tablespoon vanilla

Steps:

  • Caramel:.
  • Put sugar and water in a saucepan. Caramelize on high heat. Line loaf tin with caramel. Be sure to line the sides of the pan.
  • Custard:.
  • Blend all ingredients in a blender. Pour mixture into caramel lined loaf pan.
  • Cover with aluminum foil. Place tin in a larger baking pan half filled with water. Place pan in pre-heated oven at 375 degrees, and bake flan for about 1 hour or until firm.
  • Place serving dish over top of loaf pan, and invert. Flan will easily plate, and the caramel provides a wonderful sauce.

6 tablespoons strawberries (fresh or frozen, but thawed) or 6 tablespoons raspberries (fresh or frozen, but thawed)
1 scoop raspberry sherbet (sml)
1 scoop lime sherbet (sml)
1 scoop vanilla ice cream (sml)
whipped cream (to garnish)
multicolored candy sprinkles or chocolate sprinkles, to garnish

Steps:

  • In the bottom of a tall cold parfait glass, put 2 tbsp of strawberries (or raspberries). Add 1 sml scoop raspberry sherbet.
  • Put another 2 tbsp of the strawberries (or raspberries) over the raspberry sherbet & add 1 sml scoop of lime sherbet.
  • Put the remaining 2 tbsp of strawberries (or raspberries) over the lime sherbet & add 1 sml scoop of vanilla ice cream to fill the glass to the brim.
  • Swirl whipped cream on top. (If you're ambitious, use a pastry bag to make a lrg star).
  • Garnish whipped cream w/multicolored or chocolate sprinkles. Serve immediately.

1 lb fresh asparagus (ends trimmed)
1 cup water
1 tablespoon dark soy sauce
2 tablespoons butter
2 tablespoons heavy cream
1 teaspoon sesame seeds (toasted)

Steps:

  • Bend ea asparagus stalk till it snaps at its tenderest point.
  • In a med-sized skillet, bring 1 cup water to a boil. Add asparagus & reduce heat to med. Cook for 5 minutes. Remove asparagus w/a slotted spoon to a serving platter.
  • Return the remaining water in the skillet to a boil & reduce liquid to about 2 tablespoons Add soy sauce, butter & cream. Stir & remove skillet from heat.
  • Pour the cream sauce over the asparagus & garnish w/toasted sesame seeds.
