Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease 6 muffin cups with cooking spray.
  • Combine sugar and butter in a medium bowl; beat with an electric mixer until pale and fluffy. Add bananas, egg, and vanilla extract; beat for 1 minute.
  • Sift flour, baking powder, baking soda, and salt over the banana mixture. Beat until just combined. Stir in chopped strawberries. Pour batter into the prepared muffin cups.

1/4 cup unsalted butter (melted)
1/2 cup milk
1 large egg
1 3/4 cups all-purpose flour
1/2 teaspoon salt

1 banana, thinly sliced

Steps:

  • Preheat oven to 375 degrees F. Line a muffin pan with paper liners.

  • Place the tin on a cooling rack for a few minutes, the remove the muffins from the tin and place them on rack. Serve warm or at room teomperature. Cool completely before storing in an airtight container.

1/2 cup(s) sugar
1 teaspoon(s) vanilla
1 - egg
3 - bananas
1 cup(s) strawberries

Steps:

  • Heat oven to 350 degrees. Mash bananas in a medium sized bowl and set aside. Beat together butter and sugars. Beat in egg. Sift together flour and baking powder. Add to butter/sugars/egg mixture. Beat well. Fold in mashed bananas and sliced strawberries. Grease 12 muffin tins or use paper liners. Fill tins right to the top with batter. Bake at 350 degrees for 25 minutes or until toothpick inserted in a muffins comes out clean 12 Large Muffins
