WHOLE WHEAT BANANA STRAWBERRY LOAF
This is a recipe my whole family loves. It's a great breakfast bread. Enjoy!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour loaf pan.
- In a large bowl combine flour, baking soda and cinnamon. Set aside.
- In a medium bowl blend together with an electric mixer the oil, sugar, eggs and banana until well combined.
- Add banana mix to the flour mix. Add the strawberries. Mix with a spoon until combined. Do not overmix.
- Pour the mix into the loaf pan and bake at 350 degrees F (175 degrees C) for 1 hour and 15 minutes or until a toothpick inserted in the center comes out clean and the loaf is well browned. Note: Blueberries or chocolate chips are great in place of the strawberries.

Steps:
- Preheat oven to 350 degrees F.
- Beat eggs.
- Stir in the oil, sugar, strawberries, and banana.
- Stir together flour, oats, baking powder, soda and salt.
- Dump it into the egg mixture.
- Stir to moisten.
- Dump it into a greased 9"X5"X3" loaf pan.
- Bake at 350F.
- for 1 hour or until done.
- Cool 10 minutes.
- Remove from pan.
- Cool on a rack.
- Let ripen 1 day before cutting.

Steps:
- In a mixing bowl, bedat eggs until frothy.
- Stir in oil, applesauce, sugar, strawberries, and banana.
- In a separate bowl, combine flour, oats, powder, soda, and salt; stir to distribute evenly.
- Stir two mixtures together JUST to moisten.
- Spoon into a greased 9"x5"3" loaf and bake in a preheated 350* oven for about 1 hour.
- Cool for 10 minutes then remove from pan to cool on wire rack.
- Best if served the day after baking.

- 1. Preheat oven to 350 F. Coat an 8 x 4 inch loaf pan with cooking spray or line with foil and set aside.
- 2. Beat sugar with eggs in a large bowl until mixture is thick and pale. In a separate bowl, combine flaxseed meal, flours, baking powder, baking soda, and salt. Stir to combine. In a third bowl, combine the soy milk, applesauce, and vanilla.
- 3. Alternate adding the flour mixture and the soymilk mixture to the egg mixture, beginning and ending with the flour mixture. Stir in the strawberries and banana.4. Pour batter into prepared pan. Bake at 350 F for 50-55 minutes or until an inserted toothpick comes out clean.
- 4. Cool in pan, on a wire rack, for 5-10 minutes before removing loaf from pan and cooling completely on a wire rack .
