6 cups fresh or frozen unsweetened strawberries, thawed
3/4 cup thawed limeade concentrate
1 can (6 ounces) unsweetened pineapple juice
4 cups chilled lemon-lime soda
Ice cubes, optional

Steps:

  • Place strawberries in a food processor; cover and process until smooth. Stir in limeade concentrate and pineapple juice. Chill until serving., Transfer to a punch bowl. Just before serving, stir in soda. Serve over ice if desired.

1 cup sugar
1/4 cup cornstarch
3 tablespoons strawberry gelatin powder
1 cup cold water
1 pint fresh strawberries, sliced
1-3/4 cups cold milk
1 package (3.4 ounces) instant vanilla pudding mix
3 medium firm bananas, sliced
1 tablespoon lemon juice
6 cups cubed angel food cake
2 cups heavy whipping cream, whipped
Additional strawberries or banana slices, optional

Steps:

  • In a saucepan, combine the sugar, cornstarch and gelatin; stir in water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in strawberries; set aside. , In a large bowl, combine milk and pudding mix. Beat on low speed for 2 minutes; set aside. Toss bananas with lemon juice; drain and set aside. , Place half of the cake cubes in a trifle bowl or 3-qt. serving bowl. Layer with half of the pudding, bananas, strawberry sauce and whipped cream. Repeat layers. Cover and refrigerate for at least 2 hours. Garnish with additional fruit if desired.

It is no secret that I am a die-hard nanner fan. I love nanners any way I can get 'em. However, I think my favorite way to have them is in a flavorful drink. This recipe I got from an ancient cookbook compiled by home ec teachers. Miz Knaus (whoever you are), I salute you!! (Passive time is freeze time - it will vary depending on how firm you freeze it and how far ahead you make it. I would make it the day before serving, so I said 8 hours (overnight).

4 cups sugar
6 cups water
1 (46 ounce) can pineapple juice
2 lemons, juice of
5 bananas, mashed well
5 (2 liter) bottles carbonated lemon-lime beverage
frozen raspberries (optional)

Steps:

  • Combine the sugar and water in a large pot and bring to a boil. Cool.
  • Add the fruit juices and bananas and mix well. Place in a container and freeze.
  • When ready to serve, plae the fruit mixture in a punch bowl. Allow to soften slightly. Break into slush.
  • Add the soda, raspberries if using, and tint with food coloring if desired.

Strawberry beverages are traditionally enjoyed for Juneteenth. For us, this normally meant a commercially-produced strawberry soda that we purchased at the grocery store. But June is also the peak of strawberry season for much of the country, and this recipe uses fresh strawberries for a vibrant berry flavor that is unmatched by a store-bought soda. Boil the strawberries with water and sugar to create a strawberry syrup. From there, the options are limitless. You can add sparkling water to the strawberry syrup for a gourmet-take on strawberry soda. You can top a glass of champagne with the strawberry syrup for a summery bellini-type beverage. Or, you can jazz things up with this recipe and use pineapple juice, orange juice, rum and sparkling wine for the ultimate strawberry punch.

1 pound fresh strawberries, hulled and quartered
1/2 cup granulated sugar
1 1/4 cups strawberry syrup
1 1/2 cups 100 percent pineapple juice
1 cup orange juice
1/2 cup orange liqueur
1/2 cup dark rum
1 1/2 cups dry sparkling white wine or sparkling water
Fresh strawberries, for garnish

Steps:

  • For the strawberry syrup: Heat the strawberries, sugar and 3/4 cup water in a medium saucepan until boiling. Reduce the heat to low and simmer until the mixture thickens and reduces, about 12 minutes. Remove from the heat, cover and let sit to infuse for 10 minutes. Mash the fruit to a pulp, then strain the syrup into an airtight container. Discard the solids. Refrigerate the syrup until ready to use and up to 1 week.
  • For the strawberry punch: Combine the strawberry syrup, pineapple juice, orange juice, orange liqueur and rum in a pitcher. Stir until combined, then cover and refrigerate until chilled and ready to serve.
  • When ready to use, stir, then divide between 6 glasses filled with ice. Top each beverage with 1/4 cup sparkling wine or sparkling water and garnish with a fresh strawberry.

6 medium ripe bananas
1 can (12 ounces) frozen orange juice concentrate, thawed
3/4 cup thawed lemonade concentrate
3 cups warm water, divided
2 cups sugar, divided
1 can (46 ounces) pineapple juice, chilled
3 bottles (2 liters each) lemon-lime soda, chilled
Orange slices, optional

Steps:

  • In a blender, cover and process the bananas, orange juice and lemonade until smooth. Remove half of the mixture and set aside. Add 1-1/2 cups warm water and 1 cup sugar to blender; blend until smooth. , Place in a large freezer container. Repeat with remaining banana mixture, water and sugar; add to container. Cover and freeze until solid. , One hour before serving, remove punch base from freezer. Just before serving, place in a large punch bowl. Add pineapple juice and soda; stir until well blended. Garnish with orange slices if desired.
