You can throw in any summer fruit or berry with this mix, blueberries and raspberries are a good choice, as are blackberries later in the season. The nuts are optional but a pecan or roasted almond adds a little crunch and more protein!

1 cup sliced fresh strawberries

¼ cup balsamic vinegar

1 cup strawberry, sliced
½ cup blueberry
½ red onion, thinly sliced
1 sweet apple, cored, halved and thinly sliced
1 cup candied walnuts, chopped
1 cup strawberry
¼ cup balsamic vinegar
¼ cup extra virgin olive oil
1 tablespoon dijon mustard
1 tablespoon honey
1 clove garlic, minced
¼ teaspoon salt
¼ teaspoon pepper
⅔ cup feta cheese, as desired

Steps:

  • For the dressing, push a straw through the strawberries from the tip to the green top to remove the hull. (Or you can cut it off with a knife!)
  • Add the rest of the dressing ingredients.
  • Blend until smooth. Refrigerate.
  • Cut strawberries, apple, and onion into slices.
  • Combine all the salad ingredients in a large bowl.

1 tablespoon honey
1 small shallot, peeled and chopped

1 head red lettuce leaves, rinsed, dried, and torn

Unlike most salads with sweet berries the flavors are tangy and mild rather than sugary or syrup-y, allowing the sweetness of the berries to shine through. A little goat cheese on each serving would be nice but is optional. I hope you like it, too.

2 tablespoons sesame seeds
1 tablespoon poppy seed
1/2 teaspoon sesame oil

4 cups cleaned dry Baby Spinach
1 cup strawberry, halved or quartered

1/2 cucumber
2 cups strawberries, halved
1/4 cup Stilton cheese, with black pepper, crumbled
100 ml balsamic vinegar
100 g caster sugar
25 g dark chocolate, 2 squares, 75% pure

Steps:

  • Divide the rocket between the plates. Slice the cucumber lengthways, seed and slice into halfmoons. Arrange the Stilton, cucumber and strawberries on the rocket. Drizzle dressing on top.
  • To make the dressing: Place balsamic vinegar in a saucepan, add caster sugar and dissolve over a gentle heat. Remove from heat and stir in 2 squares of chocolate. Leave to cool at room temperature. Do not refrigerate or dressing will solidify.

When they finally finished, each of them declared that this was the best salad they had ever eaten. Truly a texture delight, it is also a perfect blend of sweet, sour, crunchy, smooth and all around delicious. The dressing is sweet, so you don't want to "over dress" your salad. You may change this salad by exchanging mandarin oranges, blueberries, craisins, or other fruit of choice for the strawberries, Although I prefer almonds or pecans, you can use walnuts or sunflower seeds. And substituting good goat cheese for the bleu cheese is also another variation. No substitution has ever been bad in my estimation.

5 Star Balsamic Strawberry Salad Dressing image

Between jobs in my field, I worked as a manager in a 5 star restaurant. This dressing was our most popular by far! Very simple and delish!

1 cup balsamic vinegar
1 cup red wine vinegar
5 strawberries (sliced)
1/4 cup sugar
3/4 cup olive oil
1/4 cup onion (diced)
1/4 cup fresh parsley (chopped)
fresh strawberries (garnish)

Steps:

  • Boil balsamic and red wine vinegar and strawberries.
  • Reduce by 3/4 (to 1/2 cup).
  • Add sugar, diced onion and parsley.
  • Simmer 10-15 minutes and cool.
  • When cooled, gradually whisk in the oil.

Green Salad With Strawberry Balsamic Vinaigrette image

This salad lends itself to many variations- try using spinach, or adding almonds or candied walnuts, maybe even a little goat cheese. A Rachael Ray recipe.

2 teaspoons strawberry jam
1 tablespoon balsamic vinegar
3 tablespoons extra virgin olive oil, eyeball it
salt and pepper, to taste
1 pint strawberry, sliced
4 -5 cups chopped romaine lettuce or 4 -5 cups mixed greens, of any kind

Steps:

  • Place jam in a medium bowl and whisk in vinegar then extra-virgin olive oil. Season the dressing with salt and pepper. Add the strawberries and greens to bowl and toss to coat evenly in dressing.
