1 cup chopped romaine lettuce
1 cup fresh spinach
1 cup chopped kale
1 cup fresh strawberries, hulled and sliced
1 cooked chicken breast, sliced
½ cup sliced almonds
¼ cup crumbled feta cheese
1 cup fresh strawberries, hulled and quartered
1 tablespoon white sugar
¼ cup balsamic vinegar
¼ cup olive oil
1 tablespoon honey
1 tablespoon Dijon mustard
1 clove garlic, minced
salt and ground black pepper to taste

Steps:

  • Toss romaine, spinach, and kale together in a medium mixing bowl. Distribute sliced strawberries evenly on top of the greens. Arrange chicken over salad. Garnish with almond slices and feta cheese.
  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Arrange quartered strawberries on the prepared baking sheet. Sprinkle with sugar.
  • Roast in the preheated oven until softened and golden, about 20 minutes. Let cool 10 minutes.
  • Combine roasted strawberries with their juice, balsamic vinegar, olive oil, honey, mustard, garlic, salt, and pepper in a food processor; process dressing until smooth. Drizzle dressing over salad and serve.

Savory, sweet and simply divine. This stunning dish marries two amazing flavors in an amazing way, for easy but high-class food. Best when marinated for up to 24 hours in the fridge, but this recipe is designed for only an hour.

4 (8 ounce) containers strawberry yogurt
½ cup balsamic vinegar
1 tablespoon white sugar
1 tablespoon ground black pepper
1 teaspoon ground cinnamon
1 teaspoon kosher salt
4 skinless, boneless chicken breast halves
2 tablespoons olive oil
1 teaspoon lemon juice
4 large strawberries
2 teaspoons minced fresh parsley
1 teaspoon minced fresh mint leaves
1 tablespoon balsamic vinegar

Steps:

  • In a medium bowl, stir together the yogurt, 1/2 cup balsamic vinegar, sugar, pepper, cinnamon and salt. Place chicken breast halves in a shallow baking dish, and pour the sauce over them. Refrigerate for 1 hour, turning chicken over half way through.
  • Heat the olive oil in a large skillet over medium-high heat. Scrape the marinade off of the chicken breasts, and place them into the hot oil. Quickly brown the chicken on both sides, then reduce the heat to medium-low, cover, and cook until chicken is no longer pink and juices run clear, about 15 minutes. Remove from heat, and let rest for 3 minutes.
  • While the chicken is cooking, transfer the marinade to a saucepan. Bring to a low simmer over medium heat. Remove stems from strawberries, and slice thinly so they will fan nicely. Set aside.
  • Slice chicken breasts on the diagonal into 1/2 inch thick slices. Place on serving plates, and sprinkle with lemon juice. Spoon about 2 tablespoons of the marinade over each chicken breast, and fan one sliced strawberry over the top. Garnish with a sprinkle of fresh mint and parsley. If you really love balsamic vinegar, finish the dish off with an artful drizzle.

The combination of the tender and crunchy almond crust combined with a savory strawberry sauce is definitely a winner! A subtle hint of balsamic vinegar adds a nice extra layer of flavor.

4 boneless skinless chicken breasts
1/2 cup almonds
1 egg white
1 cup fresh strawberries, rinsed and stems removed
1 tablespoon sugar
1 tablespoon balsamic vinegar
1 tablespoon cornstarch
1/8 cup chicken broth (potentially more if sauce requires)
1 tablespoon fresh rosemary, finely chopped (2 sprigs of fresh rosemary)

Steps:

  • Preheat the over to 350. In a food processor, process almonds for 1-2 minutes to a chunky bread crumb consistency. Set aside.
  • Lightly pound chicken breast into 1/2" - 1" pieces. The easiest way to do this is to cover the chicken breast with saran wrap using the smooth side of a kitchen mallet.
  • Dip chicken into a bowl containing the egg white, followed by dipping the chicken into the almond mixture. Coat each chicken breast with almond crumbs on each side. Place is a glass baking dish. Bake chicken for 30-35 minutes.
  • For the strawberry sauce, combine the strawberries, sugar, and balsamic in a food processor. Place strawberry mixture in a stove top pan and add chicken broth, cornstarch and rosemary. Bring to a low boil and then reduce heat. Simmer for 5 minutes.
  • Top tender chicken breasts with the strawberry balsamic sauce and garnish with extra fresh rosemary. Bon Appetit!

For the Strawberry Rhubarb Glaze
3/4 cup Bonne Maman Strawberry Preserves
1/2 cup chopped onion
1 tablespoon balsamic vinegar fig reduction
1 tablespoon red wine vinegar
salt and pepper
2 stalks rhubarb, trimmed and chopped
For the Chicken
2 tablespoons grape seed oil
4 pounds bone in skin on chicken quarters
fresh thyme and sliced strawberries for garnish

Steps:

  • Preheat the oven to 425 degrees F.
  • In a small saucepan, combine the strawberry rhubarb glaze ingredients. Bring to a boil, stirring, then reduce heat to a simmer over low heat and allow the sauce to thicken over time. Keep an eye on it and remove from heat if needed. If sauce thickens too much, add a bit more of the strawberry preserves.
  • Meanwhile, heat the grape seed oil in a large cast iron skillet until very hot. Pat the chicken dry and season with salt. Place the chicken skin side down and allow to crisp and golden, 7 to 10 minutes. Flip the chicken carefully, cover, and place in the oven, cooking for another 20 minutes. Remove the lid and spoon a bit of the sauce over the chicken. Place in the oven and cook another 5 to 7 minutes.
  • Serve the chicken on a platter with additional sauce on the side to spoon over the top.

3 teaspoons canola oil, divided
1/4 cup chopped shallots
1/3 cup reduced-sodium chicken broth
1/3 cup strawberry preserves
3 tablespoons balsamic vinegar
1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
1 package (9 ounces) fresh baby spinach

Steps:

  • In a large resealable plastic bag, combine the bread crumbs, almonds, salt and pepper. Add chicken, one piece at a time, and shake to coat. In a large nonstick skillet coated with butter-flavored spray, cook chicken in 2 teaspoons oil over medium heat for 4-5 minutes on each side or until juices run clear. Remove and keep warm. In the same pan, cook shallots in remaining oil until tender. Stir in the broth, preserves, vinegar and rosemary. Bring to a boil. Reduce heat; simmer for 5-6 minutes or until thickened. Balsamic-Basil Grilled Chicken (skip down to Strawberry Feta Salad if not including chicken)
1 pound boneless (skinless chicken breasts)
1/4 cup olive oil
1/4 cup balsamic vinegar
2 cloves garlic (minced)
20 fresh basil leaves (chopped)
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
Strawberry Feta Salad
1/3 cup sliced almonds
3 cups mixed greens
3 cups baby spinach
1 cup strawberries (hulled and sliced)
1/2 small red onion (halved and sliced)
1/3 cup crumbled feta cheese
Dressing
1/4 cup olive oil
3 tablespoons balsamic vinegar
2 tablespoons honey
1 clove garlic (minced)
Pinch salt

Steps:

  • If including chicken, pound the chicken breasts to approximately 1/2 inch thick. Add to a gallon-sized Ziploc bag (I actually pound it right in the bag then add the marinade. I'm a little worried about causing holes, but it hasn't happened yet). Whisk together the olive oil, balsamic vinegar, garlic, basil, salt, and black pepper. Pour over the chicken in the bag. Refrigerate for at least an hour, up to 12 hours.
  • Grill for about three minutes on each side until cooked through. Set aside.
  • Make the salad dressing. Whisk together all the ingredients - olive oil, balsamic vinegar, honey, garlic, and salt. Refrigerate for at least an hour, if possible, so the flavors meld.
  • Toast almonds in a saute pan on medium high for about 4-5 minutes, stirring frequently, until you can smell them/they look toasted. Set aside and let cool.
  • In a large salad bowl, toss together the mixed greens, spinach, strawberries, onion, feta cheese, and cooled sliced almonds.
  • Just before serving, pour the salad dressing over the salad and gently toss again.
  • Cut the chicken into slices, if using, and place it atop individual servings as desired.

The sweetness of strawberries blended with the flavors of balsamic vinegar and red wine makes a rich sauce in minutes. This is a strawberry recipe to keep handy for entertaining but is also easy enough to enjoy for a weeknight dinner.

1 package (16 ounces or 3 cups) Driscoll's Strawberries, divided 4 teaspoons light olive or vegetable oil, divided
2/3 cups sliced shallots
1 clove garlic, pressed or chopped
1 small bay leaf
1/2 teaspoons dried thyme leaves
2 tablespoons balsamic vinegar
1/3 cups red wine
3/4 cups chicken broth
1 1/2 teaspoons cornstarch
2 teaspoons cold water
Salt and pepper, to taste
4 skinless, boneless chicken breasts (4 to 5 ounces)

Steps:

  • Hull and slice strawberries. Set aside.
  • Heat 2 teaspoons oil in a small saucepan over medium-high heat.
  • Add shallots, garlic, bay leaf and thyme and stir until lightly browned, 2 to 3 minutes.
  • Add 3/4 cup sliced strawberries and cook for 1 minute, stirring constantly. Add balsamic vinegar and simmer 1 minute.
  • Add wine and simmer until liquid is reduced to about half.
  • Add broth and simmer 5 minutes. Whisk cornstarch and water together. Add mixture to saucepan and boil for 1 minute, stirring until thickened. Strain sauce and season with salt and pepper. Reheat just before serving.
  • Coat chicken with remaining 2 teaspoons oil; season lightly with salt and pepper.

1 (10 oz.) bag ready-to-serve fresh spinach, cooked just until tender and kept warm
Crisco Butter Flavored All-Vegetable Cooking Spray
1 tablespoon Crisco Extra Virgin Olive Oil or Crisco Canola Oil
Finely chopped fresh parsley for garnish, if desired

Steps:

  • Coat a large non-stick skillet with Crisco cooking spray; add oil and heat over medium-high heat. Sprinkle chicken with salt and pepper, dredge in almonds. Place chicken in skillet; sauté four minutes on each side, turning once. Remove from pan and keep warm. Reduce heat to low; add green onions to skillet and sauté one minute. Add chicken broth, Smucker's preserves, vinegar and rosemary; simmer until slightly thickened, about two to three minutes. Place spinach on heated serving platter; top with chicken breasts and pour sauce over top. If desired, sprinkle finely chopped parsley over chicken.
