STRAWBERRY AND ASPARAGUS SALAD

2 tablespoons lemon juice
2 tablespoons extra-virgin olive oil
1 1/2 tablespoons honey
3 tablespoons balsamic vinegar
Salt and freshly ground black pepper
2 cups (1-inch pieces) fresh asparagus
8 cups arugula
2 cups sliced fresh strawberries

Steps:

  • In a small bowl whisk the lemon juice, oil, honey, and balsamic vinegar. Season with salt and pepper, to taste. Set aside.
  • Bring a small pot of water to a boil over medium heat. Add the asparagus and cook for 3 minutes. Remove and drain on a paper towel-lined plate.
  • Put 2 cups of arugula on each serving plate, top with strawberries and asparagus and drizzle with the vinaigrette.

1/2 pound uncooked mini farfalle or other bow tie pasta
1/2 cup lemon yogurt
1/4 cup canola oil
2 tablespoons lemon juice
1/2 teaspoon sea salt
1/8 teaspoon cayenne pepper
1 green onion, thinly sliced
2 tablespoons crystallized ginger, finely chopped
1 tablespoon pickled jalapeno slices, finely chopped
1 pound fresh strawberries, quartered
1/4 cup slivered almonds, toasted
Toasted sweetened shredded coconut and small fresh mint leaves, optional

Steps:

  • Cook pasta according to package directions. Drain pasta; rinse with cold water and drain well., In a large bowl, whisk yogurt, oil, lemon juice, salt and cayenne until blended; stir in green onion, ginger and jalapeno. Add pasta and toss to coat., Refrigerate, covered, until serving. Stir in strawberries and sprinkle with almonds just before serving. If desired, sprinkle with coconut and mint.

1 lb fresh asparagus, trimmed and cut into 1-inch pieces
3 tablespoons olive oil, divided
1/4 teaspoon salt
1/4 teaspoon fresh coarse ground black pepper
8 cups mixed baby lettuces and spring greens
3 cups sliced fresh strawberries
1/2 small red onion, thinly sliced
1/2 cup chopped pecans, toasted
2 tablespoons balsamic vinegar
2 teaspoons sugar

Steps:

  • In a bowl, toss the asparagus with 1 tablespoon oil. Spread in a single layer in a greased 15x10-inch baking pan. Sprinkle with salt and pepper.
  • Bake at 400°F for 15-20 minutes or until tender.
  • In a large salad bowl, toss greens, strawberries, onions, pecans and asparagus.
  • In a small bowl, whisk the vinegar, sugar and remaining oil. Drizzle over the salad and toss to coat.

1/4 cup sugar
2 tablespoons cider vinegar
1 tablespoon poppy seed
1 1/2 teaspoons sesame seeds
3/4 teaspoon grated onion
1/4 teaspoon salt
1/8 teaspoon paprika
1/8 teaspoon Worcestershire sauce
1/4 cup vegetable oil
1 lb fresh asparagus, cut into 2 inch pieces
1 pint fresh strawberries, quartered
1/4 cup blue cheese, crumbled

Steps:

  • Shake together first 8 ingredients until sugar is dissolved.
  • Add oil.
  • Shake.
  • Cover and refrigerate at least one hour.
  • Blanch asparagus for 3- 5 minutes, drain, immediately rinsing with cold water to stop it from cooking further, refrigerate 1 hour.
  • Just before serving, combine strawberries, asparagus, dressing and sprinkle with blue cheese.

A lovely and elegant spring salad when strawberries and asparagus are at their peak. Makes a satisfying lunch when topped with grilled shrimps or scallops. Found the recipe in a local newspaper on my last trip to Austria.

1 lb strawberry
2 bunches asparagus
3 tablespoons agave nectar or 3 tablespoons honey
4 tablespoons white balsamic vinegar
4 tablespoons walnut oil, or
4 tablespoons hazelnut oil
2 teaspoons chopped pistachios or 2 teaspoons pecans
sea salt
crushed pink peppercorns
salad greens

Steps:

  • Quarter strawberries, mix with 2 TBS of agave nectar or honey and let macerate for 1/2 hour or until drawing juice.
  • Prepare asparagus by breaking off tough ends, cut on the bias into 2" pieces.
  • blanch in boiling lemon water, stems first, add tips after 2 minutes, blanch for one more minute, remove from heat and plunge into ice water to maintain color, do not overcook.
  • Prepare vinaigrette by whisking 2 TBS of water, oil, vinegar, salt, pepper, honey and a TBS of the strawberry juice together, add asparagus and marinate for at least 1/2 hour.
  • Prepare 4 plates with salad greens,
  • put the marinated asparagus on the salad greens.
  • Top with the strawberries.
  • sprinkle with chopped nuts.

3 tablespoons olive oil
1 lb asparagus, rinsed, ends trimmed, and cut into 1 inch pieces
10 ounces fresh spinach, rinsed, trim if needed
salt
8 ounces spinach leaves, rinsed or 2 tablespoons balsamic vinegar
8 ounces strawberries, rinsed, hulled, and sliced
1/2 cup chopped toasted walnuts

Steps:

  • To toast walnuts: place in baking pan and bake in a 350 degree oven until golden, about 10 minutes.
  • Pour 1 tablespoon olive oil into a 12- by 15-inch baking pan; Add asparagus, Sprinkle with salt, and mix to coat.
  • Spread in a single layer and bake in a 400 degree oven, stirring often, until tender when pierced, 15 to 20 minutes.
  • Let cool about 15 minutes.
  • Meanwhile, in a large bowl, mix vinegar and remaining 2 tablespoons oil.
  • Add spinach, strawberries, toasted walnuts, and cooled asparagus; Mix to coat.

2 cups small shell pasta (uncooked)
1 1/2 lbs asparagus, cut into 2-inch pieces, discard tough ends
1 red bell pepper, chopped
1 cup fresh mushrooms, sliced
3 tablespoons parsley, chopped
1/4 cup slivered almonds
2 fresh garlic cloves, minced
2 -3 anchovy fillets, rinsed with cold water
2 tablespoons Dijon mustard
salt and pepper
1/2-1 teaspoon Worcestershire sauce
1 egg yolk (uncooked)
2 tablespoons lemon juice
1 tablespoon white wine vinegar
1/2 cup olive oil
1/3 cup grated parmesan cheese (freshly grated if possible)

Steps:

  • Boil pasta in water until firm-tender (do not overcook, leave firm!) drain, and rinse with cold water; set aside.
  • Steam asparagus until crisp-tender; drain and plunge into very cold or ice water; drain and pat dry with a paper towel.
  • Place all dressing ingredients in a blender, and blend until well mixed (adjusting all ingredients to suit taste).
  • Place the veggies and the cooked pasta shells in a large bowl; toss to combine.
  • Pour the dressing over; toss well to coat.
  • Add in slivered almonds and mix.
  • Chill in the fridge for a minimum of 2 hours before serving.
