4 cups fresh broccoli florets ((about 2 medium heads))
1 pound strawberries (about 2 cups, sliced)
1/4 cup sliced almonds
1/4 cup feta cheese (crumbled)
¼ cup diced red onion
½ cup lite mayonnaise
½ cup low fat greek yogurt
2 Tablespoons lemon juice
1 Tablespoon sugar
¼ teaspoon salt
⅛ teaspoon pepper
1 Tablespoon poppyseeds

Steps:

  • In a large bowl combine broccoli, strawberries, sliced almonds, feta cheese, and red onion.
  • To make the dressing: Whisk together mayonnaise, greek yogurt, lemon juice, sugar, salt, pepper, and poppyseeds.
  • Add the dressing to the salad and toss to coat. Chill until ready to serve.

1 cup mayonnaise
3 tbsp sugar
2 tsp white vinegar
2 cups fresh strawberries (quartered)
1/4 cup sliced almonds (toasted)

Steps:

  • Mix broccoli and cheese together in a large bowl.
  • In a separate bowl, whisk your mayonnaise, sugar and vinegar. Pour over broccoli and toss to coat. Carefully stir in cut up strawberries; sprinkle with almonds. Serve immediately. ENJOY!

2 1/2 cups fresh strawberries, sliced
2 1/2 cups broccoli florets
2 1/2 cups seedless grapes, cut in half
1/3 cup honey roasted sunflower seeds, divided
1/2 cup low-fat mayonnaise, plus
2 tablespoons mayonnaise
3/4-1 tablespoon apple cider vinegar
3 teaspoons sugar (or (to taste)

Steps:

  • In a glass bowl, toss together the florets, slices strawberries, halved grapes and HALF of the sunflower seeds; toss to combine.

8 cups fresh broccoli florets
8 ounces colby or 8 ounces monterey jack cheese
1 cup mayonnaise (not Miracle Whip)
2 tablespoons sugar
1 teaspoon cider vinegar
2 cups fresh strawberries
1/4 cup sliced almonds, toasted
2 tablespoons of fresh mint

Steps:

  • Cube cheese into 1/2 inch cubes (about bite size).
  • Clean and slice strawberrries into quarters.
  • In large bowl, combine the broccoli and cheese.
  • In a small bowl, whisk mayo, sugar and vinegar.
  • Pour over broccoli and cheese.
  • Toss to coat evenly.
  • Gently stir in berries.
  • At this point, you can refrigerate it or serve immediately.
  • To toast almonds, spread on baking sheet lined with parchment paper.
  • Bake at 325 only a few minutes until browned slightly. DO NOT overcook. You can "smell" when they are done. When you smell baked almonds, it's time to take them out.
  • Before serving, sprinkle with toasted almonds and chopped mint.
  • Delicious!
