NO BAKE STRAWBERRY LUSH DESSERT

No Bake Strawberry Lush Dessert image

Strawberry lush is an easy no bake dessert recipe with layers of vanilla wafers, vanilla pudding, fresh strawberries, and a cream cheese Dream Whip filling.

Provided by Mel Lockcuff

Categories     No Bake Desserts

Time 4h45m

Number Of Ingredients 11

1 envelope Dream Whip*
1/2 cup milk
1/2 teaspoon vanilla extract
8 ounces cream cheese
1 cup powdered sugar
2 - 3.4 ounce boxes instant vanilla pudding mix
3 1/2 cups milk
45 vanilla wafers (whole)
1 1/2 cups strawberries (washed, hulled, and sliced)
1 cup vanilla wafer crumbs*
1 cup strawberries (washed, hulled, and chunked)

Steps:

  • Be sure to set out your cream cheese ahead of time, so it can soften. Then wash the strawberries, hull them, and prepare them, so they're ready to go.
  • To make the Dream Whip filling, add the Dream Whip, milk, and vanilla to a large mixing bowl.
  • Whisk them together, according to package directions, 'til the mixture begins to form soft peaks. It'll take about 4 minutes.
  • In a separate bowl, whip the cream cheese well.
  • Then add both the cream cheese and the powdered sugar to the Dream Whip mixture, and whisk for about 3 to 5 minutes, or 'til smooth and creamy.
  • To mix up the vanilla pudding, add both pudding mixes and the milk to a clean mixing bowl.
  • Whisk them together for about 2 minutes, and let sit for 3 to 5 more minutes. The pudding will thicken up more as it sits.
  • Layer vanilla wafers on the bottom of a 9×13 baking dish.
  • Spread the vanilla pudding over the vanilla wafers.
  • Add a layer of sliced strawberries on top of the pudding.
  • Then add a final layer of Dream Whip on top of the strawberries.
  • Cover and refrigerate your strawberry shortcake lush for at least 4 hours before serving.
  • When you're ready to serve the dessert, sprinkle chunked strawberries and cookie crumbs all over the top of the Dream Whip cream cheese layer.
  • Then just scoop and serve! You can even add a dollop of whipped topping.
  • Be sure to store this in the fridge if not serving right away. Keep any leftovers in the fridge, as well.

CHOCOLATE WAFER ICE BOX CAKE WITH FRESH STRAWBERRIES

Chocolate Wafer Ice Box Cake With Fresh Strawberries image

This is a really looker as well as a great tasting cake. If you just want the chocolate double the wafer cookies and eliminate the strawberries. You could also use another fruit...or even vanilla wafer cookies. You can make individual cakes or smaller versions with 3 or 5 cookies in the circle.

Categories     Dessert

Time 30m

Yield 1 Cake

Number Of Ingredients 6

3 cups heavy cream
3 tablespoons sugar
1 tablespoon vanilla extract
1 (9 ounce) package chocolate wafer cookies (or, make your own!)
2 pints strawberries, 3/4 of them sliced (the rest for on top)
unsweetened cocoa (or chocolate shavings)

Steps:

  • In a large bowl, beat cream, sugar and vanilla with an electric mixer on high speed until soft peaks form.
  • On a flat serving plate, arrange 7 cookies side by side in a circle, keeping 1 cookie in the center.
  • Spread with 1/2 cup whipped cream, making a 7-inch circle. Leave the tips of the cookies showing.
  • Spread layer of strawberries.
  • Repeat with remaining ingredients, making 5 layers of cookies and 5 layers of strawberries and ending with a layer of cream.
  • Crumble any leftover cookies.
  • Top with whole strawberries and cookie crumbles.
  • Cover with plastic wrap and refrigerate overnight.
  • To serve, dust top lightly with cocoa powder or chocolate shavings.
  • Time does not include overnight refrigeration. The refrigeration is important so the cookies go soft and cut easily.

STRAWBERRY CREAM PIE WITH CHOCOLATE COOKIE CRUST

Strawberry Cream Pie With Chocolate Cookie Crust image

A chocolate cookie crust makes this strawberries-and-cream pie taste a bit like Neapolitan ice cream, but other crumbly cookies or sweet crackers work too. The best strawberries have a heady scent - they should smell like candy - and likely won't need sweetening. But strawberry sweetness varies greatly, so taste one and toss them all with a little sugar as needed.

Time 30m

Yield 8 to 10 servings

Number Of Ingredients 11

6 ounces/170 grams chocolate wafer cookies (about 35 cookies)
1 tablespoon granulated sugar
1/4 teaspoon kosher salt (Diamond Crystal)
6 tablespoons/85 grams unsalted butter, melted and cooled
1 1/2 teaspoons unflavored powdered gelatin (from 1 packet)
1 3/4 cups/420 milliliters sour cream
1 teaspoon vanilla bean paste or pure vanilla extract
1/2 cup/120 milliliters heavy cream
1/4 cup/50 grams granulated sugar, plus more if needed
1/4 teaspoon kosher salt (Diamond Crystal)
1 pound/454 grams strawberries, halved, quartered if large

Steps:

  • Make the crust: Heat oven to 350 degrees with a rack in the middle position. Place cookies, sugar and salt in a food processor and process until finely ground. (You should have about 1 1/2 cups). Add butter and pulse until the mixture looks like wet sand.
  • Transfer mixture to a standard 9-inch pie plate. Using the bottom of a flat-bottomed measuring cup, press the mixture up the sides and into the bottom of the pie plate. Bake on the middle rack until dry and set, 20 to 25 minutes. (If the crust slumps or puffs while it bakes, gently press it back into place while still warm with the measuring cup and proceed.) Let cool completely.
  • Make the filling: Place 3 tablespoons cold water in a small bowl. Sprinkle gelatin over top and let stand until softened, about 5 minutes. In a large bowl, whisk together sour cream and vanilla until smooth. Combine cream, sugar and 1/4 teaspoon salt in a small pot and bring to a simmer over medium heat. Whisk in gelatin mixture until completely dissolved, then whisk cream mixture into sour cream. Pour filling into cooled crust and refrigerate until set, at least 2 hours and up to 2 days. (If making ahead, wrap tightly once set).
  • Toss strawberries with sugar, if needed, and let sit for 10 minutes. Pile strawberries and any accumulated juices on top of pie just before serving.
