12 strawberries
4 ounces Parmesan, cut into small chunks
Balsamic reduction, for drizzling

Steps:

  • Use a small paring knife to hull and core the strawberries, removing a bit extra from the center. Stuff each strawberry with a few pieces of Parmesan until filled. Lay the strawberries on a large platter and drizzle with the balsamic reduction.

1 1/4 cups sugar
1 1/4 cups balsamic vinegar
2 1/2 tablespoons honey
2 teaspoons freshly ground black pepper
1 cup fresh basil leaves, torn into small pieces and loosely packed
10 cups strawberries, trimmed and halved (4 pounds whole berries)

Steps:

  • In large mixing bowl, stir together sugar, vinegar, honey, and pepper. Add basil and strawberries; toss to coat. Cover and chill at least 10 minutes and up to 1 1/2 hours. Serve chilled.

5 tablespoons balsamic vinegar
2 tablespoon sugar
1/4 teaspoon freshly ground black pepper
2 pints vanilla ice cream, for serving
Freshly grated lemon zest, for serving

Steps:

  • Thirty minutes to an hour before serving, combine the strawberries, balsamic vinegar, sugar, and pepper in a bowl. Set aside at room temperature.
  • Place a serving of the strawberries in a bowl with a scoop of ice cream on top and dust lightly with lemon zest.

We first combine the vinegar with agar agar and bring it to a boil. Then we drizzle it into very cold olive oil that chills the droplets into spheres before they reach the bottom of the glass. Once you rinse off the balsamic vinegar pearls they are ready to use or you can store them in the refrigerator for later use." 2/3 cup balsamic vinegar
1 (1 1/2-2 g) package agar-agar, 10-sachet box
olive oil

Steps:

  • Before starting, fill a tall glass with olive oil and place it into the freezer for at least 30 minutes. The oil needs to be very cold so the balsamic vinegar pearls will cool before they reach the bottom. Once the oil is cold you may continue making the balsamic vinegar pearls.
  • Add the balsamic vinegar to a pot along with the agar agar and bring to a boil while stirring. Once it begins to boil remove it from the heat and let it cool slightly.
  • Drip the hot liquid using a dropper or syringe into the cold olive oil. It's best to try to leave drops of equal size but you can always sort them into different sizes of balsamic vinegar pearls once they are done. Once all the pearls are made you can remove them from the olive oil and rinse them in water.

3 cups berries
4 tablespoons balsamic syrup
1 tablespoon fresh basil
1 cup whipped cream (I use vegan)
3 teaspoons chocolate shavings

Steps:

  • Use strawberries, blackberries, blueberries, and rasberries. Wash berries. Cut up strawberries. Mix berries.
  • Cut up basil and mix with berries.
  • Mix 3 tbsp balsamic syrup with berries and basil.
  • Put in 3 individual bowls. Put whipped cream on top. Drizzle some balsamic syrup over whipped cream. And add shaved chocolate.
  • Note: If you can't find balsamic syrup you can make it by reducing balsamic vinegar with a little sweetener.
