STRAWBERRIES AND CREAM STUFFED FRENCH TOAST

6 ounces cream cheese, softened
2 tablespoons strawberry jam
Kosher salt
Four 1-inch-thick slices Orange Juice Challah, recipe follows
2 extra-large eggs
1/2 cup milk
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 tablespoons unsalted butter
Sweetened condensed milk, for serving
Fresh sliced strawberries, for serving
6 cups (780g) all-purpose flour, plus more for dusting
1/4 cup (50g) sugar
2 1/4 teaspoon (1 packet) instant yeast
Zest of 1 orange
1 1/2 teaspoon kosher salt
1 cup (236ml) warm water
1/2 cup (118ml) orange juice, from about 2 oranges
2/3 cup (132g) flavorless oil, such as canola or vegetable oil
3 large eggs
Poppy seeds, for sprinkling

Steps:

  • In the bowl of a stand mixer fitted with the paddle attachment, add the cream cheese and beat until smooth. Add the jam and a pinch of salt and continue to beat until thoroughly combined. Using a paring knife, make a slit in each bread slice about 2 to 3 inches long and deep; this pocket will hold the filling. Using an offset spatula, divide and stuff the filling equally into the pockets, making sure it's not a big lump. Set aside.
  • In a shallow dish, add the eggs, milk, vanilla extract and almond extract. Mix with a fork until combined. Dip the challah into the mixture, turning to coat both sides. Let sit and soak while you heat your butter.
  • In a large nonstick skillet, add the butter and heat over medium heat until it begins to foam. Add the challah, allowing any excess egg mixture to drip off, and cook until golden brown and cooked through, flipping once, about 3 to 4 minutes per side.
  • Place the French toast on a serving dish. Serve with a drizzle of sweetened condensed milk and garnished with strawberries.
  • In a large bowl or the bowl of a stand mixer, combine the flour, sugar, yeast, orange zest and salt and whisk together. In a medium bowl, whisk together the water, orange juice, oil and 2 of the eggs.
  • Add the wet to the flour mixture; stir to combine. Knead, either by hand on a floured surface or with a dough hook on medium speed for 7 to 10 minutes, adding more flour as necessary (but resist any urge to add too much!), until you have a smooth and slightly sticky dough.
  • Transfer the dough to a large oiled bowl. Cover with plastic wrap and let stand at room temperature until doubled in size, about 2 hours. (Alternatively, chill the dough in the refrigerator overnight, then let stand at room temperature for 1 hour before shaping.)
  • Divide the dough into 4 pieces. Divide each into 3 logs and braid. Place on 2 baking sheets lined with parchment paper, spacing them evenly apart. Cover loosely and let rise 30 minutes.
  • Preheat the oven to 375 degrees F.
  • In a small bowl, whisk together the remaining egg and 1 tablespoon water. Brush the loaves with egg wash and sprinkle with poppy seeds. Bake until they are golden and have an internal temperature of 190 degrees F; begin checking for doneness at 18 minutes. Transfer to a wire rack to cool slightly and enjoy. (Challah is best eaten within 24 hours. After that it's ok if you toast it or use it for French toast. It also freezes well!)

1 loaf pepperidge farm cinnamon-swirl bread (14 slices)
3 eggs
1 tablespoon sugar
1 teaspoon vanilla
powdered sugar (a little for dusting top of fried sandwiches)
1 (16 ounce) carton frozen sliced strawberries in syrup, thawed (for topping)
1 (8 ounce) carton frozen Cool Whip, thawed (for topping)
4 ounces softened cream cheese
3 tablespoons butter, softened
3/4 cup powdered sugar (or more)
1/2 teaspoon vanilla

Steps:

  • Mix cream cheese filling ingredients in bowl using enough powdered sugar to make a spreading consistency, and set aside.
  • Spread out the slices of the cinnamon bread and spread a little cream cheese filling on each and put two together to make a "sandwich".
  • In another bowl mix the 3 eggs, 1 tbsp sugar, 1 tsp vanilla well with a whisk and dip the sandwiches in this mixture and then fry them in a little melted butter until browned on each side.
  • We use the large electric griddle for this.
  • Top the fried sandwiches with a little powdered sugar dusting and then strawberry sauce and whip cream and serve.

1 pound fresh strawberries, sliced
1/2 cup plus 3 tablespoons sugar
3/4 cup heavy cream
8 ounces cream cheese, room temperature
4 eggs
1/4 cup milk
2 teaspoons ground cinnamon
4 (1 1/2-inch thick) slices stale brioche
3 tablespoons butter
1/2 cup pecans, chopped
1/4 cup brown sugar

Steps:

  • In a medium bowl, mix together strawberries and 1/2 cup of sugar. Set aside.
  • In a food processor, blend together heavy cream, cream cheese and 1 tablespoon sugar until thick and creamy.
  • In a baking dish, whisk together eggs, milk, cinnamon and remaining 2 tablespoons sugar. Place bread slices in pan and soak on each side until well coated and soaked through. In a large skillet or griddle over medium heat, melt 1 tablespoon butter. Remove and drain the bread slices and cook until golden turning once, about 5 to 7 minutes. Meanwhile, in a skillet over medium heat, add the pecans, brown sugar and 2 tablespoons butter. Stir until sugar has melted and pecans are coated and sticky. Serve French toast with dollop of cream, sticky pecans and strawberries.

3 cups fresh strawberries, trimmed and sliced
2 tablespoons water
6 large eggs
2 cups cream, divided
Butter
8 (1-inch-thick) slices brioche (from day old loaf)

Steps:

  • Preheat the oven to 200 degrees F, and warm an ovenproof serving platter in the oven.
  • In a medium saucepan, combine 2 cups of the berries with the water and bring to a simmer. Cook over medium heat until the berries are softened and set aside until ready to serve. Keep warm.
  • In a shallow bowl, large enough to soak a few slices of bread, whisk together eggs and 1 cup cream.
  • In a large nonstick griddle or skillet over medium heat, melt a large pat of butter. Be sure to cover the cooking surface with the melted butter. Working in batches, dip however many slices of brioche that can be cooked on the griddle at a time, in the egg/cream mixture. Turn bread over and be sure to not let the bread get too soggy.
  • Transfer the bread to the preheated and buttered griddle and cook until golden brown and slightly crisp, about 3 minutes per side. Place the cooked French toast on the warm serving platter in the oven and cover loosely with foil. These will keep warm in the oven while the remaining slices are prepared.
  • Whip the remaining 1 cup of cream, in a medium bowl, with a hand-held mixer, until soft peaks form. Serve the French toast topped with the warm strawberries, remaining sliced fresh strawberries and whipped cream.

When my favorite ice cream brand marketed its ice cream as five ingredients, I always thought as a kid, "that's pretty much what I use to soak bread when I make French toast." It's just how you think it would be - amazing! It's melted ice cream with a dash of cinnamon, all soaked up by a thick slice of brioche and topped with a fast and flavorful strawberry sauce. Oh yeah, and also that store-bought whipped cream. This gets the stamp of approval for "eat this whenever you want!" It's tempting to eat it all but try to share!

1 pound strawberries, quartered
1/4 cup granulated sugar
1 teaspoon lemon juice
1/2 teaspoon pure vanilla extract
1 pint vanilla ice cream, preferably Haagen-Dazs
2 large eggs
1 teaspoon ground cinnamon
1 loaf brioche, cut into 8 slices, about 1 1/2 inches thick
4 tablespoons unsalted butter
Confectioners' sugar, for serving
Store-bought or homemade whipped cream, for serving

Steps:

  • Arrange a rack in the center of the oven and preheat to 275 degrees F.
  • Put the strawberries, granulated sugar, lemon juice and vanilla in a medium saucepan and cook, stirring occasionally, over medium heat until the sauce coats the back of a spoon, 10 minutes.
  • Microwave the ice cream in its paper container until softened, 2 minutes. Transfer the ice cream to a 9-by-13-inch baking pan. Whisk in the eggs and cinnamon.
  • Preheat a large griddle pan or large nonstick skillet over medium heat.
  • Place 4 slices of the bread in the ice cream mixture and let sit for 30 seconds, then flip and let sit 30 seconds.
  • Melt 2 tablespoons of the butter on the griddle pan. Add the soaked bread and cook until golden brown, about 2 minutes per side. You may have to alternate between medium and medium-low heat if the bread browns too quickly or not fast enough. Cut each French toast on a diagonal with a metal spatula. Place each triangle cut-side down on the griddle and cook for 30 seconds. Transfer to a rimmed baking sheet and keep warm in the oven while you cook the next batch. Wipe off the griddle pan or skillet with a paper towel. Repeat with the remaining 4 slices of bread, ice cream mixture and 2 tablespoons of butter.
  • To serve, transfer the French toast to a platter and top with confectioners' sugar, the fresh and easy strawberry sauce and your favorite whipped cream.

BLUEBERRY FRENCH TOAST CASSEROLE WITH WHIPPED CREAM AND STRAWBERRIES

2 tablespoons unsalted butter, plus extra for buttering the dish
One 1-pound day-old loaf challah or white bread, unsliced
Two 6-ounce containers blueberries (about 2 1/4 cups)
6 large eggs
3 cups milk
1 1/4 cups heavy cream
2/3 cup plus 2 tablespoons granulated sugar
1/2 teaspoon pure almond extract
1/4 teaspoon kosher salt
One 16-ounce container strawberries, sliced
One 6-ounce container raspberries
1/2 teaspoon vanilla extract
Confectioners' sugar, for dusting, optional

Steps:

  • Grease the bottom and sides of a 9-by-13-inch baking dish with butter. Slice the bread into 3/4-to-1-inch-thick slices. If your bread is very fresh, lightly toast the slices before assembling. Tile all the bread in the dish, each slice overlapping the next. Scatter the blueberries over the bread, letting some fall to the bottom of the dish. Whisk the eggs, milk, 1/2 cup cream, 2/3 cup granulated sugar, almond extract and salt in a medium bowl until the sugar is dissolved. Pour over the bread and berries and press gently to help the bread start soaking in the egg mixture. Cut the 2 tablespoons butter into small pieces and dot over the top of the casserole. Cover with plastic wrap and let stand in the refrigerator 8 hours or overnight. Preheat the oven to 350 degrees F. Remove and discard the plastic wrap. Bake the casserole until golden brown and set in the center, 45 to 50 minutes, tenting with foil if the bread starts to become too dark. Let stand 10 minutes. Dust with confectioners' sugar if desired. While the casserole bakes, toss the strawberries and raspberries with 1 tablespoon granulated sugar in a medium bowl and let stand until juicy. Before serving, whip the remaining 3/4 cup cream with the remaining 1 tablespoon granulated sugar and vanilla until soft peaks form. Serve the casserole with a dollop of whipped cream and a generous spoonful of the berries with their juices.

For the French toast:
4 large or extra-large eggs
3/4 cup whole milk
1 tablespoon pure vanilla extract
12 slices challah, Portuguese sweet bread, or other rich egg bread, cut into 1-inch slices
1/4 cup (1/2 stick) unsalted butter, more if needed
For the filling:
6 ounces regular cream cheese (not whipped, low-fat, or nonfat), at room temperature
1/3 cup granulated sugar
Finely grated zest of 1 large orange
2 tablespoons Grand Marnier or other orange liqueur or brandy, or 3 tablespoon orange juice
For the strawberry sauce:
10 ounces frozen strawberries in syrup, defrosted and pureed in a blender or food processor until smooth

Steps:

  • To make the French toast: Add the eggs, milk, and vanilla to a pie pan or shallow bowl and whisk to combine. Use a falt metal spatula to dip the slices of bread, first one side and then the other, quickly in the mixture just to moisten them but not long enough for them to fall apart. Place each of the slices on the foil-lined baking sheet as you dip them. Heat 1 tablespoon of the butter in a large skillet set over moderate heat. When the butter sizzles, add the slices of bread, several at a time, and cook until the undersides are golden brown. Flip the bread and cook on the other side until golden brown. Repeat with the remaining butter and bread slices, removing them to the baking sheet as they finish cooking. Make the filling by whisking together the softened cream cheese, sugar, orange zest, and liqueur or orange juice in a small mixing bowl until smooth. Place approximately 2 tablespoons of the filling on each of 6 slices of bread, spreading it slightly but not to the edges with the back of a spoon. Top each slice with a second slice and press down with your hand or a metal spatula to seal them together. If you will be serving the French toast later, wrap the baking sheet airtight in plastic wrap and refrigerate for up to 12 hours. Allow the bread to come to room temperature before placing the baking sheet in the oven. To bake the French toast: Have the oven preheated to 400. Place the baking sheet in the oven and cook for 15 50 20 minutes, or just until the insides are hot. You can tell this by inserting the tip of a small, sharp knife into a "sandwich" and then feeling it to see whether it's hot. Serve the "sandwiches" on heated plates with a generous drizzle of strawberry sauce.
