EASY APPLE RAISIN STUFFING (THANKSGIVING)



Easy Apple Raisin Stuffing (Thanksgiving) image

Made with a prepared stuffing mix. I like the way this sounds and wanted to post it for future use. You can make a day ahead of serving and just reheat until heated through.

1 (16 ounce) package seasoned stuffing mix, Pepperidge Farm brand
2 3/4 cups chicken broth, can use water
1/2 cup butter or 1/2 cup margarine
1 1/4-1 1/2 lbs winesap apples, peeled and chopped
1 1/2 lbs granny smith apples, peeled and chopped
3/4 lb raisins

Steps:

  • Preheat oven to 300 degrees F.
  • Make stuffing mix on stove top according to package directions which are here: heat broth or water, with the butter or margarine, to a boil and remove from the heat. Add the stuffing mix and toss lightly with a fork until moist throughout.
  • Add apples and raisins; mix thoroughly.
  • Place in a casserole dish and bake for 45 minutes.
  • *May be reheated and tastes even better the next day.

After sampling a friend's turkey dressing one Thanksgiving, I was inspired to add apples, raisins and sage to my own stuffing recipe.

1/4 cup chopped onion
1 celery rib, chopped
2 tablespoons butter
1/2 cup diced peeled tart apple
1/4 cup golden raisins
1/2 teaspoon chicken bouillon granules
1/4 teaspoon salt
1/4 teaspoon rubbed sage
1/4 teaspoon poultry seasoning
Dash to 1/8 teaspoon pepper
1/3 to 1/2 cup chicken broth
2 cups cubed day-old bread, crusts removed

Steps:

  • In a small skillet, saute onion and celery in butter until tender. Add the apple, raisins, bouillon, salt, sage, poultry seasoning and pepper. Cook and stir 1-2 minutes longer. Stir in broth. Pour over bread crumbs; toss to coat., Transfer to a greased 1-qt. baking dish. Cover and bake at 350° for 25 minutes. Uncover; bake 20-25 minutes longer or until golden brown.

You can use and kind of Stove Top stuffing, the choice is yours. Add the extra ingredients to give that extra Wow! Ive been doing this for the last 15 years and all family members love it! I usually do this with about 5-6 boxes of stuffing but for the sake of this recipe I will use two boxes.

Number Of Ingredients 6

2 (6 ounce) boxes of any kind Stove Top stuffing mix
1/2 cup diced onion
1/2 cup of diced celery
1/2 cup dried cranberries (you can use more of less depending on your liking)
3 cups low sodium chicken broth (you can vegetable stock if you like) or 3 cups broth (you can vegetable stock if you like)
8 tablespoons butter

Steps:

  • Add the butter to the sauce pan, than add the onions.
  • Saute until slightly translucent, about 5 to 6 minutes.
  • Than add the celery, about 5 minutes.
  • Add all the stock. DO NOT ADD ANY WATER! We are replacing the water with stock or broth.
  • Bring the liquid to a boil on a medium heat for about 2 minutes.
  • Add the stuffing and the dried cranberries together.
  • Turn off the stove, cover and let it sit for 5 minutes. Fluff with a fork and serve.

1 large onion, chopped (1 cup)
2 stalks celery, chopped (about 1 cup)
2 Granny Smith apples, chopped (about 3 cups)
2 teaspoons rubbed sage
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1 bag (16 oz) seasoned cornbread stuffing
1 cup golden raisins
1 cup chopped pecans, toasted
2 1/2 to 3 cups Progresso™ chicken broth (from 32-oz carton)
2 eggs, slightly beaten

Steps:

  • Heat oven to 325°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 12-inch skillet, melt butter over medium-high heat. Cook onion and celery in butter 10 minutes, stirring occasionally, until tender. Add apples; cook 3 minutes or until tender. Stir in sage, salt and pepper.
  • In large bowl, mix stuffing, raisins, pecans and onion mixture. Add broth and eggs; mix well. Spoon into baking dish.
  • Bake uncovered 50 to 60 minutes or until well browned.

1 cup chicken broth (or 1 cup water and 1 boullion cube)
1/2 cup water
1 tablespoon butter (or healthy butter spread)
1 cup celery (diced)

1 small apple (diced)
1/4 cup dried cranberries (optional)
2 tablespoons olive oil

Steps:

  • In a skillet saute onion,celery,and apple in olive oil, cook about 4 minutes.
  • In the mean time, boil broth,butter and water.

Steps:

  • In a large deep skillet, saute 2 chopped red onions, 2 minced garlic cloves and 3 chopped celery stalks in 1 stick butter for 1 minute.
  • Season with salt and pepper and add 4 diced peeled apples, 1 tablespoon chopped thyme, 1 teaspoon aniseed and 1 cup golden raisins; cook 5 minutes.
  • Pour in 4 go 6 cups chicken broth. Simmer until step 5.
  • In a large bowl, mix 3 eggs, a scoop of grainy mustard and 3 tablespoons each chopped parsley and tarragon.
  • Add to the bowl 8 cups each toasted pumpernickel and sourdough bread cubes and the hot broth mixture.
  • Gently toss the stuffing, then spread in a buttered 9-by-13-inch baking dish. Dot the top with butter or turkey pan drippings, cover and bake 30 minutes at 350. Uncover and bake until golden, 20 more minutes.
