Steps:
- Trim the silver skin and icky fatty parts from your flap meat, then cut into 3- or 4-ounce chunks, or whatever size you like. Place in a container with a tight-fitting lid; don't forget to leave extra space for the marinade.
- In a large bowl, whisk together the soy sauce, Worcestershire sauce, molasses, brown sugar, red pepper flakes, black pepper and garlic. Add the stout; be careful, it will foam a bit. There is really no need to add salt--the soy and Worcestershire are plenty salty.
- Pour the marinade over the beef tips and stir gently to evenly coat. (If you don't use all the marinade, it will keep, refrigerated, in an airtight container for up to 2 weeks.)
- Refrigerate the meat for 8 hours or overnight; it will keep for up to 4 or 5 days. Cook as desired.

JAVA CRUSTED NEW YORK STEAK WITH STOUT GLAZE
Steps:
- Preheat oven to 425 degrees F.
- Combine coffee, peppercorns, 1/4 cup brown sugar, salt, garlic, cayenne pepper and paprika in a small bowl. Press firmly onto steaks. Let steaks rest, covered, for 30 minutes at room temperature.
- To cook, heat oil in a large saute pan until almost smoking. Add steaks and sear 2 to 3 minutes on each side. Do not overcrowd the pan. Use 2pans if needed. Remove steaks to a baking dish and finish cooking in the oven until desired doneness. Remove to a cutting board or platter and let rest 10 minutes before slicing.
- Meanwhile, bring stout to a simmer in a small saucepan and reduce by about 1/3. Remove from the heat and whisk in the butter and 2 tablespoons brown sugar. After steaks have rested, pour any juices from the cutting board into the sauce, and serve with steaks.
GUINNESS STEAK AND STOUT PIE
Steps:
- Line a 9" pie plate with half of prepared pastry dough. Bake according to package directions. Cool. Heat oven to 350 degrees. Cook bacon and onions in large, heavy skillet over medium heat for 3-4 minutes. Remove from heat and add to dutch oven or ovenproof casserole dish. Combine flour, salt and pepper in large bowl. Add meat and toss well. Heat oil in skillet, add beef pieces, a few at a time and brown on all sides. Remove to dutch oven. Place dutch oven over medium high heat. Add raisins, sugar, beer and Tabasco sauce. Bring to a boil. Cover and bake in oven for 1.5 hours. Stir occasionally and add more stout or water if gravy appears too thick. Remove dutch oven from oven and increase temperature to 425 degrees. Stir parsley into beef mixture. Spoon mixture into pie dish. Roll out remaining dough into circle forming the top crust. Cut slits or shamrock designs in crust to allow steam to escape. Place pie on baking sheet and bake until crust is golden, 14-16 minutes. Remove from oven and let sit for 15 minutes before cutting.

Steps:
- Heat oven to 180C/160C fan/gas 4. Season the steaks well on all sides, then heat a frying pan with 2 tsp of the oil. Brown the steaks well on all sides, then transfer to a snug casserole or narrow, deep baking dish.
- Tip the Guinness into the frying pan and bring to a simmer, scraping up any stuck meaty bits. Pour over the steaks along with the stock cube, Worcestershire sauce, brown sauce, bay and skin-on halved shallots (leave the skins on to save time - they are removed from the sauce later). Cover the dish tightly with foil first, then add the lid (or a flat baking tray). Bake in the oven for 3 hrs until the meat is meltingly tender. Can be done up to 1 day in advance, then cooled and chilled.
- For the chips, 1 hr before serving, turn up oven to 200C/180C fan/gas 6. Bring a large pan of salted water to the boil while you cut the potatoes into as many 3cm fat chips (save the trimmings in a bowl of water and use for mash another night). Par-boil for 3 mins, then drain and let steam-dry for a few mins. Tip onto a baking tray, toss with the polenta or flour and some sea salt, then drizzle over the oil and toss again. Roast for 45 mins until really crisp and golden.
- When the chips have 20 mins left, lift your steaks from their cooking liquid and use a few sheets of baking parchment to wrap them in a parcel, followed by foil. Put on a low shelf in the oven to heat through for 20 mins. Meanwhile, strain the cooking liquid into a pan, discarding the herbs and shallots. Boil fiercely until reduced by three-quarters. Taste for seasoning, then keep warm.
- Whisk the chopped shallot, horseradish, remaining 2 tsp oil, vinegar and 1 tsp water with some seasoning, then use to dress the watercress.
- To serve, carefully open the meat parcel over your saucepan to catch any juices, and add your beef to the sauce to coat. Stack your chips between 2 plates and add a pile of dressed watercress. Lift a steak onto each plate and spoon over the syrupy juices. Any extra can be served in a jug on the side.

STEAK AND STOUT STEW
Steps:
- Marinate the sirloin and mushrooms in the Worcestershire and black pepper for 2 to 4 hours (or overnight if you desire). In a large iron pot or dutch oven, heat the oil over medium-high heat. In small batches, quickly sear the meat on all sides, about 5 to 8 minutes or until browned on all sides. Remove the meat with all of its juices, then saute the mushrooms for 5 minutes. Remove to a separate bowl for later. Add the onions, garlic and herbs to the pot and saute until the onions begin to soften, about 5 minutes. Add the tomato paste and flour, then stir for 1 minute. Pour the beer into the pot, and scrape the bottom of the pot to loosen any browned bits, stirring continuously for 2 minutes. Add the beef broth, meat and reserved juices. Cover the pot and simmer for 45 minutes. Add the carrots, tomatoes and mushrooms, then only partially recover the pot and simmer for another 45 to 60 minutes, or until the stew is thickened and dark.
STOUT STEAK
