Steps:

  • Beat the eggs: Soak 3 large eggs for 5 minutes in hot-not scalding-tap water. This will ensure that the omelet cooks faster, and the faster an omelet cooks, the more tender it's going to be. Crack the eggs into a small bowl or large bowl-shaped coffee mug. Season with a pinch of fine salt. Beat the eggs gently with a fork.
  • TIP: I prefer a fork to a whisk for omelets because I don't want to work air into the eggs: Air bubbles are insulators and can slow down cooking if you're not careful.
  • Heat the pan: Heat a 10-inch nonstick saute pan over medium to high heat for 2 to 3 minutes. Add 1 teaspoon room-temperature unsalted butter. Once melted, spread the butter around the pan with a basting brush to ensure coverage.
  • TIP: Heat your pan empty for a few minutes before adding the butter: Even a nonstick surface is pocked with microscopic pores that eggs can fill and grab hold of. Heat expands the metal, squeezing these openings shut.
  • Add the eggs: Pour the eggs into the center of the pan and stir vigorously with a silicone spatula for 5 seconds. (Actually, it's not so much a matter of stirring with the spatula as holding the spatula relatively still and moving the pan around to stir the eggs.)
  • Let them cook: As soon as curds begin to form (that's the stuff that looks like scrambled eggs), lift the pan and tilt it around until the excess liquid pours off the top of the curds and into the pan. Then use the spatula to shape the edge and make sure the omelet isn't sticking. Move the spatula around the edge of the egg mixture to help shape it into a round and loosen the edge. Then walk away. That's right-let that omelet sit unaccosted for 10 long seconds so it can develop a proper outer crust. Don't worry: Your patience will be rewarded.
  • Finish the omelet: Time for the "jiggle" step: Simply shake the pan gently to make sure the omelet is indeed free of the pan. Lift up the far edge of the pan and snap it back toward you. Then use the spatula to fold over the one-third facing you.
  • Change your grip on the pan handle from an overhand to an underhand and move to the plate, which you might want to lube with just a brief brushing of butter to make sure things don't bind up in transit. Slide the one-third farthest from you onto the plate and then ease the fold over. Imagine that you're making a tri-fold wallet out of eggs-because that's exactly what you're doing. And just ease the pan over. There, that wasn't so hard.

12 eggs
120ml (4 fl oz) water
4 tbsp vegetable oil
prik nam pla, to serve (optional)
sriracha or ketchup, to serve (optional)
Pork filling:
2 tbsp vegetable oil
1 onion, diced
4 garlic cloves, finely chopped
500g (1 lb) pork mince
2 tbsp fish sauce
2 tbsp sugar
2 tsp white pepper
2 tomatoes, diced

Steps:

  • Step 1.For the filling, heat the vegetable oil in a frying pan or wok over medium-high heat.
  • Step 2.Add the onion and garlic and stir-fry until soft. Add the pork and stir-fry until almost cooked. Then add the fish sauce, sugar and white pepper. Stir-fry for another minute until pork is cooked. Then add the tomatoes and stir-fry until well combined. Remove from heat.
  • Step 3.To make the omelette, whisk eggs with the water. Place a non-stick pan over medium heat and heat the oil.
  • Step 4.When the pan is hot pour in the eggs and use a spatula to keep spreading out the eggs until they're firm. Add about ½ cup of filling mixture to the centre of the omelette.
  • Step 5.Fold the edges of the omelette over the filling. Remove from heat and transfer to a serving plate. Serve on its own or with rice and/or with optional sauces.

2 tablespoons chopped red bell pepper
1 tablespoon chopped onion
1/4 cup sliced mushrooms
1 cup loosely packed fresh baby spinach leaves, rinsed
1/2 cup fat-free egg product or 2 eggs, beaten
1 tablespoon water
Dash salt
Dash pepper
1 tablespoon shredded reduced-fat Cheddar cheese

Steps:

  • In 8-inch nonstick skillet, heat oil over medium-high heat. Add bell pepper, onion and mushrooms to oil. Cook 2 minutes, stirring frequently, until onion is tender. Stir in spinach; continue cooking and stirring just until spinach wilts. Remove vegetables from pan to small bowl.
  • In medium bowl, beat egg product, water, salt and pepper with fork or whisk until well mixed. Reheat same skillet over medium-high heat. Quickly pour egg mixture into pan. While sliding pan back and forth rapidly over heat, quickly stir with spatula to spread eggs continuously over bottom of pan as they thicken. Let stand over heat a few seconds to lightly brown bottom of omelet. Do not overcook; omelet will continue to cook after folding.
  • Place cooked vegetable mixture over half of omelet; top with cheese. With spatula, fold other half of omelet over vegetables. Gently slide out of pan onto plate. Serve immediately.

2 large mushrooms, sliced
2 tablespoons finely chopped green or sweet red pepper

1/4 cup 2% milk

7 to 8 medium strawberries, hulled and thinly sliced
2 tablespoons granulated sugar
1 tablespoon white wine vinegar
4 large eggs, beaten, at room temperature
2 tablespoons granulated sugar
1 tablespoon heavy cream
1/2 teaspoon kosher salt
3 tablespoons finely chopped fresh mint
1 tablespoon unsalted butter, at room temperature
1/2 tablespoon extra-virgin olive oil
1/2 cup heavy whipping cream
11/2 teaspoons powdered sugar
1 teaspoon vanilla extract

Steps:

  • For the strawberries: Toss together the strawberries, granulated sugar and vinegar in a small bowl. Allow the mixture to stand for 15 minutes. Strain before using.
  • For the omelet: Whisk together the eggs, granulated sugar, cream and salt until smooth in a medium bowl. Stir in the mint. Heat the butter and oil over medium-high heat in a 10-inch nonstick skillet. Add the egg mixture and cook until almost set, about 4 minutes. Spoon the strawberry mixture down the center of the omelet. Fold the edges of the omelet over the strawberries. Cook until the egg mixture has set, 3 to 4 minutes.
  • For the whipped cream: Beat the cream, powdered sugar and vanilla in a large mixing bowl until the cream holds stiff peaks.

4 tsp cornflour / corn starch
1 1/2 tbsp light soy sauce (, or all purpose (Note 2))
2 tsp Oyster Sauce
1 tbsp Chinese Cooking Wine ((shaoxing wine) OR Mirin (Note 3))
1/2 tsp sesame oil
1 cup / 250 ml water
Dash of white pepper
6 eggs
2 cups bean sprouts ((just eyeball it))
4 shallots/green onions (, white part only, sliced)
Salt and white pepper
2 tbsp vegetable oil
1 tsp sesame oil
1 garlic clove (, finely chopped)
ONE Filling of Choice, below (Prawn or Pork)
100 - 120g/3.5 - 4 oz chopped raw small prawns/shrimp (, peeled and deveined (Note 4))
100 - 120g/3.5 - 4 oz ground/mince pork ((or chicken, turkey, beef or veal))
1/2 tsp EACH soy sauce and Oyster Sauce
1/4 tsp sugar
Dash of sesame oil
Sesame seeds, sliced green onion

Steps:

  • Mix cornflour and soy sauce. Then add remaining ingredients.
  • Pour into a saucepan over medium heat. Bring to simmer, stirring constantly. Simmer for 1 minute until sauce thickens to thin syrup consistency. Remove from stove, set aside.
  • MICROWAVE option: Microwave on high for 1 1/2 minutes. Stir very well, microwave for another 1 1/2 minutes until thickened. Mix well again.
  • Place pork in a bowl, add remaining ingredients. Use fork to mix through.
  • Whisk eggs in a bowl.
  • Add beansprouts, green onions, pork or prawns, salt and pepper. If using pork, crumble the raw pork in with fingers (see video). Mix through.
  • Heat 1/2 tbsp vegetable oil and drizzle of sesame oil in a non stick skillet over medium heat. Add a bit of garlic and quickly saute (10 seconds) and push into centre of skillet.
  • Ladle in 1/4 of batter. Use spatular to push edges in to form a round(ish) shape.
  • Cook until the underside is light golden (about 1 1/2 minutes) then flip and cook the other side for 1 minute. The raw meat will cook through in this time. Repeat with remaining egg to make 4 omelettes (use 2 pans if you can!).
  • Slide omelette onto plate. Pour over sauce. Sprinkle with sesame seeds and green onions, if using.
  • Serve with a side of rice and steamed vegetables of choice. Double the sauce if you want enough to pour over the rice and veggies! (Click on Servings to scale recipe up).

I was craving for quiche, but wanted to make it healthier and easier (less dishes to wash). So, I ended up cooking everything in the frying pan, and skipped the baking step. The cooking time is just a guess... I'm slow when it comes to chopping x_X

1 medium yellow onion
4 ounces ham, your choice
2 cups chopped spinach
1 stalk fresh parsley
4 eggs
3/4 cup milk
1 tablespoon oil
salt & pepper, to taste
1/4-1/2 cup shredded cheddar cheese

Steps:

  • Chop the onion and ham into 1 cm squares.
  • Separate the stem and leaves of the parsley, then chop each.
  • Heat a stir-fry pan to medium-high, add oil.
  • Cook the onion till it softens a bit. Don't caramelize it! Then add ham and the stem portion of the parsley. Stir for a minute or two.
  • Add spinach, stir and cover. If the frying pan becomes too dry, add a little bit of milk.
  • Meanwhile, use a fork to beat eggs in a medium bowl, then add the milk to the eggs. As you whisk the mixture, add salt and pepper (I don't usually measure by teaspoonfuls, so I'm not sure exactly how much I used -- use your best judgment). Put in the parsley leaves as well.
  • When the spinach shrinks, reduce the heat to medium. Add the egg mixture, and mix evenly.
  • Stir the bottom of the pan as the "quiche" cooks. When about half of the liquid is cooked, mix in cheese, reserving some for top.
  • Cover and let the eggs steam in the pan. Don't be tempted to open the lid - or the top won't cook!
  • Remove the quiche wholly, or scramble it and transfer to a pie dish. Top with cheese & enjoy =).
