Nothing says Christmas more than mulled wine and this recipe uses just that to turn red cabbage into a delicious side dish to accompany your festive fare

1 small red cabbage , cut into wedges and core removed
4 tbsp goose fat (or use rapeseed oil to make to vegetarian)
2 tbsp chopped ginger
250ml red wine
50ml red wine vinegar
¼ tsp ground cloves
1 cinnamon stick
1 orange , zested and juiced
25ml crème de cassis

Steps:

  • For the dressing, put the wine, vinegar, cloves and cinnamon in a saucepan. Cook for 15-20 mins until the liquid has reduced by 3/ 4 (to about 75ml ). Add the orange zest and juice to the pan with the crème de cassis, and set aside to keep warm.
  • Next, shred the cabbage as finely as possible. Heat a wok until very hot, then add the goose fat and fry the cabbage and ginger for 10 mins. Toss through the dressing and cook for 5 mins more until the cabbage is softened but retains a good bite, serving sprinkled with sea salt.

Number Of Ingredients 13

1 TBS EACH: Unsalted Butter & Neutral Oil ((Peanut, Vegetable or Grapeseed))
2-3 Cloves Garlic (- peeled & finely diced)
2 teaspoons Fresh Ginger (- grated (or 1 teaspoon Ginger Powder))
1 small Head Cabbage (- thinly sliced (about 2 pounds) (SEE NOTES))
1 small Yellow Onion (- thinly sliced)
2 large Carrots (- peeled & shredded)
3 large Scallions (- sliced; white/light green part and dark parts separated)
Kosher Salt & Pepper
2 TBS Reduced Sodium Soy Sauce
1 TBS EACH: Honey & Rice Vinegar
1 ½ tsp Mirin
¼ tsp Toasted Sesame Oil
1/8 - ¼ tsp Crushed Red Pepper Flakes - or more to taste

Steps:

  • Make the sauce: In a small bowl or liquid measuring cup, combine all the ingredients from the sauce list. Whisk well to thoroughly combine. Set aside.
  • Stir-fry onions & aromatics: In a large sauté pan over medium-high heat, melt the butter with the oil. Add the onion and stir-fry until almost softened, about 3 minutes. Add the garlic and ginger to the pan along with the white/light green parts of the scallions. Cook, stirring, until fragrant about 1 minute.
  • Add cabbage & carrots: Increase the heat to high and immediately add the cabbage and carrots to the pan and stir well. Let the cabbage cook for 1 minute undisturbed (you want the cabbage to slightly char). Stir and toss the mixture well and then allow to cook undisturbed for another 1 minute. Toss rapidly and continue to cook, stir-frying, for 1 minute.
  • Add sauce: Add the sauce to the pan and toss well so everything is coated. Cook until the cabbage is just tender and softened, about 1 minute.
  • Taste: Remove from heat and stir in the dark green parts of the scallions. Taste and adjust for seasoning with salt, pepper, fresh lime juice and/or sriracha. Transfer to a serving plate.
  • Serve: Top with optional garnishes and serve hot. Enjoy!

1 small onion, sliced
1/2 red cabbage, shredded

  • Heat a skillet over medium high heat. Add oil and onion and saute 2 minutes. Add cabbage and turn in pan, sauteing it until it wilts, 3 to 5 minutes. 15 cloves
700g chunk red cabbage , finely shredded
2 red onions , chopped
200ml red wine vinegar
140g brown sugar
1 tsp mixed spice

Steps:

  • Heat butter in a 6- to 8-quart wide heavy pot over moderately high heat until foam subsides, then cook onion and cabbage, stirring frequently, until wilted and slightly browned, about 20 minutes.
  • Add wine, water, vinegars, apple, sugar, and salt and bring to a boil.
  • Wrap peppercorns, cloves, and bay leaf in cheesecloth and tie with string. Add to cabbage mixture, then cover cabbage directly with a round of parchment or wax paper and cover pot with lid. Reduce heat and simmer until cabbage is very tender, about 2 hours.
