STICKY PORK AND APPLE SLAW

2 tablespoons olive oil
One 2-pound boneless pork butt
Kosher salt and freshly ground black pepper
2 cloves garlic, minced
1 large yellow onion, thinly sliced
1 1/2 cups apple juice
1/2 cup applesauce
1/4 cup low-sodium soy sauce
2 tablespoons light brown sugar
2 tablespoons apple cider vinegar
1 cup thinly sliced green cabbage
1 cup thinly sliced red cabbage
1/2 cup grated carrots
4 green onions, whites and greens, thinly sliced
2 Granny Smith apples, cored and cut into matchsticks.
1/2 cup mayonnaise
1/2 cup minced fresh parsley leaves
2 tablespoons whole-grain mustard
1 tablespoon honey
2 teaspoons apple cider vinegar
2 pinches kosher salt

Steps:

  • For the sticky pork: Preheat the oven to 300 degrees F.
  • Heat the olive oil in a Dutch oven over medium-high heat. Season the pork butt with salt and pepper. Add the pork to the pot and brown on all sides, about 5 minutes each side, 15 to 20 minutes total. Remove the pork to a plate and set aside. Leave any rendered fat in the pot and place it back on the stovetop.
  • Add the garlic and onions to the pot and cook until the onions have softened slightly, about 2 minutes. Add the apple juice, deglazing the bottom of the pot. Scrape all the browned bits from the bottom. Add the applesauce, soy sauce, brown sugar and vinegar and stir together. Carefully return the pork to the pot and cover. Transfer the pot to the oven and braise until the pork is very tender, about 3 hours.
  • For the apple saw: Meanwhile toss the cabbage, carrots, green onions and apples in a large bowl. In a separate bowl, whisk together the mayonnaise, parsley, mustard, honey, vinegar and salt in a small bowl until well combined. Add the dressing to the apple mixture and toss until well coated.
  • When the pork is ready, carefully remove the lid and serve straight from the pot. Use a fork and a knife to slice and serve with the braising liquid and the slaw alongside.

3 pounds raw, uncured pork belly, skin on
2 cups kecap manis
6 tablespoons Chinese black vinegar
3 tablespoons dark soy sauce
3 tablespoons Thai or Vietnamese fish sauce
Freshly squeezed juice of 1 lime
Canola oil or peanut oil, for frying
All-purpose flour, for dusting
Salt, if needed
5 pounds watermelon
2 cups rice wine vinegar
3 shallots, sliced
2 Thai bird chilies, sliced
2 kaffir lime leaves
1 ounce (2 inches) fresh gingerroot, peeled and sliced
1/2 round (1 ounce) palm sugar or 2 tablespoons light brown sugar
1 tablespoon kosher salt
1 1/2 rounds palm sugar (3 ounces) or 6 tablespoons light brown sugar
1 cup rice wine vinegar
1/2 cup freshly squeezed lime juice
6 ounces gingerroot, peeled and sliced
6 cilantro roots and 1 inch of stems, cleaned and trimmed
2 garlic cloves, roughly chopped
3/4 teaspoon kosher salt
3 scallions, trimmed and sliced, for garnish
1 cup torn Vietnamese coriander (rau ram) leaves, for garnish
1 cup torn Thai basil leaves, for garnish
Sesame seeds, for garnish (optional)

Steps:

  • Crosshatch pork belly skin with sharp knife, making cuts 1/2-inch apart. Place pork belly in non-reactive dish. Combine kecap manis, vinegar, soy sauce, fish sauce and lime juice, and pour over pork belly. Chill for 24 to 48 hours, turning several times.
  • Preheat oven to 275 degrees. Place belly, skin side up, in baking pan with 2 cups marinating liquid and 2 cups water. Liquid should come halfway up the pork; if not, add more water or use smaller pan. Cover pan with foil. Bake until a skewer penetrates the belly with little or no resistance, 3 to 4 hours. Remove pork from liquid and let cool. Leaving skin on, slice belly into 1-inch chunks.
  • To make salad, cut watermelon flesh into 1-inch cubes (discarding seeds). Reserve rind. Refrigerate flesh until ready to use. With sharp knife, remove outer green skin of rind, reserving white part. Dice white rind into 1/2-inch cubes. Transfer to a heatproof bowl.
  • In a saucepan over medium-high heat, combine rice wine vinegar, shallots, chilies, kaffir lime, ginger, palm sugar, salt and 1 cup water, and bring to boil. Cook until sugar dissolves. Strain liquid over white rind. Let cool, then chill for at least 1 hour or as long as 2 days.
  • To make dressing, roughly crush palm sugar using a mortar and pestle or place in a plastic bag and crush with a hammer or heavy can. In a food processor, combine sugar with vinegar, lime juice, ginger, cilantro, garlic and salt, and blend until smooth.
  • In medium saucepan or wok, heat 3 inches canola or peanut oil to 375 degrees. Lightly dust pork belly cubes with flour, shaking off excess. Working in batches, fry pork belly until dark golden brown and crispy, 6 to 7 minutes. Transfer to a paper-towel-lined plate. Season with salt, if necessary.
  • In a mixing bowl, toss the watermelon flesh with just enough dressing to coat. Divide pork among serving plates, and top with watermelon flesh and a few cubes of pickled rind. Drizzle additional dressing around plate. Garnish with scallions, coriander leaves, basil, and sesame seeds, if using.

Ribs:
1/2 cup (packed; about 3 ounces) light brown sugar or palm sugar
1/2 cup soy sauce
1/4 cup unseasoned rice vinegar
3 scallions, thinly sliced
6 garlic cloves, minced
2 tablespoons minced peeled ginger (from one 2x1-inch piece)
1 tablespoon chopped cilantro leaves
1 tablespoon hot chili paste (such as sambal oelek)
1 tablespoon toasted sesame oil
1 teaspoon freshly ground black pepper
1/2 medium onion, sliced
3 pounds (1-inch-thick) country-style pork ribs or bone-in pork chops
2 tablespoons Chinese hot mustard powder
Watermelon:
1 teaspoon coriander seeds
1/3 cup Champagne vinegar or white wine vinegar
2 tablespoons fresh lime juice
1 tablespoon finely chopped shallot
1 teaspoon honey
1/2 cup olive oil
Kosher salt, freshly ground pepper
5 cups coarsely chopped seedless watermelon (cut from half a 6- to 7-pound watermelon)
4 cups Sun Gold or cherry tomatoes (about 1 1/4 pounds), halved
1/4 cup cilantro leaves with tender stems plus more for garnish

Steps:

  • Ribs:
  • First, make the marinade. Bring brown sugar and 1/2 cup water to a boil in a small saucepan, stirring to dissolve sugar. Lower heat to medium and simmer until reduced to 1/4 cup; transfer to a medium bowl. Whisk in soy sauce and next 8 ingredients. Stir in onion. Let cool. Pour the marinade into a large resealable plastic bag.
  • Rub ribs with mustard powder and add to marinade in bag; seal bag and turn ribs to coat. Place bag in a baking dish and chill, turning occasionally, for at least 6 hours and up to overnight.
  • Watermelon:
  • Start with the dressing. In a small saucepan over low heat, toast coriander seeds until fragrant and beginning to pop, 2-3 minutes. Transfer coriander to a baking sheet and crush slightly with the back of a cool skillet. Combine coriander, vinegar, lime juice, shallot, and honey in a small bowl. Whisk in oil and season with salt and pepper. Set vinaigrette aside.
  • Place watermelon in a large bowl; add 1/2 cup vinaigrette and toss to coat. Cover and chill, tossing occasionally, for up to 1 hour to lightly pickle watermelon.
  • Build a medium fire in a charcoal grill, or heat a gas grill to medium-high. Transfer ribs from bag, leaving some marinade clinging to surface, onto a baking sheet. Pour remaining marinade from bag into a medium saucepan. Bring to a boil; reduce heat to medium and simmer for 3 minutes. Set marinade aside.
  • Grill ribs until nicely charred and cooked to medium, about 5 minutes per side. Using tongs, dunk each rib into reserved marinade. Return ribs to grill and cook, turning once, until cooked to medium-well, about 2 minutes per side. Transfer to a platter.
  • Toss tomatoes, 1/4 cup cilantro, and 1 Tbsp. vinaigrette in a medium bowl. Season to taste with salt and pepper.
  • Top ribs with pickled watermelon. Scatter tomato mixture over. Garnish with more cilantro. Serve, passing remaining vinaigrette alongside for drizzling over.

STICKY BELLY PORK

By braising the meat first, then crisping it up quickly on the barbecue to finish, the meat stays really tender

1.6kg pork belly
3 tbsp light muscovado sugar
3 tbsp treacle
3 tbsp tomato purée
1 onion , whizzed in a food processor
3 garlic cloves , crushed
1 tbsp dried oregano
1 tbsp ground cumin
1 tsp crushed dried chillies
1 tsp cinnamon
1 tsp allspice

Steps:

  • Heat oven to 150C/130C fan/gas 2, then sit the pork belly in a deep roasting dish. Mix the remaining ingredients with 1 tsp salt, then rub all over the pork. Cover, roast for 3 hrs, then uncover, slice the pork into 16 short, fat chops. Spoon over the sauce from the dish, then roast, uncovered, for another hour, turning the strips halfway. Cool, cover, then chill for up to 24 hours.
  • About 15 mins before you are ready to barbecue, pop the pork into a low oven to melt the sauce making sure the strips are nicely coated in it. Barbecue, skin-side down first, to crisp up, then cook for just a few mins, turning, until heated through and the sauce is sticky.

1 tbsp vegetable oil
3 red shallots, thinly sliced
2 garlic cloves, finely chopped
1-2 small red chillies, finely chopped
500 gm minced lean pork
60 ml (¼ cup) each kecap manis and soy sauce
2 tsp brown sugar
2 tsp rice vinegar
1½ cups each (loosely packed) Vietnamese mint, coriander sprigs and Thai basil
1 green onion, thinly sliced diagonally, placed in cold water
Watermelon pickle
300 gm seedless watermelon, diced
60 ml (¼ cup) rice vinegar
60 ml (¼ cup) fish sauce
40 gm palm sugar
2 red shallots, thinly sliced
60 ml (¼ cup) lime juice

Steps:

  • 1 For watermelon pickle, place half the watermelon in a heatproof bowl. Combine rice vinegar, fish sauce, palm sugar and shallot in a saucepan, season to taste with freshly ground white pepper and stir over medium-high heat until sugar dissolves. Bring to the boil, remove from heat, pour over watermelon in bowl and stand for 5 minutes. Remove watermelon from pickling liquid with a slotted spoon, transfer to a bowl. Add lime juice to pickling liquid and set aside separately in refrigerator. 2 Meanwhile, heat vegetable oil in a large frying pan over medium-high heat, add shallot, garlic and chilli and stir frequently until shallot is golden and starting to crisp (2-3 minutes). Add pork and stir occasionally with a wooden spoon to break up clumps until brown (3-5 minutes). Add kecap manis, soy sauce and sugar and cook until sticky and sauce is reduced to a glaze (1-2 minutes). Season to taste with sea salt, freshly ground white pepper and rice vinegar, then scatter over a large serving plate. 3 Combine herbs, drained green onion, reserved watermelon pickle and remaining watermelon in a bowl. Drizzle with a little pickling liquid, toss lightly to combine, scatter over pork and serve immediately.
