4 boneless pork loin chops (6 ounces each)
1/2 teaspoon salt, divided
1/2 teaspoon pepper, divided
1 tablespoon canola oil
2 medium Gala apples, cut into 1/2-inch pieces
2 cups sliced fresh mushrooms
1 medium onion, chopped
1-1/2 cups instant brown rice
1 cup reduced-sodium chicken broth
2 tablespoons balsamic vinegar
1/4 teaspoon dried thyme

Steps:

  • Sprinkle pork chops with 1/4 teaspoon salt and 1/4 teaspoon pepper. In a large skillet, heat oil over medium heat. Brown pork chops on both sides; remove from pan., Add apples, mushrooms and onion to the skillet; cook and stir 4-5 minutes or until tender. Stir in rice, broth, vinegar, thyme, and remaining salt and pepper. Bring to a boil. Reduce heat; cook, covered, 5 minutes., Place pork chops over top; cook, covered, 4-6 minutes or until a thermometer inserted in pork reads 145°. Let stand 5 minutes before serving.

1/2 teaspoon salt
1/2 teaspoon pepper
2 teaspoons olive oil
1/4 cup apple cider or juice
1 cup reduced-sodium chicken broth
1/4 cup apple jelly
2 teaspoons balsamic vinegar
1 tablespoon butter

Steps:

  • Sprinkle pork chops with salt and pepper. In a large skillet brown chops in oil. Remove and keep warm., Add apple cider to the skillet, stirring to loosen browned bits from pan. Stir in the broth, jelly and vinegar. Bring to a boil; cook until liquid is reduced to 1/3 cup., Return chops to the skillet. Cover and simmer for 8-10 minutes or until meat is tender, turning once. Add butter and stir until melted.

2 tablespoons olive oil
One 2-pound boneless pork butt
Kosher salt and freshly ground black pepper
2 cloves garlic, minced
1 large yellow onion, thinly sliced
1 1/2 cups apple juice
1/2 cup applesauce
1/4 cup low-sodium soy sauce
2 tablespoons light brown sugar
2 tablespoons apple cider vinegar
1 cup thinly sliced green cabbage
1 cup thinly sliced red cabbage
1/2 cup grated carrots
4 green onions, whites and greens, thinly sliced
2 Granny Smith apples, cored and cut into matchsticks.
1/2 cup mayonnaise
1/2 cup minced fresh parsley leaves
2 tablespoons whole-grain mustard
1 tablespoon honey
2 teaspoons apple cider vinegar
2 pinches kosher salt

Steps:

  • For the sticky pork: Preheat the oven to 300 degrees F.
  • Heat the olive oil in a Dutch oven over medium-high heat. Season the pork butt with salt and pepper. Add the pork to the pot and brown on all sides, about 5 minutes each side, 15 to 20 minutes total. Remove the pork to a plate and set aside. Leave any rendered fat in the pot and place it back on the stovetop.
  • Add the garlic and onions to the pot and cook until the onions have softened slightly, about 2 minutes. Add the apple juice, deglazing the bottom of the pot. Scrape all the browned bits from the bottom. Add the applesauce, soy sauce, brown sugar and vinegar and stir together. Carefully return the pork to the pot and cover. Transfer the pot to the oven and braise until the pork is very tender, about 3 hours.
  • For the apple saw: Meanwhile toss the cabbage, carrots, green onions and apples in a large bowl. In a separate bowl, whisk together the mayonnaise, parsley, mustard, honey, vinegar and salt in a small bowl until well combined. Add the dressing to the apple mixture and toss until well coated.
  • When the pork is ready, carefully remove the lid and serve straight from the pot. Use a fork and a knife to slice and serve with the braising liquid and the slaw alongside.

1/2 cup (120 ml) soy sauce
1/4 cup (50 grams) sugar
1/4 cup plus 2 tablespoons (90 ml) hoisin sauce
1/4 cup plus 2 tablespoons (90 ml) ketchup
1/3 cup (80 ml) oyster sauce
2 tablespoons (30 ml)sherry
1 tablespoon minced peeled ginger
1/2 teaspoon Chinese five-spice powder
2 to 4 drops red food coloring, optional (see Cook's Note)
2 pounds (900 grams) pork chops (each at least 1-inch thick)
4 tablespoons (60 ml) honey
Vegetable oil, for greasing
Apple and Arugula Salad, recipe follows, for serving
2 sweet-tart small apples, such as Honeycrisp
7 ounces arugula, preferably organic
1/4 red onion, thinly sliced
2 tablespoons dried cranberries
3 tablespoons (45 ml) fresh lemon juice (from 1 large lemon)
3 tablespoons (45 ml) extra-virgin olive oil
1 tablespoon honey or maple syrup
Pinch each of kosher salt and freshly ground black pepper

Steps:

  • In a large bowl, stir together the sugar, hoisin, ketchup, oyster sauce, sherry, ginger, five-spice powder, and food coloring, if using. Set the marinade aside.
  • Place the pork chops in a shallow baking dish. Pour the marinade over the pork. Let the pork marinate while you prepare the salad or up to overnight in the refrigerator. (The longer it marinates, the better the flavor.)
  • Transfer the pork marinade to a small saucepan. Stir in the honey until completely combined. Bring to a boil and reserve this sauce for serving.
  • Meanwhile, preheat a grill or grill pan over high heat until hot, 5 to 8 minutes.
  • Wipe excess marinade from the pork chops. Grease the grill or grill pan with vegetable oil right before adding the chops. Grill the chops until golden brown with some grill marks on the bottom, 5 to 8 minutes. Flip the chops over and cook until the internal temperature reaches about 145 degrees F, about 5 minutes. Remove from the heat and let rest for at least 8 minutes. Smother the chops with some of the reserved sauce, slice into 1/2-inch wide pieces then drizzle with some more of the sauce. Serve with the apple and arugula salad.
  • For the salad: Peel, quarter, core and thinly slice the apples. Combine with the remaining salad ingredients in a large bowl.
  • For the dressing: Combine all of the ingredients in a mason jar and shake vigorously. Taste and adjust the seasonings, as needed.
  • Toss the salad with the dressing and serve immediately.

1 Tbsp brown sugar
2 Tbsp heinz apple cider vinegar (i used unfiltered)
2 Tbsp soy sauce
2 Tbsp balsamic vinegar
2 large pork chops

Steps:

  • 1. Mix the first 4 ingredients. Put a little oil in a fry pan. Begin frying the pork chops. Pour sauce over the chops. Make sure to get sauce on both sides of the pork chops. Fry until the chops are done.
  • 2. Hint, don't over cook the chops (DUH!!!) I didn't watch them and the first time I made them, I burned 'em! They were still edible, and tastey, but the carbon from being burned changed the whole flavor profile!!! So, don't burn them!!!

4 (5 ounce) bone-in pork chops, 3/4-inch thick
salt and freshly ground black pepper to taste
1 tablespoon butter
1 tablespoon olive oil
1 cup chicken broth
¼ cup good quality balsamic vinegar
1 tablespoon honey

Steps:

  • Pat pork chops dry with paper towels, and season with salt and pepper.
  • Melt butter in a large, nonstick skillet over medium heat. Add olive oil and stir to combine.
  • When butter and oil shimmer, carefully add chops and cook over medium heat until browned on one side, 5 to 6 minutes. Turn and cook pork chops until no longer pink in the center and browned on the other side, 3 to 4 minutes. Do not overcook the chops or they will turn dry and hard. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
  • Remove pork chops from heat and cover to keep warm.
  • Combine chicken broth, balsamic vinegar, and honey in a small saucepan. Bring glaze to a boil over medium-high heat and boil until mixture is reduced to 1/2 cup, 5 to 6 minutes.
  • Drizzle pan-fried chops with balsamic glaze and serve warm.

1 tablespoon minced garlic
1 tablespoon minced shallot
3 tablespoons olive oil
1/2 cup dry red wine
1/2 cup apple balsamic vinegar *, or 5 tablespoons cider vinegar mixed with 3 tablespoons balsamic vinegar
1 1/2 cups chicken stock, homemade or store-bought**, but not canned broth
1 cup veal stock, homemade or store-bought**
6 (1-inch-thick) rib pork chops (each about 1/2 pound)
1/2 Granny Smith apple
1/2 cup golden raisins
Accompaniment: blue cheese potato gratin

Steps:

  • Cook garlic and shallot in 1 tablespoon oil in a 3-quart heavy saucepan over low heat, stirring occasionally, until softened, 3 to 5 minutes. Add wine and vinegar and boil until reduced to about 1/2 cup, 8 to 10 minutes. Add chicken and veal stocks and boil until reduced to about 1 1/3 cups, 15 to 20 minutes.
  • Preheat oven to 400°F.
  • Heat remaining 2 tablespoons oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking. While oil is heating, pat pork chops dry and season with salt and pepper. Sear 3 chops, turning over once, 4 minutes total, then transfer to a shallow baking pan. Sear remaining chops in same manner, then transfer to baking pan (reserving fat in skillet). Roast in middle of oven until an instant-read thermometer inserted horizontally into center of chops (do not touch bone) registers 155°F, 8 to 12 minutes.
  • While pork is roasting, peel apple and cut into 1/3-inch dice. Pour off all but 1 tablespoon fat from skillet, then cook apple and raisins over moderate heat, stirring occasionally, until apple is golden brown and caramelized but not falling apart, 2 to 3 minutes. Add sauce and simmer, stirring, 1 minute. Season with salt and pepper.
  • Spoon sauce over pork chops.
