1 large egg, room temperature, beaten
1 cup sugar
1 cup creamy peanut butter
1/2 cup sweetened shredded coconut

Steps:

  • Preheat oven to 350°. In a large bowl, mix all ingredients. Scoop level tablespoonfuls and roll into balls. Place on ungreased baking sheets and flatten with a fork., Bake until set, about 15 minutes. Remove to wire racks to cool.

1 cup smooth peanut butter
1 large egg
1 teaspoon vanilla
1/2 cup sugar
1/4 cup stevia, in the raw

Steps:

  • Combine all ingredients in a medium bowl.
  • Shape dough into 1" balls.
  • Place 2" apart on an ungreased baking sheet, and flatten in a criss-cross pattern with a fork.
  • Bake 8-10 minutes at 350°.
