DIRTY STEVE'S GARLIC RANCH WING SAUCE

2 cups melted butter
1 cup Dirty Steve's Original Wing Sauce, recipe follows, or hot sauce, such as Frank's
4 heaping tablespoons fresh minced garlic
4 tablespoons brown sugar
2 teaspoons black pepper
4 packets powdered ranch dressing
8 cups red hot sauce, such as Frank's
2 cups melted butter
1/2 cup mango habanero sauce
8 tablespoons brown sugar
4 teaspoons chili powder
4 teaspoons garlic powder
4 teaspoons onion powder
4 teaspoons black pepper
4 teaspoons cayenne pepper
4 teaspoons seasoning salt

Steps:

  • Mix the butter, Dirty Steve's Original Wing Sauce, garlic, sugar, pepper and ranch dressing in a bowl. Stir vigorously until completely combined.
  • Mix the hot sauce, butter, mango habanero sauce, brown sugar, chili powder, garlic powder, onion powder, black pepper, cayenne pepper and seasoning salt in a bowl. Stir vigorously until completely combined.

The key to making this REALLY fast is to use a thin cut steak and only cook it for a couple of minutes on each side. I serve with grilled vegetables and rice for a complete meal. Prep time includes 30 minutes of marinating in the fridge.

4 garlic cloves, peeled
1 teaspoon kosher salt
1/2 teaspoon pepper
1/2 teaspoon cumin
1/4 cup lime juice, fresh is best
2 tablespoons olive oil
1 lb steak, cut 1/2 inch thick

Steps:

  • Combine all ingredients except for the steaks in a food processor or blender. Process until the mixture is a smooth liquid paste.
  • On a plate or in a zip top bag, combine 1/2 of the marinade with the steaks, making sure the meat is well coated. Let sit in the refrigerator for 1/2 hour. Reserve the remaining marinade.
  • Grill the steaks over high heat, 2-3 minutes per side, basting if desired with the remaining marinade.
  • Remove to a serving dish, brush with any remaining marinade, and serve.

1 ½ pounds shrimp, tails removed
1 bunch fresh cilantro, chopped, or to taste, divided
¼ cup olive oil
½ yellow onion, chopped
5 cloves garlic, chopped, or more to taste
2 cups salsa
1 red bell pepper, finely chopped
¾ cup white wine
1 small red chile pepper, pureed
1 teaspoon lemon juice, or to taste
1 teaspoon lime juice, or to taste

Steps:

  • Toss shrimp and half the cilantro together in a bowl.
  • Heat olive oil in a skillet over medium heat; saute onion until translucent, 1 to 2 minutes. Add garlic and saute until browned, 1 to 2 minutes.
  • Stir salsa, red bell pepper, white wine, red chile pepper puree, lemon juice, and lime juice into onion mixture; bring to a boil. Reduce heat and simmer, 2 to 3 minutes. Add shrimp to salsa mixture; cook and stir until shrimp are cooked through, about 5 minutes. Garnish with remaining cilantro and add more lemon or lime juice to taste.

Steps:

  • Whisk together lime juice, garlic, red-pepper flakes, and 1/4 teaspoon salt, then add oil in a slow stream, whisking well. Whisk in cilantro.
  • Prepare a gas grill for direct-heat cooking over medium-high heat. Pat pork dry and season with salt and pepper. 2 limes, juice and zest of

1⁄2 cup fish sauce
1⁄4 cup fresh lime juice (about 2 limes)
1 tablespoon light brown sugar

  • In a small jar add the Thai chilies and garlic. Then add the fish sauce, lime juice, 1 to 2 tablespoons of water and brown sugar. Mix until the sugar is dissolved. Secure an airtight lid. For the best flavor, refrigerate for 2 hours before using.
