Time 30m

Yield 4 servings

Number Of Ingredients 8

1/4 cup slivered almonds
1 pound green beans, stem ends trimmed
1/3 cup water
2 teaspoons butter, plus 2 teaspoons
Scant 1/2 teaspoon salt
1/4 teaspoon finely grated lemon zest
2 tablespoons chopped fresh flat-leaf parsley
Freshly ground black pepper

Steps:

  • Heat an 8 to 9-inch pot over medium-low heat. When it is hot, add almonds and toast, stirring frequently, until they are golden brown and fragrant, 2 to 3 minutes. Remove almonds from skillet and set aside. In the same pot add green beans, 1/3 cup water, 2 teaspoons butter, and salt, and cover. Increase heat to medium-high, cover and cook until steam escapes around lid. Set timer for 5 minutes and continue to steam until beans are brightly colored and just tender. Remove lid and continue to cook until water evaporates and beans start to saute, 1 to 2 minutes longer.
  • Turn off heat, and stir in toasted almonds, lemon zest, parsley, remaining 2 teaspoons butter, and pepper, to taste. Serve immediately.

HOW TO CRISP TENDER GREENS

How to Crisp Tender Greens image

When I worked at the Little Nell Hotel in Aspen, Colorado, executive chef George Mahaffey taught me this technique: Use warm water to refresh greens and then chill them in order to get them crisp. As with flowers, if the old stem of the greens is cut or torn to allow the water to be absorbed into the freshly cut end, the greens get crisper.

Steps:

  • STEP ONE. Fill your sink with warm water. The temperature should be 105 degrees F to 110 degrees F; if it feels warm to your wrist, it is warm enough.
  • STEP TWO. Submerge lettuces, herbs or other tender greens and soak for 5 to 10 minutes.
  • STEP THREE. Carefully dry the greens, preferably using a salad spinner. Gently shake the greens to remove excess water before spinning. Don't overload the spinner or spin them too quickly, as the greens may bruise.
  • STEP FOUR. Cover and chill. Cover the greens with a damp towel, chill for at least 20 minutes, and you will once again have crisp, vibrant lettuces, herbs or greens.
