2 blocks fresh firm tofu
2 lb ground pork
1/2 lb cleaned 31/35 tiger shrimp, chopped
2 stalks green onion, chopped
1 T ginger, grated
1 1/2 T garlic, minced
4 oz water chestnuts, chopped
1/2 c oyster sauce
4 shiitake mushrooms, diced
1 t salt
1/2 t pepper
1/2 c flour
1 qt vegetable oil

Steps:

  • Cut cut both blocks of tofu into 8 triangles by cutting down the middle lengthwise, flip on side and then cut diagonally. Make slits in each piece to form pockets. Combine pork, shrimp, green onion, ginger, garlic, water chestnuts, oyster sauce, shiitake mushrooms, salt and pepper. Spoon filling into each triangle. Lightly coat in flour and cook in hot cooking oil until golden brown, about 8 minutes. Place tofu on plate, cover in plastic wrap and steam in a wok with a bamboo steamer for 15-20 minutes or until pork is cooked. For the Sauce: 1-14.5 oz can low sodium chicken broth 3 t sugar 1/4 c soy sauce 1/4 c oyster sauce 5 T cornstarch in 5 t water In a saucepan, bring chicken broth, sugar, soy sauce and oyster sauce to a boil. Add cornstarch water and whisk quickly until thickened. Remove and pour over tofu.

150 g minced lean pork
2 packages tofu, cut into halves and scoop out a spoonful of tofu from top surface
1 sprig coriander, chopped finely
2 shiitake mushrooms or 2 Chinese black mushrooms, diced
1 tablespoon cooking wine or 1 tablespoon sherry wine
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon cornflour
1 tablespoon oyster sauce
1/2 teaspoon cornflour
1 dash pepper
1 dash salt
1/2 cup water
1 tablespoon cooking wine or 1 tablespoon sherry wine

Steps:

  • For the beancurds ---------------.
  • Mixed minced pork, some corrianders, mushrooms and cooking wine, salt, pepper, corn flour together.
  • Fill the hole on each beancurd with the mixture.
  • Put the beancurds into the steamer to steam for 15 minutes.
  • For the gravy --------------------.
  • Boil 1/2 cup of water in a small saucepan.
  • Add oyster sauce, corn flour, pepper and salt to the boiling water and stir well.
  • Turn off the gas and add 1 tbsp of cooking wine or sherry and the remaining corriander to the gravy and stir well.
  • Sprinkle the gravy over the steamed beancurds and serve.

1 piece tofu, crushed (about 8cmx8cmx8cm)
1/2 lb pork, minced
1 egg white
1 1/2 teaspoons salt
1/2 teaspoon pepper
2 stalks spring onions, diced (optional)
2 teaspoons soy sauce
1 teaspoon cornflour or 1 teaspoon flour
1 teaspoon sugar
1 teaspoon sesame oil (or other vegetable oil)
1 pinch pepper

Steps:

  • Marinate the pork with the seasonings for 30 minutes or more.
  • Mix all the ingredients thoroughly and place them flat on a plate.
  • Steam the mixture until they are cooked.
  • It is a good idea to steam it over rice cooker, using a suitable rack to hold in position, when you are cooking the rice.
  • Serve hot.
  • If you want it more salty, add some soy sauce on top to suit your taste.
