BOILED OKRA
A 10-minute appetizer! Simple and fresh. Boil okra and dip in soy sauce and wasabi. Wonderful served hot or cold. A delicious and healthy snack.

Steps:
- Wash and clean the okra. Drain and set aside.
- Bring a small pot of water to a boil. Add the salt. Add the okra.
- Boil for 3 minutes. Quickly drain and run the okra under cold running water.
- Arrange okra on a plate. Serve with soy sauce and wasabi for dipping.
- Delicious hot or cold (we call that "sashimi-style")!
OKRA AND TOMATOES
Steps:
- In a large skillet or Dutch oven, cook bacon until the bacon is starting to get crispy and the fat is rendered, about 5 minutes.
- Add the onion and garlic; saute for 5 more minutes.
- Stir in tomatoes (with their juices), sugar, thyme, bay leaf, vinegar and Worcestershire sauce. Use the juices from the tomatoes to deglaze the pan, scraping up the browned bits from the bottom. Reduce the heat to low and simmer, uncovered, for 10 minutes.
- Add the okra, cover with a lid, and simmer, stirring occasionally, until the okra is tender (about 10-12 minutes for fresh okra or 7-8 minutes for frozen okra).
- Remove the bay leaf. Season with salt and pepper, to taste. Serve immediately.

FRIED OKRA
A simple Southern classic! Okra is dredged in seasoned cornmeal, then fried until golden.

Steps:
- In a small bowl, soak okra in egg for 5 to 10 minutes. In a medium bowl, combine cornmeal, salt, and pepper.
- Heat oil in a large skillet over medium-high heat. Dredge okra in the cornmeal mixture, coating evenly. Carefully place okra in hot oil; stir continuously. Reduce heat to medium when okra first starts to brown, and cook until golden. Drain on paper towels.
