2 teaspoons olive oil
1/4 teaspoon grated lemon zest
2 pints grape tomatoes
1/4 teaspoon celery salt
Dash white pepper
1-1/2 pounds fresh green beans, trimmed
2 tablespoons grated Romano or Parmesan cheese

Steps:

  • In a small bowl, combine oil and lemon zest. Place tomatoes in a greased 15x10x1-in. baking pan; drizzle with oil mixture. Sprinkle with celery salt and pepper; toss to coat. Bake at 350° for 35-40 minutes or until very tender, stirring once., Meanwhile, place beans in a steamer basket; place in a saucepan over 1 in. of water. Bring to a boil; cover and steam for 7-8 minutes or until crisp-tender. Transfer to a serving plate., Place tomatoes over beans; sprinkle with cheese. Serve warm or at room temperature.

1 pound fresh tomatoes (any tomato of choice)
1 pound green beans
1 tablespoon olive oil
2 cloves garlic (sliced thin)
1 pinch salt and pepper

Steps:

  • Preheat oven and prep veggies: Preheat oven to 400 degrees F (200 C), then wash and cut the vegetables. Cut the stems off of the green beans, then cut into 1 inch pieces. Remove the stems from the tomatoes, then cut into 1 inch pieces (depending on tomatoes used, this may mean halving or even quartering the tomato).
  • Season vegetables: Place sliced green beans and tomatoes on a baking sheet, drizzle with olive oil, and toss to coat the vegetables completely. Then season vegetables with sliced garlic, salt, pepper and any other desired seasonings like dried or fresh herbs.
  • Bake vegetables: Roast the tomatoes and green beans in the oven until they soften and begin to brown, which will take about 25 minutes. After 10-15 minutes of roasting, use a spatula to move the vegetables so they brown on all sides. Remove from the oven and serve immediately as a side dish, or let them cool and save for later use.

2 tablespoons butter or 2 tablespoons margarine

  • Prepare green beans by snapping them or cutting them to approx 1 inch in length and rinsing them.

500g green beans , topped and tailed
2 tbsp olive oil
2 garlic cloves , thinly sliced
2-3 bunches cherry tomatoes on the vine

Steps:

  • Cook the beans in a pan of boiling salted water for 6-8 mins until just tender. Drain and quickly cool under cold running water. Set aside.
  • Heat the oil in a large pan on the barbecue, then add the garlic and cook quickly until lightly browned. Add the beans, stir well, cover and leave to reheat. Meanwhile, cook the tomatoes on the grill bars until softened and slightly browned. Tip the beans into a serving bowl and top with the tomatoes. Sprinkle with a little sea salt and serve.
