Nana's Traditional Christmas Steamed Plum Pudding with Hard Sauce image

1 cup light molasses
3/4 cup melted butter
1/2 cup warm milk
2 eggs, beaten
1 cup all-purpose flour, plus additional for tossing fruit
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 pint candied mixed fruit (or diced dried fruit such as pineapple, pears, apples, and plums)
1 cup raisins
1 1/2 ounces brandy
Holly sprig, for garnish
Hard Sauce, recipe follows
1/4 pound butter
1 cup sugar
1 pinch salt
1 teaspoon vanilla extract
1-ounce brandy or rum

Steps:

  • Combine the molasses, butter, milk, and eggs in a mixing bowl. Next, combine the flour, baking soda, salt, cinnamon, and cloves in a large mixing bowl. Add the dry ingredients to the wet ingredients in 3 additions. Toss candied fruit and raisins lightly with flour to prevent sinking and add to batter. Stir in brandy.
  • Pour into a greased and sugared steam pudding mold and place on a rack in a large covered pot with water that comes halfway up the sides of the mold. Cover and steam for 2 hours, checking occasionally to make sure water hasn't boiled out. Let cool for 5 minutes on a rack before turning out. Dust with powdered sugar and serve with a sprig of holly and Hard Sauce.
  • Beat all ingredients together until very well combined. Serve with pudding.

1 ½ cups self-rising flour
1 cup white sugar
1 teaspoon ground cinnamon
2 eggs, beaten
¼ cup melted butter
½ cup prepared mincemeat pie filling
½ cup whole cranberry sauce
½ cup pumpkin puree
1 (8 ounce) container sour cream
1 (8 ounce) package cream cheese
⅓ cup confectioners' sugar

Steps:

  • Grease one 2-quart lidded pudding mold. Sift together the flour, sugar and cinnamon; set aside.
  • In a large bowl, mix together the eggs, butter, mincemeat, cranberry sauce and pumpkin. Add to flour mixture and mix until smooth; pour into pudding mold.
  • Place a rack in the bottom of a large pot, over medium heat, and fill 1/2 way up with boiling water. Place the pudding on the rack. Steam for 2 1/2 hours.
  • Check the pan occasionally and add more water if needed. Check for doneness by inserting a toothpick in the center. When firm, place the pudding mold on a rack outside of the water for 10 minutes and unmold.
  • Prepare a sauce by blending together the sour cream, cream cheese and confectioners sugar. Spoon dollops over warm pudding and serve.

7-Cup Steamed Christmas Pudding With Butterscotch Sauce image

An easy and VERY light Christmas pudding - for those that dislike the heavy dark puddings. However, this still has all the traditional Christmas pudding ingredients, but it is served with a delicious butterscotch sauce for a decadent twist! Moreover, all the family can now have their pudding and eat it, as this appeals to all ages! Steaming a pudding is SO easy - you just pop it on to gently steam, whilst you prepare the rest of the festive meal. You only have to remember to keep topping up the water from time to time. Serve warm with the hot butterscotch sauce and maybe a jug of single cream or brandy custard to help it along! Merry Christmas! N.B. This recipe was taken from the Christmas 2003 edition of BBC Good Food magazine, I have amended it slightly to personal taste. I have made this pudding every year since I first saw the recipe, and I have given this recipe out countless times!

1 cup raisins
1 cup sultana
1 cup self-raising flour
1 cup finely grated butter (about 115g/4oz)
1 cup fresh brown breadcrumbs (from around 4 thick slices of bread)
1 cup light muscovado sugar
1 cup mixed nuts, chopped plus extra to decorate
1 teaspoon ground cinnamon
1 teaspoon ground mixed spice
1 cup milk
1 large egg
butter, for greasing
85 g butter
100 g light muscovado sugar
200 ml double cream
1 teaspoon vanilla extract

Steps:

  • For the pudding, empty the first six cups and the nuts, if using, into a mixing bowl with the spices, then stir in the milk and egg. Once well combined, tip into a buttered 1.5 litre pudding bowl.
  • Cover with a double layer of buttered foil, making a pleat in the centre to allow the pudding to rise.
  • Tie the foil securely with string, then place in a steamer or large pan containing enough gently simmering water to come halfway up the sides of the bowl. Steam, covered with a lid, for 2 to 2 1/2 hours.
  • Check the water level during cooking, topping up if necessary.
  • If you are preparing this pudding ahead, remove the foil, let it cool slightly, then wrap in cling film and then fresh foil. It can be stored in a fridge for up to one week ahead of time. Or, freeze it for up to one month. Defrost overnight.
  • If you are serving it immediately, unwrap and invert onto a deep plate.
  • For the sauce, put everything in a pan and bring slowly to the boil, stirring. Allow to bubble away for 2-3 minutes, still stirring, until the sugar has dissolved and the sauce is pale caramel in colour and slightly thickened.
  • Remove from the heat. Pour the sauce over the pudding and decorate with the whole mixed nuts.
  • Serve with a jug of fresh cream or brandy custard.

BUTTER, SODA, AND SPICES MIXED WITH POTATO
1 c grated raw potato
1/2 c softened butter, mixed with potatoes
1 tsp baking soda mixed with potatoes
1 tsp salt mixed with potatoes
1 tsp cinnamon, mixed with potatoes
1/2 tsp cloves, mixed with potatoes
1/2 tsp nutmeg, mixed with potatoes
ADD
1 c grated raw carrot
1 c raisins
1 c nuts
SIFT DRY INGREDIENTS
1 1/2 c flour
1 c brown sugar
RUM SAUCE
2 c milk
2 Tbsp flour to thicken
1/2 c sugar or sweeten to your taste
1 tsp nutmeg to taste
1/4 - 1/2 c rum (can also use 1 tbsp rum extract)
CARAMEL SAUCE
2 c brown sugar
1/2 c butter
3 egg yolks, well beaten
1/2 c milk

Steps:

  • 1. Mix and sift the dry ingredients Mix with other ingredients in order given
  • 2. Steam in butter covered mold for three hours -- keep water boiling constantly
  • 3. Serve with rum sauce or caramel sauce
  • 4. RUM SAUCE: heat 2 cups milk, thickened with flour, sweetened to taste with sugar, flavor with rum and nutmeg
  • 5. CARAMEL SAUCE: Cream sugar and butter, add well beaten egg yolks, and milk, cook in double boiler until thick, then flavor with vanilla

Grammy Billings Steamed Christmas Pudding With Sherry Sauce image

This recipe goes back for many, many years. Grammy made this every Christmas and everyone loved it. It is easy to make as it doesn't have a lot of strange ingredients. It is served with a Sherry Sauce that is out of this world. It makes the pudding. FUNNY STORY---Our family does not drink anything with alcohol in it. My grammy was a stickler for this, but when it came to her hard sauce for the pudding, she reached for the bottle of sherry. When grammy needed a new bottle (which wasn't very often) she would go down to the "package store" (this what they called them then) and when she got near the store she would walk a little slower. After looking every way, to make sure that no one saw her, she would pop into the store to buy the sherry. Then she would do the same thing when she came out. She would rather have died than someone see her in a "package store". At any rate, everyone loved her Christmas Pudding and Sherry Sauce. She always made it with suet but I guess it could be made with any fat---butter, crisco, etc. I have hesitated to post this because of the fact that we don't drink, but we do like this and I wanted to save it with all my other recipes for my kids. I hope you will enjoy it, too.

1 cup suet (packed)
1 cup molasses
1 1/2 cups milk
3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt

1/2 teaspoon allspice
2 cups sugar
1 cup soft butter (a must)
2 beaten eggs
3 -5 tablespoons sherry wine

Steps:

  • CHRISTMAS PUDDING:.
  • Mix all ingredients for the Christmas Pudding together well.
  • Put into 1-pound coffee cans or other cans that have been greased.
  • Put a piece of foil over the top securely.
  • Set cans in water and steam for 3 hours, watching that the water does not boil away.
  • Serve with Sherry Sauce on top of each piece.
  • SHERRY SAUCE:.
  • Beat eggs well.
  • Put sugar and butter in a bowl and work with fingers.
  • Add the beaten eggs and then beat again with mixer.
  • Add the sherry and mix well.

1 c brown sugar
1 c suet
1 lemon, juice and chop rind
4 ounces citron
1 tbsp salt
1/2 tsp cloves
1/2 tsp cinnamon
1/2 tsp allspice
1 c grated carrot
1 cup grated potato
1 tsp baking soda

Steps:

  • Mix altogether, and combine soda with potato before adding to the rest of the ingredients. Place in soup cans ( makes 3) or pudding cans. Place in pot of water half way up the side of the steaming container. Ensure the container is lifted off the bottom of the pot by something like mason jar rings. Serve with butterscotch sauce and hard sauce

2 1/2 cups Plain Flour
1 cup Brown Sugar, firmly packed
1 tsp Bicarbonate of Soda
1 1/2 cup fresh breadcrumbs
2 tsp Mixed Spice
2 1/2 cups Dried Mixed Fruits
1/4 cup Glace Cherries, halved
2 tsp Grated Orange Zest
185g Butter, melted
3 now. Eggs, beaten
1 no. Banana, mashed
1/2 cup Marsala Wine, Brandy or Rum

Steps:

  • 1. Combine flour, sugar, bicarbonate of soda and breadcrumbs in a large bowl and mix well. 2. Add in the dried & glace fruits and orange zest. Mix well. 3. Mix the melted butter, eggs, mashed banana and wine together. Pour over suit mixture and mix well. 4. Pour pudding mixture into a greased pudding basin. Cover with a layer of greaseproof paper and aluminium foil and tie securely. 5. Place pudding basin into a deep saucepan and fill till 3/4 way with hot water. 6. Bring water to boil then simmer pudding for about 4 hours. 7. When cooked, remove from saucepan and left to cool completely before storing in fridge for about 3 weeks before serving. 8. To serve, remove pudding from pan. Microwave for about 2 minutes to heat up pudding. Serve with brandy custard sauce.
