1 pound medium-thick asparagus, stalks peeled and trimmed
1 to 2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
1 lemon, cut into wedges

Steps:

  • Pour about an inch of water into a large saucepan, and set up a collapsible steamer inside. Bring the water to boil, lay the asparagus in the steamer, cover, and steam until crisp-tender, about 4 minutes. Transfer asparagus to a heated serving dish, drizzle with the olive oil, and season with salt and pepper to taste. Garnish with lemon and serve immediately.

1/2 lb asparagus, fresh baby
1/4 teaspoon salt
2 tablespoons unsalted butter
1 teaspoon lemon zest
1 tablespoon lemon juice

Steps:

  • Wash asparagus and trim off bottom of stems by about 2 inches.
  • In a large skillet, bring about 1/2-inch of water to a rapid boil. Season the water with salt.
  • Add the asparagus and cook for 2-3 minutes or until bright green and just tender.
  • Drain the asparagus and place it immediately in a bowl of ice water to shock it. This will help the asparagus to retain the bright green color. Drain.
  • Add butter to the skillet to melt. Stir in the lemon zest and juice. Add the drained asparagus to the skillet. Toss to coat and heat. Serve immediately.

1 bunch asparagus (about 1 pound)

Steps:

  • Hold both ends of a stalk of asparagus and bend it until it snaps. Then use a knife to trim the remainder of the bunch to match. Discard the trimmed stems.
  • Pour about an inch of water into a skillet or wok and bring to a boil over medium-high heat. Put the asparagus in a steamer basket and season with salt. Set the steamer basket over the boiling water and cook until tender, 4 to 6 minutes depending on the thickness. Transfer the asparagus to a plate and serve.

1 to 2 garlic cloves to taste, peeled, halved, green shoot removed
3 anchovy fillets, rinsed
2 teaspoons capers, rinsed
2 tablespoons extra virgin olive oil
1/4 cup finely chopped onion
1 to 2 teaspoons fresh lemon juice
1 teaspoon chopped fresh mint
Salt
freshly ground pepper
1 pound asparagus, preferably thin stalks, trimmed

Steps:

  • Place the garlic, anchovy fillets and capers in a mortar and pestle, and mash to a paste.
  • Heat 1 tablespoon of the olive oil over medium heat in a small skillet. Add the onion and a pinch of salt. Cook, stirring often, until tender (do not brown), three to five minutes. Stir in the garlic and anchovy paste, and cook, stirring, for another minute. Remove from the heat, and stir in the lemon juice, mint, salt and pepper. Set aside for 15 to 30 minutes or longer. The flavors will mellow.
  • Steam the asparagus for three to five minutes until just tender. Remove to a platter or a wide bowl, and add the remaining olive oil and the onion mixture. Toss gently and serve.

1/3 cup minced shallot (may sub white part of green onions)

1 pound fresh asparagus, 1 to 1 1/2 inches cut off the bottom
1/2 teaspoon kosher salt

  • Pour or spritz the water onto 4 paper towels. Spread out the paper towels and lay the asparagus on top of the dampened towels. Sprinkle with the salt. Roll up the asparagus in the dampened towels. Lay the bundle, seam side down, in the microwave. Microwave on high until the asparagus is just crisp tender, about 3 to 4 minutes.
