ADEL'S RED WINE STEAK MARINADE



Adel's Red Wine Steak Marinade image

Granddaddy's favorite steak marinade. Can be used with all cuts of beef. I usually reserve 1/2 cup of the marinade, then simmer it down to a syrup, and use it as a sauce for the steaks.

1 cup dry red wine
⅓ cup soy sauce
2 tablespoons lemon juice
2 tablespoons Worcestershire sauce
2 tablespoons Dijon mustard
2 tablespoons honey
1 teaspoon minced garlic
½ teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon onion powder
½ teaspoon ground black pepper
½ cup canola oil

Steps:

  • To make the marinade, whisk together the red wine, soy sauce, lemon juice, Worcestershire sauce, mustard, honey, garlic, cumin, coriander, onion powder, pepper, and canola oil in a bowl until smooth.
  • To use the marinade, pour over 4 steaks in a resealable plastic bag. Squeeze out the air, and massage the bag to coat the meat with the marinade. Refrigerate at least 8 hours before cooking to desired degree of doneness.

1/2 c red wine (cabernet sauvignon)
1/4 c soy sauce
1/4 c honey
2 clove garlic, grated
1 tsp chili powder (1/2 tsp can b used...we like the bite)
1/2 tsp black pepper
1/4 c fresh rosemary, chopped
2 lb beef (i used strip steak.... any type will work)

Steps:

  • 1. MIX RED WINE, SOY SAUCE, N HONEY STIR IN GRATED GARLIC, ROSEMARY, CHILI POWDER, N BLACK PEPPER.
  • 2. PUT STEAK IN RESEALABLE BAG THEN POUR IN MARINADE.....SEAL BAG N LAY FLAT.
  • 3. MARINATE FOR ATLEAST 6 HOURS TO OVERNIGHT. THEN READY FOR THE GRILL....DELICIOUS....ENJOY :)

1/2 cup red wine
1 tablespoon lemon juice
1 tablespoon balsamic vinegar
1/4 teaspoon oregano

Steps:

  • In a heavy-duty plastic food bag, mix all ingredients well.
  • Place steak in marinade and seal bag tightly.

½ cup lemon juice
¾ cup orange juice
¼ cup honey
¾ cup olive oil
1 cup port wine
1 (2 inch) piece fresh ginger, grated
5 cloves garlic, sliced
2 ½ pounds flank steak

Steps:

  • Whisk together the lemon juice, orange juice, honey, olive oil, port, ginger, and garlic in a large glass or ceramic bowl. Add the flank steak, and toss to evenly coat. Cover the bowl with plastic wrap, and marinate in the refrigerator 1 hour to overnight.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Cook the steaks until they are browned on the outside and red in the center, about 3 minutes per side. An instant-read thermometer inserted into the center should read 125 degrees F (52 degrees C). Slice the steak thinly across the grain before serving.

In a nonreactive bowl combine thoroughly:
1 Cup Extra Virgin olive oil
1/3 Cup Red Wine
2 tbsp flat leaf parsley leaves, minced
2 tsp Fresh Rosemary leaves, minced
1 tbsp Fresh Oregano leaves
2 fresh bay Leaves
½ tsp Celery seed
1 medium red onion, thinly sliced
2 tsp freshly cracked black peppercorns

Steps:

  • I like to let this marinade infuse overnight before using it. When ready to use, place the marinade and the steaks in a Ziploc bag. Expel as much air from the bag as you can while sealing it, and then thoroughly massage the meat to evenly distribute the seasoning. Allow to marinate in the refrigerator for 2-3 hours. About 30 minutes before you want to grill begin preparing the grill. I use direct heat for a flatiron steak since it's relatively thin and I want a nice char on my rare to medium rare steak. Remove steak from marinade and wipe clean of most of the marinade solids. In a non-reactive saucepan heat the marinade to a simmer and cook until the volume is reduced by about 20%, approximately the amount of water based liquids in the pan. Once the water has cooked off the onions will begin to cook. I let them sauté until they have just begun to gain some color then remove the sauce from the heat and allow it to cool. Before service I add the juice of half a lemon and 2 tbsp of minced parsley leaves to help refresh the sauce. That is a very simple marinade and dipping sauce for steak that not only enhances the flavor of the meat but also builds a flavor bridge to any wine that will be served with this dish.

2 Tbs. Olive Oil
1 1/2 Garlic Cloves, crushed
1 Tbs. fresh chopped Rosemary
1 Tbs. fresh chopped Thyme
1 Tbs. fresh chopped Parsley

Steps:

  • Combine all ingredients in a zip lock bag. Place steaks in the zip lock bag and seal (best if you squeeze the air out). Place in refrigerator for at least 1 hour.

I love this marinade. I marinade the steak overnight then reduce the marinade adding beef broth or demi glace and use it as a sauce. I love using this for venison it helps take some of the gamey taste out.
