GARLIC BUTTER SKILLET STEAK AND SHRIMP

Learn how to make the most tender pan-seared garlic butter skillet steak and shrimp. You won't have to go out to get good surf & turf when you can make it at home!

2 large New York strip steaks (0r 4 small)
8 ounces shrimp, peeled and deveined
salt and pepper
olive oil
1-2 tablespoons cold butter
2 whole cloves of garlic
4 tablespoons softened butter
1 tablespoon garlic, pressed or minced
2 teaspoons chopped thyme (or rosemary, or tarragon)
1 tablespoon chopped flat leaf parsley
a big pinch of maldon sea salt + coarse black pepper

Steps:

  • MAKE THE BUTTER: Combine the butter, garlic, chopped parsley, and chopped thyme with a generous pinch of salt and pepper in a small bowl. Cover and refrigerate until you're ready to use it.
  • PREP THE STEAKS: Make sure to remove the steaks from the refrigerator at least 20 minutes before cooking. Pat down the steaks with a paper towel, brush with just a little bit of olive oil on both sides and generously season your steaks with salt and pepper on both sides, really rub it in and make sure it sticks.
  • COOK: Heat a large cast iron skillet over high heat. Add 1 tablespoon of butter along with roughly 1 tablespoon of olive oil and allow the oil to heat through. Add the steaks to the pan along with the two whole cloves of garlic and cook the steaks for roughly 3-7 minutes on each side depending on the thickness of the steak and your preference of doneness. Check the temperature using a meat thermometer and when it reaches your desired doneness, remove the steaks to a plate and let rest for 5-7 minutes.
  • SHRIMP: If you have a ton of grease leftover from the steak, discard most of it, leaving just 1 tablespoon to cook the shrimp in. While the steak is resting, add the remaining tablespoon of butter to the pan (if you didn't have much oil left) over medium heat and add the shrimp. Move them around and season them with salt and pepper. Cook just long enough for them to curl up into a 'c' shape, about 1 - 1½ minutes.
  • SERVE: when ready to serve, top the shrimp and steak with a generous dollop of the prepared garlic butter and serve warm with your favorite sides!

6 tablespoons unsalted butter, (divided)
4 cloves garlic, ((or 1 tablespoon minced garlic))
1 tablespoon fresh parsley, (chopped)
1 tablespoon olive oil
4 New York Steak strip steaks ((Porterhouse steaks))
Salt and pepper
8 ounces (250 g) shrimp (deveined, tails on or off)

Steps:

  • Mix together butter, garlic and fresh chopped parsley. Refrigerate until ready to use.
  • Heat a large grill over high heat. Lightly grease grill plates with oil. Pat steaks dry with paper towel. Brush lightly with oil and generously season with salt and pepper.
  • Grill steaks for 4-5 minutes each side until browned and cooked to desired doneness. Spread half of the butter all over of steaks. Transfer steaks to a warm plate and let rest for 5 minutes.
  • While steaks are resting, melt remaining butter. Season shrimp with salt and pepper.
  • Reduce heat to medium and grill your shrimp for 5-6 minutes, depending not the size and thickness of your shrimp. Flip each one halfway through cook time and continue cooking until they turn nice and pink in colour while white and opaque on the inside.
  • Toss remaining butter through shrimp and serve with steak!

1-2 tablespoons olive oil
3 tablespoons unsalted butter, (divided)
8 ounces (250 g) shrimp (deveined, tails on or off)

1/4 cup dry white wine (or low-sodium chicken broth)
3/4 cup heavy cream* ((thickened cream))
1/4 cup fresh shredded parmesan cheese
Salt and pepper (to taste)
1 tablespoon fresh parsley (chopped)

Steps:

  • Pat steaks dry with paper towel. Season with salt and pepper.
  • Heat a large cast iron skillet or grill over medium-high heat. Sear/grill steaks for 4-5 minutes each side until browned and cooked to desired doneness.
  • Transfer steaks to a warm plate; set aside.
  • Melt 2 tablespoons butter in the skillet (if using a skillet). Add shrimp to the skillet, season with salt and pepper and sear until just cooked and pink -- about 2 minutes. Transfer to a bowl; set aside.(For grill: grill seasoned shrimp while brushing with melted butter until done.)
  • To the same skillet, add the remaining butter, add the garlic, sauté until fragrant (about one minute). (If grilling meats, you will need to grab a pan or skillet for this step.)
  • Pour in the white wine (or broth), and allow to reduce to half, while scraping any bits off of the bottom of the pan.
  • Reduce heat to low-medium heat, add the cream and bring to a simmer, while stirring occasionally. Add in the parmesan cheese; allow to melt through the simmering sauce. Season with salt and pepper to your taste.
  • Add the shrimp back into the pan; sprinkle with the parsley, and stir through.
  • Serve with steaks.

1 (16 ounce) package angel hair pasta
½ cup butter
3 white mushrooms, sliced
¼ cup finely chopped onion
¼ cup chopped scallions
2 cloves garlic, minced
½ cup dry white wine
½ cup chicken broth
½ (10 ounce) can stewed tomatoes
2 tablespoons chopped fresh parsley
1 pound large shrimp, peeled and deveined
2 ounces all-purpose flour
½ lemon
1 pinch salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook angel hair pasta in the boiling water, stirring occasionally, until tender yet firm to the bite, 4 to 5 minutes. Drain.
  • Melt butter in a skillet over medium-high heat. Saute mushrooms, onion, scallions, and garlic until onions are translucent, about 5 minutes. Add wine, broth, tomatoes, and parsley. Bring sauce to a boil. Stir and reduce heat to low. Simmer, covered, for 10 minutes.

One 1 1/2-pound flank steak, trimmed
3 tablespoons extra-virgin olive oil
2 tablespoons red wine vinegar
1 shallot, minced
1 clove garlic, smashed
1/2 teaspoon finely chopped fresh thyme leaves
Freshly ground black pepper
Kosher salt
2 tablespoons unsalted butter
1 pound assorted mushrooms, such as button, shiitake, cremini, or portobello, cleaned, trimmed and quartered or cut into sixths, if large
1/2 teaspoon kosher salt plus more
2 cloves garlic, minced
2 shallots, minced
1 teaspoon finely chopped fresh thyme leaves
1/4 teaspoon finely chopped fresh rosemary leaves
Freshly ground black pepper
1/4 cup dry red wine
2 tablespoons heavy cream
1 tablespoon finely chopped flat-leaf parsley leaves
1 teaspoon finely sliced fresh chives

Steps:

  • Marinate the steak. Poke the steak all over with the tines of a fork; cut in half, against the grain, to make 2 steaks (one steak may be slightly thicker). In a dish large enough to hold the steaks, combine the olive oil, wine vinegar, shallot, garlic, and the thyme. Season with pepper to taste. Add the steaks and turn to coat evenly. Cover, and marinate the steaks at room temperature for 1 hour, turning once, or refrigerate, for up to 12 hours.
  • Make the mushroom sauce. Heat a medium saute pan over high heat, add the butter, and when the foam subsides, add the mushrooms. Reduce the heat to medium-high and cook, the mushrooms, tossing frequently, until browned, about 5 minutes. Season with the 1/2 teaspoon salt and pepper to taste. Add the garlic, shallot, thyme, and rosemary, and cook for 2 minutes more. Pour the red wine into pan, scraping up any browned bits on the bottom of the pan with a wooden spoon. Cook until almost all the liquid has evaporated. Add the cream, parsley, and chives and stir to combine. Set aside.
  • Heat a large grill pan over medium-high heat or an outdoor grill to medium-high. Remove the steaks from the marinade and pat dry. Season with salt and pepper. Cook the steaks for 3 to 5 minutes on each side for rare to medium-rare. Set aside on a cutting board for 5 minutes. Cut the steak against the grain on an angle into very thin slices. Arrange the slices on a warmed platter or plates. Reheat the mushroom sauce if needed and add any accumulated meat juices. Pour the sauce over the steak and serve immediately.

24 crostini crackers
2 tablespoons olive oil, plus more for toasting the crostini
1 1/2 pounds New York strip steak
Kosher salt and freshly ground black pepper
1/2 cup whole-grain mustard
2 tablespoons salted butter
Two 8-ounce wheels Brie, cut into wedges
1 cup jarred roasted peppers, drained and sliced
1/2 cup fresh parsley leaves
1/4 cup shaved Parmesan

Steps:

  • Briefly toast the crostini crackers on each side in hot olive oil in a skillet until glistening and crisp. Remove and set aside.
  • Preheat a cast-iron skillet over medium-high heat.
  • Sprinkle the steak with salt and pepper, then rub with the mustard. Add the butter and 2 tablespoons olive oil to the skillet. Once the butter is melted, sear the steak until cooked to your preference, 3 to 5 minutes per side for medium rare. Allow to cool completely, then wrap in plastic wrap and chill. (This can happen anytime before.)
  • When ready to build the crostini, thinly slice the steak against the grain. Press a wedge of Brie on each crostini. Top with the sliced steak, peppers, parsley and shaved Parmesan.

1 pound uncooked shrimp (31-40 per pound), peeled and deveined
