Here's what you need: flank steak, olive oil, salt, pepper, cumin, chili powder, garlic, yellow onion, bell peppers, medium flour tortillas, shredded mexican cheese blend, monterey jack cheese, tortilla chips, fresh cilantro

1 lb flank steak
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon pepper
1 teaspoon cumin
1 teaspoon chili powder
4 cloves garlic, chopped
1 yellow onion, chopped
3 bell peppers, seeded, diced
9 medium flour tortillas
3 cups shredded mexican cheese blend
8 oz monterey jack cheese, sliced into 1-inch (2 1/2 cm) pieces
18 tortilla chips
2 tablespoons fresh cilantro, chopped

Steps:

  • Season flank steak with olive oil, salt, pepper, cumin and chili powder.
  • Heat a pan over high heat. Add the flank steak and cook for 3 minutes on each side.
  • Remove the flank steak from the pan and let rest for 10 minutes.
  • Preheat oven to 350°F (180°C).
  • Turn heat down to medium. Add oil, garlic and onion to the pan. Cook until onions are translucent.
  • Add the bell peppers, salt, and pepper, and cook for 5 minutes, until softened.
  • Slice steak into ¼-inch (1 cm) cubes.
  • Add the cubed steak and stir to combine. Remove from heat.
  • Lay out one medium tortilla. Sprinkle Mexican cheese in the center, place two tortilla chips side by side over it, place a 1-inch chunk of jack cheese over the tortilla chips and finally, add roughy two spoonfuls of fajita mix on top.
  • Fold the top part of the tortilla over the mix and towards yourself, rotate the tortilla and repeat, creating folds as you go. Continue until the entire tortilla is folded towards the center. Flip over and place on a small baking pan.
  • Cover with mexican blend cheese and bake for 25 minutes.
  • Top with cilantro, serve.

Super quick & easy. My 16 yr old son & friends devour these up in a hurry. You may need to adjust the vegetable quantity, as some in my home prefer them without them. Hope you like them!

Number Of Ingredients 10

4 grinder rolls (A.K.A Hoagie or sub)
1 -1 1/2 lb rare roast beef, sliced thin (deli, I use Boar's Head brand)
1/3 lb sharp provolone cheese, sliced
1/3 lb mozzarella cheese, sliced
1 large sweet onion, sliced
1 large green pepper, sliced
1 lb mushroom, sliced
3 -4 tablespoons unsalted butter
nonstick cooking spray
salt & pepper, to taste

Steps:

  • 1. Melt butter in a large saute pan over medium low heat.
  • 2. Saute onions & peppers, stirring occasionally.
  • 3. Add mushrooms once the onions & peppers have softened up a bit.
  • 4. Season with salt & pepper to taste.
  • 5. Continue to cook until the vegetables are cooked through and soft, stirring occasionally.
  • 6. When veggies are almost done spray a 2nd saute pan and place over med heat.
  • 7. Add roast beef, separated into 4 portions in the pan.
  • 8. Place 1 slice of mozzarella & 1 slice of provolone over each potion of beef.
  • 9. Chop up & combine the meat & cheese together using a wooden spoon or spatula sprayed with non-stick spray.
  • 10. Season with salt & pepper.
  • 11. Spread mayo on grinder rolls (optional).
  • 12. Place beef & cheese into rolls.
  • 13. Top with veggies (optional).
  • 14. Serve immediately.
