A delicious hamburger marinade with a smoky, sweet, yet slightly spicy and tangy taste.

¼ cup Worcestershire sauce
2 tablespoons red wine vinegar
2 tablespoons brown sugar
2 cloves fresh garlic, minced
1 tablespoon vegetable oil
1 teaspoon onion powder
1 teaspoon black pepper
½ teaspoon salt
½ teaspoon liquid smoke (mesquite flavor)
1 pound ground beef

Steps:

  • Combine all ingredients except ground beef in a medium bowl. Mix together.
  • Add ground beef and use your hands to gently blend marinade into meat.
  • Be careful not to handle too much or meat will become tough.
  • Form ground beef into four equal sized (1/4 pound) round patties. Flatten patties so they're bigger than the buns.
  • Make an indentation in the center of each burger. (This will help burgers not to bulge in the center.)
  • Cover patties and let marinade in refrigerator for at least one hour.
  • Grill over high heat to quickly sear outside of burger and seal in juices. Cook 3-4 minutes per side.

This is the ultimate burger recipe. The burgers are packed with flavor and reliably juicy, even when cooked to well-done.

2 pieces white sandwich bread, crusts removed and cut into ¼-inch pieces
⅓ cup milk
2½ teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 garlic cloves, minced
1½ tablespoons Worcestershire sauce
2 tablespoons ketchup
3 pounds 80 to 85% lean ground beef
3 scallions, white and green parts, very finely sliced (optional)
8 hamburger buns

Steps:

  • Preheat the grill to high heat.
  • In a large bowl, mash the bread and milk together with a fork until it forms a chunky paste. Add the salt, pepper, garlic, Worcestershire sauce and ketchup and mix well.
  • Add the ground beef and scallions and break the meat up with your hands. Mix everything together until evenly combined. Divide the mixture into 8 equal portions and form compact balls. Flatten the balls into ¾-inch patties about 4½ inches across. Form a slight depression in the center of each patty to prevent the burgers from puffing up on the grill.
  • Oil the grilling grates. Grill the burgers, covered, until nicely browned on the first side, 2 to 4 minutes. Flip burgers and continue cooking for a few minutes more until desired doneness is reached. Before serving, toast the buns on the cooler side of the grill if desired.
  • Freezer-Friendly Instructions: The uncooked burgers can be frozen for up to three months. (Freeze the burgers on a baking sheet or plate so their shape sets, then transfer them to a sealable plastic bag for easy storage.) Defrost the burgers overnight in the refrigerator prior to serving and then cook as directed.

1 tablespoon brown sugar (packed)
2 tablespoons vegetable oil ((canola or olive oil work well too))
2 tablespoons balsamic vinegar
2 tablespoons low sodium soy sauce
½ teaspoon ground mustard
1 tablespoon fresh ginger (grated )
1 teaspoon seasoned salt (like Montreal Steak)
1 teaspoon fresh ground black pepper
½ teaspoon red pepper flakes
1 teaspoon Worcestershire sauce
3 cloves garlic (peeled and sliced)
2 ¼ pounds ground beef (80% to 20% fat ratio (you can also use lamb, pork or any combination))
6 hamburger buns (buttered and toasted)
bacon, cheese, (lettuce, tomato, pickles, onion, mayonnaise, ketchup, etc.)

Steps:

  • Divide the ground beef into 6 equal portions, 6-ounces each. Form into 5-inch wide patties with a deep indention in the middle. Place in a large shallow, glass baking pan.
  • Mix all marinade ingredients together in a small bowl and pour over the burger patties. Turn the burgers then cover with plastic wrap. Refrigerate for at 1 to 4 hours (or longer if desired) turning at least once.
  • When ready to cook, remove the burgers from the refrigerator and allow them to come to room temperature for 30 minutes before grilling.
  • Clean the grill grates with a wire brush. Oil the grates with paper towels soaked with vegetable oil.
  • Heat a gas grill to 325-350°F. If you don't have a thermometer, heat on high until hot, then reduce the heat to medium before adding the burgers. Using tongs, carefully oil the grilling surface again thoroughly.
  • Grill the burgers until cooked through, about 7-9 minutes on each side.
  • Allow the hamburgers to rest 5 to 10 minutes before serving.

1/2 cup Worcestershire sauce
1/2 cup soy sauce
3 drops liquid smoke (I prefer the Mesquite flavor, but use it sparingly, as too much will cause a bitter taste.)
3 -5 drops sesame oil
fresh minced garlic (I use 2 tablespoons)
cracked black pepper (Lots of it!)
yellow mustard (enough to make it a nice light brown color)

Steps:

  • Pour over burgers or steaks and let sit in refrigerator for 1 hour. (Roughly the time it takes to watch that Sopranos episode you missed on HBO On Demand) You can even mix a little into the burger while forming patties.
  • Cook over hardwood charcoal fire. Grill should be hot enough to sear outside quickly.

1 pound ground beef
¾ cup Lawry's® Steak & Chop Marinade with Garlic & Cracked Black Pepper
2 medium portobello mushrooms, stems removed
1 small green bell pepper, seeded and quartered lengthwise
1 yellow bell pepper
4 slices Pepper Jack cheese
4 slices Monterey Jack cheese
4 hamburger rolls

Steps:

  • 1. Mix ground beef and ¼ cup of the marinade in medium bowl until well blended. Shape into 4 patties.
  • 2. Grill burgers over medium heat 5 to 7 minutes per side or until burgers are cooked through (internal temperature of 160°F). Add cheese slices during last 1 minute of cooking. Meanwhile grill vegetables 5 to 10 minutes or until tender, turning occasionally and brushing with remaining ½ cup marinade.
  • 3. Slice mushrooms and pepper into thin strips. Serve with burgers on rolls.
