Steps:

  • Combine thyme, garlic and pepper; press evenly onto beef Flat Iron Steak.
  • Place steak on grid over medium, ash-covered coals. Grill, covered, 10 to 14 minutes (over medium heat on preheated gas grill, 12 to 16 minutes) for medium rare (145°F) to medium (160°F) doneness, turning occasionally. During last 2 minutes of grilling, sprinkle with cheese. Carve steak across the grain into thin slices; season with salt and pepper, as desired.

2 1/2 pounds ground beef
2 1/2 pounds ground pork
2 cups grated Pecorino-Romano
1 cup breadcrumbs
1 cup milk
1 tablespoon chopped fresh parsley
1/2 tablespoon salt
1/2 tablespoon ground black pepper
2 eggs
Canola or vegetable oil, for frying
Marinara sauce, to taste
Parmigiano-Reggiano, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Mix together the beef, pork, cheese, breadcrumbs, milk, parsley, salt, pepper and eggs in a large bowl, then roll into small balls and place on a baking sheet. Bake for 40 minutes.
  • Heat oil in a deep-fryer to 350 degrees F. Fry meatballs for 1 minute. Top with your favorite marinara and freshly grated Parmigiano-Reggiano.

Steps:

  • Carmalize the onions. Reduce the balsamic and add butter. Grill/broil steak. Add pepper and onions. Top with cheese and broil til slightly melted. Serve on top of balsamic reduction.
