STARDUST CHOCOLATE PANCAKES

Number Of Ingredients 10

1 cup milk
1 egg
2 tablespoons butter or 2 tablespoons margarine, melted
1 cup all-purpose flour
1/3 cup unsweetened cocoa powder
1/4 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons powdered sugar
sliced strawberries or sweetened whipped cream (optional)

Steps:

  • In a small bowl, combine milk, egg and butter; whisk until blended.
  • In another bowl, combine flour, cocoa powder, sugar, baking soda and salt; mix well.
  • Add milk mixture; whisk just until dry ingredients are moistened.
  • (Batter will be slightly lumpy.) Heat griddle over medium heat until hot.
  • (Drops of water will sizzle, then evaporate.) For each pancake, pour scant 1/4 cup batter into griddle.
  • Cook 1-2 minutes or until batter is set around edges.
  • Carefully turn over pancake; cook 1-2 minutes or until pancakes are cooked through.
  • Repeat with remaining batter.
  • Sprinkle pancakes with powdered sugar; serve warm with desired toppings.
  • (I use a star shaped mold, placed on grill. You must spray mold with vegetable oil) Try using metal star shaped cookie cutters!

The mixologist Chantal Tseng created this variation of a kir royale for a literary cocktail evening in tribute to Neil Gaiman's novel "Stardust." The subtle addition of bergamot, found in Earl Grey tea, freshens up an old standard.

1 ounce brewed Earl Grey tea
3 ounces Champagne
Lemon peel, for garnish

Steps:

  • Combine the crème de cassis, tea and Champagne in a mixing glass, add ice and stir until chilled. Strain into a coupe glass, then garnish with a lemon peel.

1/2 ounce blue curacao
1 ounce sweet and sour sauce
1 ounce pineapple juice
grenadine, 1 splash

What a wonderful treat!. For myself and DH I make enough for 4 pancakes and need to add just a bit more milk to thin the batter ( about 1-1 1/2 tbsp). I get the most scrumptious deep chocolate pancakes that are pure heaven. Also I replace the ask for butter with 1 1/2 tsp of walnut oil, use Splenda for the sugar and topped them with Splenda cinnamon.
