BLACKBERRY AND LEMON SWIRL SORBET



Blackberry and Lemon Swirl Sorbet image

Lemon and blackberry are great complementary flavors.

Number Of Ingredients 4

1 cup sugar, plus 3 tablespoons
2 cups water, plus 1 tablespoon
2 cups lemon juice
1 half-pint blackberries

Steps:

  • In a saucepan, bring 1 cup sugar and 2 cups water to a boil. Let cool slightly then measure out 2 cups. Combine the 2 cups with the lemon juice and chill.
  • Meanwhile in a saucepan, place the blackberries with 1 tablespoon of water and 3 tablespoons of sugar. Bring to a boil then turn the heat down to a simmer, stirring often to reduce to a thick puree. Strain, if desired and chill the puree.
  • Spin the chilled sorbet mixture in your ice cream maker then place in a frozen bowl. Fold in the chilled blackberry puree lightly to swirl it. Freeze until ready to enjoy.

LEMON SORBET

1 cup plus 2 tablespoons granulated sugar
2 teaspoons lemon zest
Juice of 6 lemons (about 1 cup)
3 tablespoons limoncello

Steps:

  • Add the sugar, 1 cup water and lemon zest to a medium saucepan over medium heat and stir until the sugar has dissolved. Stir in the remaining 1 1/2 cups cold water, the lemon juice and limoncello. Place in the fridge until chilled, about 2 hours. Add the cold lemon mixture to an ice cream maker and run as directed by the manufacturer's instructions. You want it to look like soft serve. Remove to a plastic lidded container and place in the freezer until firm, about 3 hours.

1 pint strawberry sorbet
1 pint raspberry sorbet
1 cup shredded coconut
2 ripe bananas, sliced
2 teaspoons lemon juice
1 pint strawberries, sliced
1 package wafer cookies or wafer roll cookies

  • Set out ice cream cups, sorbet selections, ice cream scoops, coconut. Toss sliced bananas with a little lemon juice to retard browning. Set bananas in a bowl along side dishes of sliced berries and cookies. Just like the salad bar, they can have it their way.

Several sprigs fresh mint, shredded

  • Line ice cream dishes with fresh berries. Top berries with small scoops of lemon sorbet. Top sorbet with remaining berries. Sprinkle shredded fresh mint leaves over the sorbet and berry cups.

  • Cut a thin piece of the skin off of the back of each wedge of melon to give the melon sections stability. Top each melon boat with a scoop of mango or strawberry sorbet. Toss berries with a little sugar and spill them down and over the sorbet and melon.

1 ripe cantaloupe, quartered and seeded
1/2 cup cassis liqueur or syrup
1 pint French vanilla ice cream
1/2 pint blackberries

Steps:

  • Cut a sliver off each melon wedge so that it will sit evenly on dessert plate. Pour 2 tablespoons of cassis liqueur or syrup across each melon wedge. Soften ice cream in microwave on high for 10 seconds. Scoop 1 ball of French vanilla ice cream onto each wedge of melon. Garnish dessert with a few blackberries and serve.
