This recipe comes from an old Better Homes and Garden Ground Meat Cookbook, c1973. I have made this recipe for my son a long time ago. it is very tasty, and a good way to get kids to eat their vegetables. My son hated vegetables when he was growing up. This recipe he liked. If you can't get tomato sauce with mushrooms just use tomato sauce. You could change the vegetable to corn or whatever vegetable you want.

Number Of Ingredients 10

- 1 lb of ground beef
- 1/2 cup chopped onions
- 1-8 oz can of tomato sauce with mushrooms
- 3/4 cup of ketchup
- 1/2 tsp dried oregano leaves crushed
- 3 drops bottled hot pepper sauce
- 2 cups uncooked packaged precooked rice (instant rice)
- 1-10 oz package of frozen peas
- 1 cup sharp shredded american cheese
- sliced pimento-stuffed green olives

Steps:

  • In a skillet brown meat with onions; drain off fat
  • Add tomato sauce, and next three ingredients.1/4 cup of water, 1/4 tsp of salt and a dash of pepper; bring to boiling stirring often
  • Cook rice and prepare peas following package directions
  • On individual serving plates , layer rice, peas, meat mixture, then cheese, trim with olives

4 ounces sharp process American cheese, shredded (1 cup)

Steps:

  • In skillet brown meat with onion; drain off fat. Add tomato sauce, catsup, oregano, hot pepper sauce, salt, water, and pepper; bring to boiling, stirring often. Cook rice and prepare peas following package directions. On individual serving plates layer rice, peas, meat mixture, then cheese. Makes 6 servings.

cooked rice (brown or white). could even use spanish rice
tomatoes,chopped
red onion, chopped
corn, whole kernel
salsa
sour cream
shredded cheese
beans (black, pinto, refried)
other vegetables (bell pepper, squash, zucchini, etc.)
tostadas or tortilla chips

Steps:

  • 1. This is a buffet style option for casual entertaining.
  • 2. Lay items out so guests can build their own "Mexican stack". Start with tostadas or chips, meat, beans, rice, vegetables, sour cream and cheese.

1-3/4 cups crushed saltines (about 40 crackers)
2 cups cooked rice
3 pounds ground beef
1 large onion, chopped
1-1/2 cups tomato juice
3/4 cup water
3 tablespoons taco seasoning
Seasoned salt, salt and pepper to taste
1/2 cup butter, cubed
1/2 cup all-purpose flour
4 cups whole milk
1 pound process cheese (Velveeta), cubed
4 cups shredded lettuce
3 cups shredded sharp cheddar cheese
3 medium tomatoes, diced
1 jar (10 ounces) pimiento-stuffed olives
1 package (14-1/2 ounces) tortilla chips

Steps:

  • Divide crackers between 2 ungreased 13x9-in. baking dishes. Top each with rice. , In a large skillet, cook beef and onion until meat is no longer pink; drain. Add the tomato juice, water and seasonings; simmer for 15-20 minutes. Spoon over rice., In a large saucepan, melt butter. Stir in flour until smooth. Gradually add milk. Bring to a boil; cook and stir until thickened, about 2 minutes. , Reduce heat; stir in Velveeta cheese until melted. Pour over beef mixture. Top with lettuce, cheddar cheese, tomatoes and olives. Serve with chips. Refrigerate any leftovers.

4 skinless, boneless chicken breast halves, cut into small cubes
½ cup chicken broth
1 (10.75 ounce) can cream of mushroom soup
1 teaspoon dried basil
1 teaspoon dried parsley
4 cups cooked rice
1 cup chopped pineapple
1 cup chopped green bell pepper
1 cup shredded Cheddar cheese
1 cup chopped fresh tomatoes
1 cup chow mein noodles
½ cup toasted sliced almonds
½ cup chopped green onions
½ cup shredded coconut

Steps:

  • Heat olive oil in a skillet over medium heat; cook and stir chicken in the hot oil until no longer pink in the center, 5 to 7 minutes. Add chicken broth; simmer until slightly reduced, about 5 minutes. Mix cream of mushroom soup, basil, and parsley into chicken mixture until smooth; cook until warmed, about 5 minutes. Transfer chicken sauce to a small bowl.

This is a simple one dish meal that's been in my family for years - corn chips, vegetables, beans and cheese all piled up to make a delicious haystack! Kids love it!

2 cups kidney beans, cooked
1 teaspoon salt
2 tablespoons chili powder
1 teaspoon ground black pepper
1 (14.5 ounce) package corn tortilla chips
1 head iceberg lettuce - rinsed, dried, and shredded
2 large tomatoes, chopped
1 green bell pepper, chopped
1 onion, chopped
1 (10 ounce) can chopped black olives
1 carrot, shredded
1 cup shredded Cheddar cheese
½ cup sour cream
1 cup salsa

Steps:

  • In a medium saucepan, combine the kidney beans, salt, chili powder and pepper. Cook over medium heat until heated through.
  • To assemble the haystacks put a hand full of corn chips on a plate, follow with a spoonful of heated bean mixture, lettuce, tomato, green pepper, onions, olives, carrot, and cheddar cheese. Top with salsa and sour cream.
