LAMB SOUVLAKI SANDWICHES WITH GREEK SALAD AND TSATSIKI SAUCE

Steps:
- Make tsatsiki sauce:
- Purée cucumber, yogurt, lemon juice, garlic, salt, and pepper in a blender until almost smooth, about 1 minute. Stir in mint and chill, covered, until serving.
- Make lamb sandwiches:
- Preheat broiler.
- Wrap pitas in foil and put in lower third of oven to warm while broiling lamb.
- Put lamb on oiled rack of a broiler pan and sprinkle with salt and pepper. Broil lamb 5 to 6 inches from heat, turning over once, 12 to 14 minutes total for medium-rare. Transfer to a cutting board and let stand 5 minutes, then thinly slice.
- While lamb is standing, toss together salad ingredients in a bowl and season with salt and pepper.
- Stuff warm pita pockets with salad and lamb, then drizzle filling with tsatsiki sauce.

- Mix the garlic with 2 tsp of the oil, the lemon zest and 1 tsp juice, lots of black pepper, and ½ tsp oregano in a large bowl. Tip in the pork and mix so the meat is well coated. Set aside to marinate for 30 mins if you have time.
- Heat 1 tsp olive oil in a non-stick pan. Add the chopped onion, cover and cook for 5 mins, then remove the lid and stir in the rice, dried mint and bouillon. Pour in 300ml boiling water. Cover and cook for 30-35 mins until the liquid has been absorbed and the rice is tender. Stir in the dill and a squeeze of lemon juice.
- Meanwhile, heat the grill to high or light your barbecue. Thread the pork onto two skewers. Mix the tomatoes, cucumber, red onion and olives in a bowl with the remaining oregano, vinegar, remaining oil and a squeeze of lemon. Pile onto plates and top with the feta.
- Grill the souvlaki for about 4 mins each side until they are cooked, but still juicy. Serve with the salad and rice.

This is a great Greek inspired salad with chicken souvlaki, romaine, bell pepper, cucumber, and tomatoes served with tzatziki dressing. Sprinkle with feta cheese if desired.

- Combine 1 tablespoon olive oil, Greek seasoning, lemon juice, and garlic in a glass bowl; mix well. Add chicken to marinade and turn to coat. Marinate in the refrigerator for at least 2 hours, but not longer than 4 hours.
- Mix tzatziki, 2 tablespoons olive oil, 2 tablespoons lemon juice, and salt in a small bowl. Refrigerate salad dressing until needed.
- Preheat an outdoor grill for high heat and lightly oil the grate.
- Place chicken pieces on the grill and cook for 5 minutes, turn, and grill until no longer pink in the center and the juices run clear, about 5 more minutes. An instant-read thermometer inserted into the centers should read at least 165 degrees F (74 degrees C).
- Combine romaine lettuce, bell pepper, cucumber, and cherry tomatoes in a salad bowl. Drizzle with tzatziki dressing and toss to coat. Divide salad into 4 equal portions and top with cooked chicken.

This recipe was in the 'food' section of our local paper a couple of weeks ago. We made it while on a camping trip, a very refreshing and different salad! It has a definite Greek taste and is very low-cal! Time does not include marinating (if you chose to do so).

- Mix all of the marinade ingredients in a bag with the chicken.
- Shake to coat.
- Original recipe didn't call for any marinade time, but we marinated for a couple of hours.
- Broil, grill, or pan fry chicken until done.
- Set chicken aside to cool slightly.
- Cut chicken into 1-inch pieces.
- Combine all dressing ingredients together in a bowl.
- Mix well.
- Combine chicken with salad fixins; pour dressing over all and mix well.
- Enjoy!

- Preheat oven to 400°F. Place beets on sheet of foil. Drizzle beets with olive oil, sprinkle with salt and pepper, and seal foil tightly. Roast beets until tender, about 50 minutes. Cool and peel beets. DO AHEAD Can be made 1 day ahead. Cover and chill.
- Cut beets into 1/4-inch cubes. Whisk yogurt, 2 tablespoons lemon juice, tahini, and 2 tablespoons water in medium bowl. Add beets and fold to coat. Season with salt and pepper. DO AHEAD Can be made 2 hours ahead. Let stand at room temperature.
- Place cucumber, parsley, green onions, 2 tablespoons extra-virgin olive oil, and remaining 2 tablespoons lemon juice in medium bowl; toss to coat. Season with salt and pepper.
- Preheat barbecue (medium-high heat). Divide tuna cubes among 6 metal skewers. Brush tuna with olive oil. Sprinkle with salt and pepper, then oregano. Grill tuna until charred on all sides but still pink in centers, about 1 minute per side. Grill pita breads until warmed and charred, about 1 minute per side.
- Place 1 pita bread on each of 6 plates. Spoon parsley salad atop pita. Place 1 tuna skewer atop each. Spoon beet tahini over. Garnish with onion rings and lemon wedges and serve.

- Preheat the oven to 350 degrees F. Toss the chicken in a large bowl with the lemon zest, 1 tablespoon each lemon juice and olive oil, 1 teaspoon oregano, 1/2 teaspoon salt and a few grinds of pepper; let sit for at least 5 minutes.
- Spread the pita pieces on a baking sheet and toast in the oven, tossing halfway through, until crisp, 10 to 12 minutes. Let cool.
- Meanwhile, preheat a grill pan over medium-high heat. Add the chicken and cook, turning occasionally, until cooked through, 6 to 8 minutes. Transfer to a plate.

- Soak red onion in a bowl of ice water in refrigerator to remove strong taste, at least 30 minutes. Drain and rinse.

- Add water until the consistancy is about that of maple syrup.
- Place with chicken in plastic bag, remove air, marinate overnight.
- Grill or broil chicken until tender.

PORK SOUVLAKI SALAD WITH TZATZIKI

- Comine 1 tbsp of oil , 2 tbsp of vinegar, 1 clove garlic, and oregano. Add pro, toss to coat and let sit for at least 10 min room temp. Stir 1 tbsp oil, 2 cloves garlic, yogurt, cucumber, lemon juice, 1/4 tsp salt and 1/2 tsp pepper. Set aside. Thread 5 pieces of pork on each skewer, seasoning with salt. Grill for 6-8 minutes, turning occasionally. Toss greens, tomatoes and feta with t tbsp vinegar, 1/4 salt, 1/8 pepper, and 2 tbsp oil. Layer pork on salad and spoon tzatziki on top.

- In a freezer bag combine the steak,1 TBS olive oil,lemon juice, garlic, 1 tsp of the red wine vinegar ,oregano and mix around and coat the steak evenly. Place in refrigerator 1 hour or overnight.
- In a small bowl combine the reserved EVOO, red wine vinegar,pepper and whisk until emulsified. Place the tomatoes,cucumbers,red onion,olives and feta cheese and mix thoroughly. This can also set in refrigerator overnight.
- Take steaks out and allow to come up to room temperature. Place a grill pan on a medium to high heat and add a little oil. Cook steak until desired doneness.
- Arrange salad greens on a plate and place entire steak or cut steak on top of greens and pour over the feta-cucmber salad.
